Nero di Lupo is COS' elegant contribution to Nero d'Avola – with a light, fruity and mineral flavour. “Rosa di Lupo” Rosato Terre Siciliane IGT 2025 (BIO)
The Lupo line from COS bears an animal in its name that in Sicily symbolises wildness, independence and the unspoilt nature of the island. The Nero di Lupo is the "black of the wolf". The Rosa di Lupo is its lighter, lighter counterpart – a rosato made from 100% Nero d'Avola, from the same terroir: Vittoria, south-eastern Sicily, 230 metres, sandy soil with limestone subsoil and silicon veins, biodynamically cultivated. 15-year-old vines, Guyot, 5,000 vines per hectare, hand-picked in September. Vinification follows the consistent COS philosophy: spontaneous fermentation on the skins in the press, a few hours of skin contact for colour and depth of aroma without tannin weight. Then seven months in concrete vats. Natural yeasts, no added sulphur.

Rami is an attractive and at the same time very individual blend of Grecanico and Inzolia. Bright golden yellow in colour with a slight, typical cloudiness of an orange wine and an initially restrained, reductive bouquet, with some aeration then sweetly scented with apricots, dried flowers and orange peel. This is one of the most interesting and expressive wines to come out of the Vittoria area of Sicily. The Frappato is tangy and sharp, linear and direct. And it reveals more depth and nuances than you would expect in this price range. Normally, a good Frappato always has an authentic and transparent expression. This unmasked openness is also present here, but there is also an almost accidental hint of balsamic herbs and bitter almonds, which lend it further tension and personality. It's a good thing that Titta Cilia and Giusto Occhipinti leave nothing to chance, and so this finesse-rich Frappato is rightly one of the region's most distinctive wines every year. SUPERIORE.DE

Bastonaca. This is not just any plot of land in Vittoria. This is the starting point. When Giambattista Cilia, Giusto Occhipinti and Cirino Strano brought in their first harvest on 5 October 1980 and filled 1,470 bottles, they were standing right here. Bastonaca is the place of origin of COS – and the 25-year-old Nero d'Avola vines from this vineyard are the basis of Pithos Rosso. When Occhipinti visited Georgia in 1999 and learnt about the Qvevri tradition of terracotta vinification, the first amphorae arrived from Spain in 2000. The wooden barrel disappeared from the cellar. The amphora took over. 150 clay jugs, one of the largest collections of its kind. The Pithos Rosso is the red soul of this project: Nero d'Avola on Pliocene sandy soil, 230 metres, spontaneous fermentation on the skins with natural yeasts in the amphora, maturation in clay jars and in the bottle.

Wonderful, deep aroma of dark wild cherries, crushed raspberries, pomegranate, roses and peppery herbs. Dense but not heavy on the palate, long and pure with multi-layered subtle fruit flavours. Salty minerals and violet blossom emerge on the finish, along with nuanced tannins that create a classically dry feel on the elegant finish. This wine is already an absolute pleasure to drink, and although it tastes great now, it will continue to refine in the bottle for several years. Pithos – the ancient Greek word for the terracotta vessels in which wine and oil were stored in antiquity. When Giusto Occhipinti travelled to Georgia in 1999 and discovered the local qvevri tradition, he ordered the first amphorae in 2000. COS thus became one of the first pioneers of amphora vinification in the whole of Italy. Grecanico – the grape variety of the Greeks, brought to Sicily more than 2,500 years ago – grows on red limestone gravel soils near Vittoria, at 250 metres, cultivated biodynamically. Spontaneous fermentation with the skins inLiters, six to seven months, natural yeasts, no added sulphur.

Maldafrica describes an "inner longing for a distant land" and is not love at first sight, but it is one of Sicily's most interesting wines. It is initially very subtle and nuanced and it opens up gradually on its own timetable, but then: spontaneously fermented in amphorae, Maldafrica overwhelms the senses with dark fruits, spices, chopped herbs, savoury notes, sulphur, leather and damp tobacco. Its mouthfeel is over a minute long and its acidity provides the perfect amount of astringency to refresh the senses for all its opulence. Mal d'Afrika – this is not a romantic play on words. It is a real feeling: that homesickness for Africa that strikes anyone who has spent time in this landscape and cannot let go. In the south-easternmost tip of Sicily, where Vittoria lies between the Ippari and Dirillo rivers, this expression is immediately understood: the colours, the heat, the silence, the earth. COS has dedicated a wine to this feeling. The grape varieties behind it are surprising: Merlot and Cabernet Sauvignon in equal parts – the most international varieties in the wine world, cultivated by a company that otherwise consistently favours indigenous varieties. The contradiction is resolved in the cellar. COS treats Merlot and Cabernet like Frappato and Nero d'Avola: spontaneous fermentation on the skins in terracotta amphorae, natural yeasts, no added sulphur. Then matured in Slavonian oak barrels. 25-year-old vines on the red Pliocene sandy soils of Contrada Fontane, 230 metres, biodynamically cultivated. 5,000 vines per hectare, hand-picked in September.

