“Palai” Müller-Thurgau Vigneti delle Dolomiti IGT 2020
The Palai area is one of the most representative areas for the production of Müller Thurgau in Italy due to the microclimatic characteristics and the influences of the Cembra and Eisack valleys. In order to preserve its varietal characteristics (aromas and natural antioxidants), the grapes are processed using the hyper-reduction technique (in the absence of oxygen) developed and patented by the company.

“Zero Infinito” Metodo Ancestrale IGT 2020 (BIO)
"Zero Infinito" stands for zero chemical intervention and infinity. Years of research and experimentation led to this extraordinary project, in which the grapes of the fungus-resistant Solaris grape variety are turned into wine without any additives: no treatment in the vineyard, no use of sulphur dioxide, no commercial yeasts, no clarifying agents, no filtering and no antioxidants! The grapes for this sparkling wine made according to the Méthode Ancestrale (Pet Nat) with yeast lees come from the southwest-facing Maso Rella vineyard, located at an altitude of 800 to 900 metres.

In 1975, at the age of twenty-four, Fiorentino Sandri inherited two hectares of vineyards. At the same time, the 21-year-old Mario Pojer was just finishing his oenology studies in St. Michael on the Adige. Their shared passion for good wine encouraged the two friends to invest their savings in a common dream for the future: To produce unique wines that inspire the consumer and leave formative memories. The very first wine, the Müller-Thurgau Palai, immediately set the success story of the Pojer e Sandri winery in motion.
In the beautiful landscape of the Cembra Valley, covered with vineyards, Mario and Fiorentino put their passion into practice and to this day they continue to promote the valorisation and preservation of this unique territory. The Pojer e Sandri winery is located in the town of Faedo in Trentino. From the initial two hectares, a total of 35 hectares of vineyards have been created, all of which are cultivated at an altitude of at least 450 metres.
The locations around San Michele and Faedo are dominated by calcareous soils, while working on the steep terraces of the volcanic Cembra Valley is a challenge. Both areas benefit from the environmentally friendly climate control provided by Ora, a southerly wind on Lake Garda that keeps the grapes dry and thus reduces their susceptibility to disease. The wines from the Müller-Thurgau, Chardonnay, Sauvignon, Riesling, Pinot Nero and the autochthonous Nosiola grape varieties are part of a diverse portfolio that impressively reflects the quality standards of the two friends.
From the seedling to the wine glass: the entire production process is based above all on ecological and economic sustainability. This commitment drives the innovative spirit of the winery, and technical problems become challenges here. When the residues on the grape skins caused difficulties in fermentation, Pojer e Sandri developed a kind of "washing machine" for grapes, which removes impurities on the skins while strengthening the autochthonous yeasts. Just an idea that made Mario and Fiorentino famous for consistently putting new approaches into practice.
