Arneis – once almost extinct, today Piedmont's white pride. The Poggio di Caro comes from the heart of the Roero: the 20 to 25-year-old vines are rooted in the characteristic sandy soils around Canale, where Enrico Serafino has been at home since 1878. After being harvested by hand, the grapes are cooled with carbonic acid snow and undergo a 12 to 15-hour cold maceration before being gently fermented in stainless steel. Three months of bottle ageing round off the wine.

The name refers to an ancient coin of the Genoese lords who once owned the vineyards around Gavi. Today, the Cortese grapes come from the heart of the appellation: the Comune di Gavi itself, where calcareous marl soils and pronounced day-night differences give the wine its characteristic freshness and floral aromas. After being harvested by hand, the grapes are cooled with carbon dioxide snow and pressed particularly gently. Fermentation takes place at a controlled temperature in stainless steel, followed by three months of bottle ageing.

Nebbiolo beyond Barolo: Tovasacco comes from the estate's own vineyards around Canale, Priocca and Alba, where the sandy soils of the Roero give the great Piedmontese wine its very own character – less austere, more accessible, but by no means superficial. Manual harvesting leads to a complex selection process: First, the grapes are sorted on a vibrating table and cooled with carbonic acid snow, followed by a second selection of the individual berries after destemming. Mash fermentation takes place over 20 days with délestage and submerged cap, followed by maturation in oak barrels for twelve months.

Oudeis – nobody. When the cunning Odysseus outwitted the Cyclops Polyphemus, he gave it this name. Enrico Serafino's Alta Langa bears this name out of humility: no one is responsible for the complexity of this wine – only the terroir. A philosophical bow to the high altitudes of the Alta Langa, the Piedmontese plateau that Enrico Serafino has pioneered the Metodo Classico since 1991. The grapes – 85% Pinot Nero, 15% Chardonnay – come from vineyards between 300 and 550 metres above sea level in the municipalities of Mango, Trezza Tinella, Loazzolo, San Giorgio and Bubbio. After manual harvesting and gentle whole-cluster pressing, the must ferments in stainless steel, followed by six months of bâtonnage. The second fermentation and ageing on the lees takes place over 36 months in the historic underground cellars – protected from light, temperature-controlled, timeless.

Not far from the Cortese vineyards lies Libarna, an ancient Roman settlement. A bronze disc from the 1st century BC was found there – an astronomical calendar for measuring Roman cities. Today, this Libarna disc adorns the label of the "Poggio della Rupe" line and connects millennia: Wine was grown here even before the Romans. The Monterotondo comes from a single vineyard in the heart of Gavi, where gypsum-rich, sulphurous soils give the Cortese an unrivalled complexity. Thirty-five-year-old vines yield grapes for just 2,500 bottles. After fermentation in stainless steel, the wine matures for six to seven months on the fine lees – an ageing process that gives it depth and structure without sacrificing freshness.

While the white Oudeis captures the complexity of the Alta Langa in its purest form, its pink-coloured brother adds another dimension: the soul of Pinot Nero. Because here it is the red grape alone that expresses the terroir. Saignée, the French word for "bloodletting", describes the method: a short maceration on the skins extracts just enough colour and fruit from the must to achieve that shimmering onion skin tone that shines so seductively in the glass. The grapes come from altitudes between 300 and 550 metres in the municipalities of Bubbio, Loazzolo, Trezzo Tinella and Vesime – the grapes come from calcareous clay soils, which give the wine its mineral tension. After manual harvesting, the grapes are cooled with carbon dioxide snow and the must is left to rest for two to four hours under nitrogen before gentle pressing. This is followed by six months of bâtonnage and 36 months of yeast storage in the historic cellar vaults.

Maneo – i stay, I wait. What sounds like a silent promise in Latin becomes a philosophy at Enrico Serafino: this Gavi only leaves the winery five years after the harvest. While other Cortese wines have long since been drunk, the Maneo matures quietly – first on its fine lees in stainless steel, then in the bottle until time has done its work. The grapes come from the best parcels in the heart of the appellation, where clay and limestone-rich soils with a low pH value give the Cortese the tension that distinguishes it from the pleasing everyday white. Vinification follows the credo of maximum care: hand-picking, sorting on a vibrating table, cooling with carbonic acid snow to prevent oxidation. The grapes are gently pressed and some of the grapes are left to macerate overnight at cool temperatures – a touch of extraction that gives the wine substance without jeopardising its elegance.

