Caiarossa

Pergolaia is mainly Sangiovese with smaller portions of Merlot and Cabernet Franc. The wine opens with a medium-bodied attack and a bright bouquet characterised by notes of cherry, wild plum, ploughed earth and pressed blue flowers. The Viognier and Chardonnay vines grow on Caiarossa's most limestone terroir. The grapes are fermented separately in oak barrels and aged on their lees and blended at the end, with little or no decanting to make the wine with as little oxygen contact as possible. The result is a precise and clean white wine that, with its beautiful volume, depth and smoothness, with fragrant aromas of flowers and almonds, goes well with a delicate and fragrant pesto.
