Prosecco Superiore Rive di Col San Martino thrives on the steep slopes of Valdobbiadene that bear the same name. The second top product of the small family winery is Castè Extra Dry, which comes from the old steep slopes on the castle hill and thus received its name. Shiny light yellow, white fruits, a delicate yeast note, lemon and herbs in the bouquet. As Graziano Merotto in 1972 his small and almost hidden winery in Farra di Soligo in the Valdobbiadene wine-growing area, to which at first only a vineyard called "Olchera" he was already fully aware of the importance of successful vineyard management. So the young winemaker began to produce Sur Lie wines with Prosecco grapes, which now bear the name Glera. These are white droplets which are stored for up to several months on the yeast residues (french lees) formed during fermentation and are bottled directly with or without these sediments. Just one year after the start of the project, Merotto had already purchased "Particella 86" This is another vineyard that still produces the best grapes today, along with some other vineyards. Between 1975 and 1979, the owner of the estate, who was keen to experiment, began to produce his pearly drops according to the Italian production method. "Classico Metodo" to generate a Between 1978 and 1986, he also partly applied the "Méthode Charmat" (The Frenchman Eugène Charmat is regarded as the inventor of the pressure vessels; therefore the method of making sparkling wine in large containers bears his name).
To date, Graziano Merotto has achieved many of his ambitious quality goals with constant dedication and hard work, as well as considerable investment, so that he can justifiably count himself among the best producers of Prosecco Superiore DOCG. According to an assessment by the wine guideGambero Rosso, his sparkling products reveal a clear and genuine style in all variations. The wines of the northern Italian winegrower are therefore regularly - and not only by Gambero Rosso- honoured with high awards.
In the wine house Merotto mainly Prosecco grapes are cultivated. The newly built, excellently equipped winery on the outskirts of San Martino makes it possible to fill more than half a million bottles a year. On the often very steep slopes, the committed winegrower with his highly motivated and competent staff lets only 800 grams of fruit per square meter ripen. During the harvest, the grapes are sieved again, so that at the end only between 500 and 600 grams of grapes are processed. Fermentation in pressure tanks takes place at the lowest possible temperatures and lasts for two months. "The perlage becomes soft and creamy, the carbonic acid remains in the fine Prosecco for a long time."adds Graziano Merotto. SUPERIORE.DE
