Sì. One word, no compromises. The most direct promise a wine can make. Elena Celli and winemaker Luca D'Attoma founded Duemani in 2000 in Riparbella, on hills between 200 and 300 metres above sea level overlooking the Tyrrhenian Sea. Biodynamic according to Demeter standards, uncompromising in its philosophy: Cabernet Franc, Syrah and Merlot grown on soil with up to 40% clay content, limestone outcrops and pronounced salinity, stemming from the proximity to the coast and the sea breezes. A terroir that speaks for itself in the glass. Sì is 100% Syrah vinified as a rosé. Spontaneous fermentation takes place inLiters, in which the wine also spends its entire ageing period. No fining, no filtration.

On the hill of Riparbella, which smells of the sea and the forest, one principle holds true: what is done by hand in the vineyard at the right time of year determines what can be created in the cellar. Luca D'Attoma's work in the vines sets the stage for everything that follows. The clay soils with their pronounced salinity, the limestone gravel, the sea breezes, the constant temperature range – the terroir of Duemani is characterised by a tranquillity that carries over into the glass. Altrovino follows the same approach as it always has: Merlot and Cabernet Franc fermented spontaneously, separately, in concrete, with 20 days' maceration. Part of the Cabernet Franc is aged in terracotta amphorae, which lend volume to the fruit and allow the floral notes to unfold. Then comes the blending, followed by eight months in oak vats. No fining, no filtration.

The grapes for this single-varietal Grenache come from a plot planted in 2014 at 350 metres above sea level. The rocky, calcareous clay is mixed with some soils of volcanic origin. The maceration on the skins in amphorae (called "orcio" in Italian) lasts up to five months and the stems are included. The last three months of ageing are spent in barriques, as this contributes to the natural clarification of this essentially unfiltered wine. No sulphites are added except at bottling. Just 2,000 bottles are produced each year.

Here, where the salty breeze from the Tyrrhenian Sea meets Mediterranean wilderness, one of Italy's most extraordinary Cabernet Francs has been produced for over two decades. Luca D'Attoma, legendary Oenologist and creator of iconic wines such as Le Macchioles Messorio, is committed to radical purity: biodynamic cultivation in accordance with Demeter guidelines, spontaneous fermentation in conical oak vats, and 20 months' ageing in barriques containing 80% new oak.

This wine monument from three of the best wineries in the region (Caiarossa, Duemani and Tenuta Prima Pietra) is a tribute to the Tuscan coastal town of Riparbella. Caiarossa contributed the Cabernet Sauvignon, Duemani the Cabernet Franc and Prima Pietra the Merlot. Intense and inky in the glass, initially restrained nose. Lots of meatiness and juiciness on the palate and a ripe, very complex flavour that is softened by the spicy French oak. Round and very polished tannins lead into a flavourful finish. Luca D'Attoma, who helped create Le Macchiole's legendary Scrio as a consultant, applies the same philosophy here: 30% of the grapes are fermented as whole bunches to enhance the aromatic complexity, spontaneous yeast fermentation in conical oak vats and small 1,Liters preserves the fruit's vibrancy, before the wine is left to rest for 20 months in French barriques.