Zibibbo is the most aromatic grape variety in Sicily. Its full name is Moscato d'Alessandria – from Alexandria, Egypt, from where it travelled to the Mediterranean for centuries. On Pantelleria, it is known as the soul of the sweet passito. COS turns it into something else: a dry wine, spontaneously fermented on the skins in Liters terracotta amphorae. The vineyards are located in the hinterland of Marsala, at 12 metres above sea level. This is no coincidence – it is part of the programme. The sea is close by, the air is salty, the soil is flat and sandy. Biodynamically cultivated, Guyot training, around 5,000 vines per hectare. Hand-picked in September. Then the amphora: spontaneous fermentation, skin contact, natural yeasts, no intervention.

Contrada 2020 is a monumental Nero d'Avola that tells the story of old vines. A wine like a manifesto: Della Bastonaca is the quintessence of the COS philosophy, grown on the historic estate in Bastonaca near Vittoria – where up to 75-year-old Alberello vines of Nero d'Avola and Frappato stand on calcareous red clay, criss-crossed by quartz veins and the constant presence of Mediterranean air. Biodynamics is not a statement here, but a lived practice – for decades, each vintage has been vinified in harmony with nature at the right rhythm. The 2020 vintage brought the best conditions: A spring with sufficient moisture, a warm but not overheated summer and cool nights during the ripening period created the ideal balance of vigour, freshness and aromatic precision. Selective hand-picking, spontaneous fermentation on the skins and careful ageing in large Slavonian oak barrels for 24 months – these are conscious decisions that together result in a wine of quiet greatness.

COS makes sparkling wine in small batches. That sounds like a surprise – and it is. But anyone who knows the company immediately understands the logic: not because Sicily needs sparkling wine, but because COS wants to get everything out of Frappato that this grape variety has to say. And Frappato has a lot to say. The base wine is pressed directly, fermented spontaneously in terracotta amphorae and then stabilised in concrete vats. What follows is the most unusual: neither sugar nor pure yeast is added for the bottle fermentation. Instead, fresh must from the following vintage – the most natural form of tirage available in the Metodo Classico. Matured for 20 months on the lees in the bottle, disgorged in June 2025, no dosage. What comes into the glass is exclusively Frappato, a hint of yeast and time.

Wonderful, deep aroma of dark wild cherries, crushed raspberries, pomegranate, roses and peppery herbs. Dense but not heavy on the palate, long and pure with multi-layered subtle fruit flavours. Salty minerals and violet blossom emerge on the finish, along with nuanced tannins that create a classically dry feel on the elegant finish. This wine is already an absolute pleasure to drink, and although it tastes great now, it will continue to refine in the bottle for several years. A sensual and enjoyable wine, 60 per cent Nero d'Avola from oak barrels and 40 per cent Frappato matured in a vitrified cement vat. SUPERIORE.DE

Della Bastonaca is the quintessence of the COS philosophy, grown on the historic estate in Bastonaca near Vittoria – where up to 75-year-old Alberello vines of Nero d'Avola and Frappato stand on calcareous red clay, criss-crossed by quartz veins and the constant presence of Mediterranean air. Biodynamics is not a statement here, but a lived practice – for decades, each vintage has been vinified in harmony with nature at the right rhythm.

Actually, they had already taken up the profession of architect. But after Giambattista (Titta) Cilia and Giusto Occhipinti were given a vineyard at a young age and began to put their passion for fine wines on a professional basis, new perspectives opened up for the two friends. The name of their winery, located in southeastern Sicily in Vittoria near Ragusa, is made up of the initials of the surnames of its founders. Pinuccia Strano was originally one of the pioneers. In 1985, however, after five years with the company, she left the project, which had initially been started on a whim, to pursue a career as a doctor. Following the acquisition of the Villa Fontane and Villa Brunnen estates with additional vineyards and a series of experiments on biodynamic cultivation principles, the COS winery has long been regarded as a model for ecological viticulture characterised by uncompromising striving for quality and great enthusiasm.
The grapes are made from local grape varieties such as Nero d'Avola and Frappato, prepared in a modern cellar, are exceptional wines from the lateral entrants who are always open to innovation and avoid fashions and common habits. They are fresh, full of finesse, purist and cool. Thus the wine style of the adventurous winegrowers Occhipinti and Cilia is rather atypical for such a hot region as Sicily. The gently, slowly and without manipulation developed plants of COS do not only stand for great drinking pleasure, but also impressively prove that typicality beside the terroir can be very strongly influenced by the viticultural and cellar economic influence of people.
In addition to the meticulously cultivated vineyards, a splendid storage area consisting of 150 Spanish amphorae, each with a capacity of 400 litres, is particularly worth mentioning. It is located in the wine cellar of the Villa Brunnen, which dates from the 19th century and was restored in 2007. The vinification of wines in ancient terracotta containers - such as the pithos in the Azienda Agricola COS - was not permitted in Italy for a long time, but was quite common in earlier times. According to the landowners, their decision in favour of Spanish amphorae is not ideological, but exclusively ethical.
Should the winegrowers Cilia and Occhipinti ever work as architects again for a living, then they would prefer to pursue the profession they originally learned in connection with their passion for wine - for example by developing an architecture that goes well with fine wines. SUPERIORE.DE
