Saia is the pride and joy of Feudo Maccari – a Nero d'Avola from old bush vines rooted in the barren, chalky soils around Noto. The name refers to the ancient Arab irrigation channels of Sicily – a symbol of lifelines in a sun-scorched landscape. This wine is also an expression of origin, patience and resilience: a Nero d'Avola that could hardly be more purist and powerful. The vines are on average 35 to 45 years old and are trained in Alberello, which reduces yields but maximises concentration and depth. After selective manual harvesting, fermentation takes place at a controlled temperature in steel, after which the wine matures for twelve months in French barriques. This careful vinification preserves the balance between structure, maturity and freshness.

Delicate, elegant Nerello Mascalese with fine aromas of red fruits and raspberries, enveloped in a pleasant citrus freshness. As the wine progresses, it develops a smoky note associated with the strong lava rock component that characterises the volcanic soil of Etna. Animardente is a pure Nerello Mascalese produced from vines planted in bushes at an altitude of 700 metres on partly sandy and ashy, partly gravelly and pebbly soils that are exposed to extreme temperature fluctuations between day and night. The name of the wine is derived from the bowels of the volcano, from its incessant activity, the heat and the colour of the magma. The vines grow in a kind of amphitheatre created by volcanic eruptions, which over the centuries have produced a valuable substrate for viticulture: On dark volcanic soils formed from lava flows, mainly free-living, rootless vines develop here, which are exposed to the most extreme climatic influences. Animardente was born a few years ago in this almost moon-like landscape. A name that tells of the soul of the silent volcano, unexpected and incandescent, breathing life into perpetual motion. Animanaturale from vines over 60 years old is the lightest and freshest wine from the new Animaetna line of the small garage winery Contrada Santa Spirito, which belongs to Feudo Maccari. Matured almost entirely in amphorae, the Nerello Mascalese grape presents itself here in all its fruitiness and freshness, completely unadulterated and pure. The grapes are foot-pressed, spontaneous fermentation is carried out using the grapes' own yeasts, racking and bottling take place according to the phases of the moon. Feudo Maccari dedicates its most impressive white wine to this image: a single-varietal Grillo, which, like no other, makes the combination of origin, patience and depth tangible. The name was deliberately chosen because the wine is artisanal, elegant, precise and at the same time uncompromisingly Sicilian. The grapes come from high-altitude plots in the south-east of the island, where the limestone-rich soil and proximity to the sea give the Grillo structure and salty tension. Manual harvesting, gentle pressing and slow fermentation form the basis – the wine then matures for 12 months on the fine lees in Liters French oak tonneaux, with some of the wine also being matured in concrete eggs. Here too, the organic approach is not just a label, but is reflected in the clarity and vitality of the wine.

The Nero d'Avola grapes for the very rare Sultana come from a steeply sloping, bush-shaped vineyard facing north-west. The soil here is white with a limestone matrix, rich in minerals and drainage capacity. The pronounced slope and very poor soil reinforce the pedoclimatic characteristics in which the Nero d'Avola plants find a natural habitat. It is an extreme terroir, a combination of environmental and human factors, that distinguishes the Sultana vineyard from other vineyards. The single vineyard Guarnaschelli is a 60-year-old vineyard with a slight westerly exposure. A loamy matrix of brown skeletal soils can be found here. This generous soil, characterised by limestone, gives the wines finesse and minerality. Here, the plants produce grapes of consistently high quality every year - the result of deep roots and restrained, intelligent vineyard work. The strong exposure to the sun is tempered by constant winds blowing from all directions. This sets in motion a play of temperature fluctuations from which the old vines benefit to produce complex and aromatic grapes.