There are wines that make history. Enrico Serafino's Zero is one of them: when the 2004 vintage was launched on the market in 2011, it was the first Pas Dosé in the history of the Alta Langa DOCG – a pioneering achievement that was to shape the self-image of an entire denomination. Three years later, Gambero Rosso named Zero the best Italian sparkling wine of the year. No coincidence, but the logical consequence of an uncompromising philosophy. Zero – the name says it all. Zero grams of dosage, no liqueur d'expédition, no concession to favour. What remains is the pure terroir of the Alta Langa: 100% Pinot Nero from altitudes of over 400 metres, where calcareous soils and alpine influences give the wine its mineral tension. After manual harvesting and whole bunch pressing under nitrogen, the must ferments at a controlled temperature in stainless steel. The wine is aged on the lees for at least 60 months – five years, during which time unfolds its magic. The late sboccatura marks the final act before release.

The white Zero made history as the first Pas Dosé of the Alta Langa. Its pink-coloured brother goes one step further: here it is the Pinot Nero alone that carries the uncompromising philosophy – 100%, without the Chardonnay as an elegant intermediary. What remains is the pure commitment to one grape variety and one terroir. Saignée – the bloodletting. The method betrays Burgundian roots: after destemming and gentle pressing, the must rests on the skins for two to four hours in a nitrogen atmosphere, just long enough to extract that delicate copper colour that shimmers so seductively in the glass. The yield of blossom must is a maximum of 45% – concentration instead of mass. The grapes come from altitudes between 450 and 550 metres, where the calcareous soils of the Alta Langa give the Pinot Nero mineral tension and aromatic depth.

Serralunga sits enthroned on its hill like a medieval fortress – and its wines taste exactly the same. Of all eleven Barolo communes, this one is the most uncompromising: here, where the oldest soils in the region lie, grey marl and sandstone from the Serravallian twelve million years ago, the Nebbiolo has to fight for every drop of water. The roots dig deep into the cement-like rock, interspersed with limestone and iron oxide. The result is wines of monumental structure – austere, long-lasting, legendary. Enrico Serafino has been cultivating his own vineyards here, an investment by the Krause Gentile family since 2015. Vinification is an act of precision: hand-picking is followed by sorting on the vibrating table, cooling with carbonic acid snow and cold maceration before fermentation. The must remains on the skins for a full 28 days – with délestage and a submerged cap, Serralunga is extracted for what it has to give. The wine is aged for a total of 28 months, first in tonneaux and then in larger oak barrels.

One hundred and forty months. Almost twelve years in complete darkness, resting on the lees, in the historic vaulted cellars of Canale d'Alba, where wines have been maturing to perfection since 1878. No other Italian sparkling wine takes so much time. No other demands so much patience – and rewards it so overwhelmingly. Zero140 is the culmination of a journey that Enrico Serafino began in 1991 as a founding member of the Alta Langa project. In 2004, they dared to do the unthinkable with the first "Zero": a Pas Dosé from Piedmont, without any added dosage, without any concession to favour. In 2014, Gambero Rosso named this uncompromising purist the best Italian sparkling wine of the year. But the 140 goes much further – it triples the ageing time and makes time itself the protagonist.

Briccolina is a cru of great complexity that takes its name from its location on the top of the hill. Enrico Serafino's Barolo Riserva is a full-bodied, austere and powerful Barolo that is the result of a sustainable cultivation process. Very complex on the palate, initially rather closed, it then opens up with multi-layered fruit, roasted herbs and a fine menthol note on the finish. It has a rather exotic flavour at first, which makes it particularly exciting and almost incomparable with the other wines from the famous appellation. Bricco – is what the Piedmontese call the top of a hill, the highest point where the wind blows the strongest and the sun lingers the longest. The Briccolina in Serralunga d'Alba is just such a place: a steep, south-facing slope of just one hectare, which is one of the most important Menzioni Geografiche Aggiuntive (MGA) in the municipality. Here, where calcareous clay soils are criss-crossed by veins of sand, there are vines with stories to tell – more than half of them were planted in 1955 and are still cultivated today using the traditional Catena Vecchia, the old chain training system.

In 1878, the then 23-year-old Enrico Serafino, heir to a wealthy family, fulfilled his dream and founded the eponymous winery in Canale d'Alba. In the midst of the beautiful UNESCO World Heritage Lange Roero and Monferrato, the most typical regional wines of Piedmont have been fermented for over 140 years.
The winery cultivates about 60 hectares of vineyards, which are a true gift geologically and climatically and are the basis for wines of the highest quality. The subtropical climate provides ideal conditions, the gentle slope and moderate temperatures favor a controlled and high quality growth of the grapes. Red grape varieties such as Nebbiolo, Barbara and Dolcetto or white varieties such as Arneis, Cortese and Moscato thrive on the slopes.
Thus, Enrico Serafino's wines are a perfect expression of Piedmontese craftsmanship: time-consuming vinification, elegant and multi-faceted. Tradition alone is not enough, of course, because to constantly improve requires dedication and foresight. Since 2015, the winery has been owned by Kyle Krause, a wine collector and dedicated businessman from the United States who is passionate about Piedmont thanks to his Italian heritage.
