Felsina's single-varietal Sangiovese wines have been produced on the south-eastern edge of the Chianti Classico since 1967. The vineyards face south-west on ventilated slopes between 320 and 420 metres above sea level on geologically heterogeneous soils of quartz-rich sandstone, calcareous Alberese and clay. After hand-picking in the first three weeks of October, temperature-controlled fermentation takes place between 28-30°C with intensive maceration in stainless steel tanks for 12-15 days. Ageing lasts twelve months, mainly in traditional Slavonian oak barrels of medium size, supplemented by a small proportion of used barriques.

Volpaia – the foxhole. High above Radda in Chianti, at 450 to 650 metres above sea level, the vineyards of Castello di Volpaia are located on the highest slopes of the appellation. The medieval borgo, first mentioned in a document in 1172, has belonged to the Mascheroni-Stianti family since 1966, who consistently farm organically here. The altitude shapes the character: sandstone soils, cool nights and long ripening periods give the Sangiovese (supplemented by 10% Merlot) a freshness and elegance that would be hard to achieve in warmer locations. Fermented with indigenous yeasts, matured for twelve months in large oak barrels.

In 1872, Bettino Ricasoli wrote down his famous formula – the blueprint of what Chianti Classico should be: Sangiovese as the heart, structure as the backbone, terroir as the argument. The fact that his descendants have named this wine after him is not nostalgia. It is a commitment. Brolio Bettino is a single-varietal Sangiovese – and that is intentional. No blending, no corrective. The grapes grow on five geological formations: Sandstone, Galestro, Alberese, marine sediments and old river terraces – a terroir mosaic that combines depth and complexity in one glass. Fermentation in small stainless steel tanks, 18 months of ageing in large barrels: classic, without compromise. The 2022 vintage was capricious – mild winter, dry spring, a hailstorm in July, but it ended on a mild note.

The Ricasoli family has been shaping the history of Chianti Classico since 1141 – longer than any other winery in Italy. Baron Bettino Ricasoli defined the legendary Chianti formula in 1872, which is still valid today. Rocca Guicciarda was once one of the Barone ' most important feudal estates and today embodies the classic interpretation of this traditional appellation. The grapes for this Riserva come from vineyards on the five most representative soil types in Brolio between 280 and 480 metres above sea level: Macigno del Chianti (sandstone), Scaglia Toscana (Galestro), Monte Morello (Alberese) as well as marine and fluvial deposits create a complex terroir mosaic. 90% Sangiovese forms the backbone, supplemented by 5% each of Merlot and Canaiolo. After controlled fermentation in stainless steel tanks with 14 to 16 days of maceration, the wine matures for 21 months in tonneaux and large barrels. The result is a Chianti Classico of an intense ruby red colour with light garnet reflections, whose bouquet combines ripe red fruit, raspberry, pomegranate and fine spicy notes. San Giusto a Rentennano – the name is of Etruscan origin and carries the centuries within it. The medieval estate is located in the southernmost tip of the Chianti Classico, where the area meets the upper reaches of the Arbia and the hills become wider, quieter and rougher. A Cistercian monastery once stood here – san Giusto alle Monache. In 1204, the Florentines fortified the area as a border post to Siena. The underground vaults from that time are now the storage cellars of the Martini di Cigala. The family has owned the estate since 1914 and Luca, Francesco and Elisabetta now run it with the conviction that has defined the house since the early 1980s: Sangiovese needs no shortcuts. It needs low yields, ripe harvestand time. Organically farmed since 2006, green pruning in July and August by 30 to 50 per cent. 95% Sangiovese, 5% Canaiolo harvested by hand.

Catignano is a plateau at 370 metres above sea level, with vineyards of different ages and a large proportion of Alberese. The exposure is westerly and south-easterly, which means plenty of sun during the day, but also cold temperatures at night, with a good temperature range that favours the aromatic development of the grapes.

