“Athesis” Metodo Classico Alto Adige DOC 2020 brut
The grapes for this elegant Metodo Classico come from loose limestone soils with a clay content from the Überetsch and Unterland regions. The three grape varieties are vinified separately, gently pressed and fermented at a controlled temperature of 14°-16°C. Pale pink with orange reflections. Elegant, fine fragrance of flowers and roses, small red berries and herbs and the typical scent of bread and yeast. Very supple on the palate, fresh and forward, the acidity agile and the mousseux soft and fine. A mouthful of red berries and very broad herb and spice flavours are wonderfully enveloped by a fresh acidity that finishes this very long drop with a fruity, subtle tartness and salinity. Metodo Classico Alto Adige DOC 2018 pas dosé
Pas Dosé - here the normally added dosage is omitted, which after disgorgement determines not only the sugar content but also the style of the sparkling wine fermented in the bottle. Instead, the volume naturally lost during the years of bottle ageing is replaced by other wines of the house, which, however, do not further influence the sugar content. Thus we have here an extremely dry sparkling wine, which, however, in no way lacks volume, character and finely modelled taste nuances. Straw yellow in the glass, bright fruits, herbs, citrus and wild flowers on the nose. In the drink, then, an impressively fine perlage and texture that reveals layers of spices, dried fruits and slightly salty components. In the past, it was the French who ruled the world of sparkling wines unchallenged with their champagne. Today, people reach for the Italian equivalent, the Metodo Classico - in Trentino, in Lombardy and also in South Tyrol. Franco Kettmeir recognised the potential of these bubbly wines and was one of the first to promote high-quality sparkling wine production according to the classic bottle fermentation method in South Tyrol.
At first, he only produced according to the simpler tank/charmat method, until in 1992 he also ventured into the more refined technique of Metodo Classico. Since then, Kettmeir has only used the classic bottle fermentation method, also called Champagne method. "It may be the most complex way to produce sparkling wine, but it is also the most elegant," says the winery, because the very lengthy and elaborate production process is rewarded in the glass with unmistakable ripeness aromas and a particularly fine perlage and breed.
The ultra-modern winery is situated in an impressive hilly location above Lake Kaltern in the village of Kaltern and was founded in 1919 by Franco's grandfather, Giuseppe Kettmeir. Since the end of the 1980s, the winery has belonged to the Santa Margherita wine group. Thanks to Franco's pioneering spirit, the South Tyrolean sparkling wine tradition experienced a long-awaited and significant upswing, which also led to Kettmeir's sparkling wine production becoming an important mainstay in only a short time.
Cold north winds and warm south currents form the ideal basic conditions for terroir-derived sparkling wines. The selected Chardonnay, Blue and Pinot Blanc grapes come predominantly from higher slopes in the Überertsch, which are characterised by skeleton-rich clay and limestone gravel soils. One of the most important reasons for the continuing success, however, is the close relationship with the 60 winegrowers who have supplied the winery with high-quality grapes for several generations.
Thanks to this long-standing collaboration, exquisite quality sparkling wines are produced that convey an appreciation for the surrounding landscape to the outside world. "Our focus is on South Tyrol," explains head enologist Josef Romen, "the wines are deeply connected to the area and that is the philosophy that has guided us from the beginning. We want you to feel the South Tyrol when you put your nose to the wine glass".
In our opinion, Kettmeir's sparkling wines are the ideal ambassadors representing the territory and terroir. They prove from year to year that South Tyrol is not only famous for good white wines, but can also produce outstanding Metodo Classico. SUPERIORE.DE
