This double maturation creates the characteristic texture: structured but smooth.

Native to the Piedmont hills since the Middle Ages, it was long considered too rustic – until producers like Cavallotto discovered its true elegance. The 2023 undergoes traditional vinification with indigenous yeasts and 3–5-day skin maceration, followed by 12 months–15 months of ageing in Slavonian oak barrels and six months of bottle ageing.

A name that tells stories: Grign is Cavallatto's affectionate abbreviation for Grignolino – the enigmatic grape variety whose name is derived from the Piedmontese "grignole" and means "many seeds". This thin-skinned grape actually has four to seven seeds per berry instead of the usual two, which gives the wine its characteristic tannin structure. Native to the Monferrato hills since the 13th century, Grignolino was once considered as precious as Barolo – until the fashion for heavier wines pushed it into the shadows. This 2024 comes from a parcel in the middle of the Bricco Boschis, which matures for twelve months in stainless steel tanks after a five-day skin maceration with indigenous yeasts. On 1.96 hectares of steep south-west-facing slopes, where 10,700 Nebbiolo vines planted in 1948 and 1966 are rooted in calcareous marl, a Barolo with a completely different personality is created – more elegant, more floral, more seductive than the powerful wines from Bricco Boschis. Vignolo embodies the feminine side of Cavallatto – a wine that does not impress through power, but enchants through finesse. The site, 60-80 metres lower than Bricco Boschis, benefits from a milder microclimate and a different geological composition, which produces wines with "soft and sweet" tannins – already accessible in their youth, but with the potential for decades of development.

The history of the Cavallottos is one of pioneering spirit and passion. The Bricco Boschis rises above Castiglione Falletto like a symbol of the Barolo region. Once called "Monte della Guardia", the hill belonged to Countess Juliette Colbert before passing into the hands of the Cavallotto family via Giuseppe Boschis. Giacomo Cavallotto acquired the estate in 1928 and the name has been inextricably linked with this location ever since.
Terroir straight out of a picture book
The fact that Bricco Boschis is almost entirely owned by the family is a rarity in small-scale Piedmont and still characterises the wines today. The soil, a mixture of limestone marl and sand, stores the heat of the day and slowly releases it to the vines at night. The microclimate here, protected by the surrounding hills, gives the grapes an unusual complexity. "Our terroir is like a good novel," says Laura Cavallotto, "each vineyard has its own character, each harvest a new story."
The winery sits enthroned right at the entrance to Castiglione Falletto, as if to welcome visitors. The 25 hectares of vineyards are a coherent jewel, a rarity in the fragmented world of Barolo. Here, where the mists of the Tanaro River drift over the hills in autumn, grapes ripen that later become wines that critics praise as "picture-book Barolos".
From tradition to innovation
Today, the fourth generation, Laura, Giuseppe and Alfio, run the winery with the same dedication as their ancestors. Their credo: "Tradition is not a museum, but a living process." In the cellar, Cavallotto has always favoured slowness and tradition. Nebbiolo is fermented in concrete, with long maceration times that promote structure and depth. The wines then mature for many years in large Slavonian oak barrels, the classic "botti". Barrique has no place here – instead, a style is created that emphasises clarity, austerity and longevity. The results are wines that appear demanding when young, but develop into great nobility over decades.
Full of character & diverse
What characterises Cavallotto's wines is their unmistakable signature. The vineyards lie like an amphitheatre around the winery, each plot with its own signature. The Bricco Boschis, a monopoly position, produces grapes that smell of wild herbs, ripe cherries and a hint of truffle. An anecdote is doing the rounds: when a severe hailstorm threatened the harvest in the 1980s, the Cavallottos covered the grapes with nets they had sewn themselves – an emergency solution that is now considered a pioneer of sustainable viticulture. "Sometimes," laughs Laura, "it takes special challenges to get creative." The centrepiece of the winery is the Barolo Bricco Boschis, complemented by the Barolo Riserva San Giuseppe and Vignolo – both icons that are regularly counted among the classics of Piedmont. Barbera and Dolcetto d'Alba as well as a Langhe Nebbiolo and a Langhe Freisa round off the portfolio. The same applies here: no striving for fashionable effects, but a clear signature that places the terroir and tradition at the centre.
In harmony with nature
In the evening, when the last rays of sunshine glow over the vineyards, the family often sits on the terrace of the winery. "Viticulture is like a dance," Alfio likes to say, adding, "You have to feel the rhythm of nature and know when to lead and when to follow."