A name rises: Vallenuova, previously the estate's entry-level Chianti, will become a Riserva with the 2023 vintage. The vineyard, which surrounds the winery like a natural amphitheatre, bears the place name – still the official address of Tolaini in Castelnuovo Berardenga. What has changed is the time: instead of ten months, the Riserva now matures for much longer in a triad of Tuscan, Slavonian and Austrian oak before resting in the bottle for another few months. The base is now also clearly defined: 100% Sangiovese from silty-clayey soils with limestone and stones. Double selection – by hand in the vineyard, visually in the cellar – 20 days of maceration on the skins, temperature-controlled fermentation.

Two names define this Riserva: Il Corno and Poggio Selvale. It is from these two prime vineyards, situated at altitudes of between 350 and 450 metres, that the Sangiovese grapes come from which Castello di Radda crafts its classic Riserva style. The clay-limestone soils, with their high proportion of galestro and alberese – that characteristic calcareous slate of the region – , lend the wine mineral depth and structural complexity. In this coolest zone of Chianti Classico, where dense forests surround the vineyards and the temperature fluctuations between day and night are particularly pronounced, the Sangiovese reveals its most elegant side. After hand-harvesting, the grapes are destemmed and fermented in 50-hectolitre stainless-steel tanks. Maceration on the skins lasts three to four weeks – a luxury afforded only by fully ripe grapes from prime vineyards. Malolactic fermentation takes place in wood before the wine begins its 20-month ageing process: in second- and third-use French tonneaux and in 20-hectolitre Slavonian oak barrels. Nine months’ bottle ageing completes the wine’s development.

1968 – three years before Sassicaia changed the world – san Felice created Vigorello: the first Chianti Classico wine produced without the white grape varieties that were mandatory at the time, made exclusively from red varieties. A quiet revolution that instilled in the estate a sense of what was possible, which continues to shape its identity to this day. An expression of this identity is the Vitiarium, a research project spanning over twenty years dedicated to the rediscovery and preservation of indigenous Tuscan grape varieties. One of these is the Pugnitello: its name means ‘little fist’, referring to the compact, fist-shaped bunches. Almost extinct, preserved by San Felice, it is now an integral part of the Borgo. Sangiovese and Pugnitello, grown on medium-heavy calcareous-marly soils near the medieval Borgo, are vinified separately in stainless steel and only come together during ageing: twelve months in large Slavonian oak barrels.

Chianti Classico DOCG 2022
This exceptional Chianti Classico comes from the golden basin of the Conca d'Oro near Panzano and bears the pioneering achievements of the di Napoli family. As early as 1975, Alceo di Napoli was one of the first in the Chianti region to venture into planting Cabernet Sauvignon – a vision that was to revolutionise the traditional Sangiovese profile and is now part of Castello dei Rampolla's DNA. The grapes thrive on 42 hectares of limestone-rich soil at an altitude of around 360 metres, where Sangiovese (90%) blends with small proportions of Cabernet Sauvignon and Merlot to create a harmonious cuvée. The estate has consistently followed biodynamic principles since 1994 – long before they became a trend. The vineyards are home to a living ecosystem: flowers and herbs grow unhindered between the rows of vines, naturally oxygenated water nourishes the vines, and only copper, sulphur and bee propolis are used to protect the vines.

Lamole. Giovanni Manetti has long regarded this zone as one of the most distinctive in Chianti Classico. At an altitude of 620 metres, far from the heart of the region, a few plots of old Sangiovese vines survived the wave of deforestation in the 1970s. Giovanni took cuttings from these Alberello vines from the 1920s to grow his own vines in Panzano: the foundation for Fontodi's quality. This wine is made from seven hectares of Macigno sandstone, whose loose, permeable structure ensures elegance and finesse. Cool nights, long growing season, south-south-west exposure. The sandy soils give the Sangiovese a lightness that is clearly different from the powerful wines from Panzano. Vinification in concrete, certified organic.
