The grapes come from our own vineyards near Arzachena. Hills with sandy-granitic subsoil, close to the coast and aerated. The limestone-rich soils provide minerality, while the Atlantic wind adds freshness – the result is a refreshing base note with aromatic clarity. The style in the vineyard and cellar follows a purist path: Hand-picking, gentle pressing, static temperature fermentation in stainless steel and around six months on the fine lees, no wood notes, but maximum varietal purity.

Morisfarms is located seven kilometres from the Tyrrhenian Sea. And you can taste it. The Vermentino from the Poggetti estate carries the coast in the glass: salty, mineral, fresh, with that characteristic crispness that distinguishes Vermentino from the Tuscan coast from its more opulent relatives from Sardinia or Piedmont. The wine is not a pure Vermentino, but a harmonious blend: 90 per cent Vermentino, 10 per cent Viognier – the indigenous coastal variety and an aromatic northern player. The Viognier is harvested at the end of August, the Vermentino in mid-September. Both are cold clarified separately and fermented together in steel at 18 degrees. Matured lean, short fine lees, fresh in the bottle.

Filippo Fanti has been producing white wine since the 1980s using Trebbiano Toscano and Malvasia Toscana, which are also used for Vin Santo. Tenuta Il Palagio is located in the hills south of Florence, where Sting and Trudie Styler have been cultivating a 350-hectare estate dating back to the 16th century biodynamically since 1997. The Vermentino comes from eleven hectares of vineyards on the calcareous soils of the Chianti Colli Fiorentini – vinified under the aegis of Riccardo Cotarella. The grapes are harvested by hand at the end of September and fermented in stainless steel at low temperatures to preserve freshness and primary fruit.

The name is a dedication. Maria Iris Bertarelli – co-founder and soul of Collemassari – is the woman who, together with her brother Claudio Tipa, acquired the abandoned castle in Montecucco in 1998 and planted it with a vision: that this forgotten hilly landscape between Montalcino and Scansano has what it takes to become its own appellation. Irisse is their wine. Vermentino with up to 25% Grechetto – more body, more substance. But what really sets Irisse apart from Melacce: short maceration on the skins, then twelve months of ageing in large oak barrels. This results in a depth that is rarely expected from Vermentino.

The Maremma was Etruscan country before it became wine country – and on the hill of Gavorrano, where the cellar building designed by Renzo Piano is cut into the landscape, excavations have brought to light wine remains from a past almost three thousand years old. What began back then, Rocca di Frassinello continues today: as a joint venture between Castellare di Castellina and the Domaines Barons de Rothschild-Lafite, with the aim of uniting the best of two wine worlds on a single estate. The Vermentino grows at an altitude of 90 metres in a natural wind tunnel along the old Via Aurelia – a constant sea breeze blows over the hills from the coast near Castiglione della Pescaia, keeping humidity and heat at bay. Vinification in steel tanks, six months maturation on the lees.

The name "The Whale" refers to the Tyrrhenian Sea, which can be seen from the hills of Suvereto and whose breeze sweeps daily over the San Lorenzo vineyard in the single vineyard of the same name. The hippogriff, the winged hybrid creature that carries one beyond all boundaries, is the symbol of this epic. Querciabella has featured both on the label of its Maremma project: the name, the creature, the ethos. Since 1997, Querciabella has been cultivating vineyards in Banditella near Alberese – right on the Tuscan coast, where sea breezes, salty air and sandy soils shape the Mediterranean character of the wine. 100% Vermentino, 20,000 bottles, organically farmed. The name evokes a landscape. "Pearl of the Forest" – those ancient strips of macchia between the vineyards and the Tyrrhenian Sea, from whose herbs, pine trees and wildflowers the wind carries a daily bath of aromas into the vines. Tua Rita has been producing Vermentino since 1992 – the estate's very first vintage. Not an experiment, not a trend, but a firm commitment. 100% Vermentino from the mineral-rich soils of the Colline Metallifere. The vines are grown without topping – their shoots are allowed to spread out as a natural canopy over the grapes, protecting the bunches from heat stress and preserving the aromas. Fermentation and ageing take place in stainless steel: no wood to interfere between the grape variety and the terroir. "The trick is maintaining the acidity," says Stefano Frascolla.

Eco di Mare is a white tribute to the Tuscan sea. Made from 100% Vermentino from the Alta Maremma, where the Etruscans once mined silver from the earth and where, today, the Turnauer family crafts elegant wines from this mineral-rich terroir. The estate is situated at the southernmost point of the Bolgheri DOC, on the heights of Donoratico, and forms part of the historic estate owned by the Florentine Serristori family. In the red Aeolian sands of Donoratico, at altitudes of between 20 and 80 metres, the Vermentino vines thrive under the shelter of centuries-old pine groves along the Viale dei Pini. 15 days' fermentation, two months' ageing on the fine lees, three months' bottle ageing.

Vermentino: Pure Mediterranean
Vermentino is one of those grape varieties that carries the sea in its glass. Its origins have not yet been clearly established, but there is much to suggest that it originated in the Mediterranean, from Spain to the south of France and Italy. It has been documented in Liguria and Sardinia since the 14th century at the latest. It is characterised by light, straw-yellow wines with greenish reflections, which are characterised by citrus freshness, aromatic herbs and a fine salty core. Vermentino is rarely loud, favouring an elegant, clearly structured style that immediately transports the connoisseur to the sea, wind and maquis. Its greatest strength lies in this balance of freshness and Mediterranean spice, which makes it an unmistakable expression of the south.
Gallura, Liguria & Maremma
In Italy, Vermentino is mainly present in three regions: Sardinia, Liguria and Tuscany. In Sardinia, the variety enjoys its greatest fame with the DOCG Vermentino di Gallura. Fresh, vibrant white wines with an unmistakable minerality are produced in the granite-rich altitudes of Gallura. Liguria recognises Vermentino as an integral part of its coastal culture, often with an even more floral aroma. In Tuscany, especially in the Maremma, it has a fruity, sometimes fuller style. Synonyms such as Pigato (in Liguria) or Favorita (in Piedmont) indicate regional characteristics that lend the grape variety additional facets.
Versatile character actor
Vermentino is versatile. It can shine as an uncomplicated, flavoursome summer wine, but also impress as a multi-layered white wine matured in wood or on the fine lees. The grape variety has achieved international renown in Sardinia, where it is vinified in a sophisticated, long-lasting style. In Liguria, the character is full of floral elegance. In Tuscany, on the other hand, Vermentino develops an individual style on the Tuscan soils that perfectly reflects the region.
Culinary diversity
Vermentino is a wine that is perfect for Mediterranean cuisine. It accompanies seafood, grilled fish, fresh pasta with pesto genovese or aromatic goat cheeses. Its salty freshness enhances the flavours of mussels, oysters or cuttlefish, while its herbal spiciness is ideal for dishes with thyme, rosemary or basil. The ideal drinking temperature is between 8 and 10 degrees Celsius, while more complex versions can be served slightly warmer. A summer evening by the sea or a festive fish menu are occasions when Vermentino really comes into its own.
