Prosecco Superiore La Primavera di Barbara dry shines bright and clear with a fine perlage in the glass. Complex aromas of peach, honeydew melon, jasmine and white pepper. On the palate, sweet fruit flavours are supported by herbal tones and a creamy texture. Great because on the one hand it is so uncomplicated and fragrant, but on the other very energetic and refined. A wonderful interpretation of the Rive di Col San Martino vineyard and, alongside the dry "Cuvée del Fondatore", the undisputed second top Prosecco of the house for us. SUPERIORE.DE

In Col San Martino, almost every second family bears the name Merotto. To distinguish the family from Graziano Merotto, they were given a nickname – and this nickname now appears on the label of its oldest brut sparkling wine. Bareta: a gesture of belonging, from the dialect directly into the glass. 100% Glera, exclusively from vineyards in Col San Martino, on yellowish-bluish marl with grey sandstone, 200 to 400 metres, south to south-east exposure, double-bend training. Gentle pressing, single-varietal fermentation at controlled temperature, second fermentation 50 to 60 days in autoclaves at 12–13 °C. Residual sugar < 8 g/litre – the dry end of the brut spectrum. Graziano calls Bareta the brut representation of his stylistic conviction.

Vines have been known in Col San Martino for over two thousand years. The Merotto family does not say this as an advertising message – it is simply what characterises the history of this small village. Graziano Merotto has developed his parents' winery into one of the most stylistically independent addresses in Valdobbiadene: no compromise on location, no compromise on care, no compromise on style. Colbelo is Merotto's oldest and most famous wine – the same character, the same standards for decades. 100% Glera from vineyards at 300 metres, south-facing, yellowish-bluish marl and sandstone, Sylvoz training. Vines from 15 to 18 years old. Hand-picked at the end of September, gentle pressing, single-varietal fermentation at a controlled temperature, second fermentation for 40 days in autoclaves at 12–13 °C. Residual sugar 16 g/litre – extra dry, which is the most obvious (and classic) choice for this grape variety and terroir.

Graziano Merotto has named wines after parcels of land, after decades of experience, and also after himself. This one, however, he named after his daughter. La Primavera di Barbara – barbara's spring. What at first sounds like a gesture of affection is also a precise description of the wine: bright, blooming, with a vibrancy that can only be found in the best season.

In 1973, Graziano Merotto bought plot 86 in the Rive di Col San Martino – an overgrown piece of hillside, still covered with forest. He cleared it with his own hands, planted Glera and began to shape the vineyard that would one day become his most important. Over fifty years later, this wine bears his name. The Cuvée del Fondatore is made exclusively from that historic plot – 230 metres, south-facing, clay and sand, vines over 40 years old. What Graziano Merotto decides in the cellar is unusual: mash contact before pressing – a step that most producers skip – the must then goes directly into the autoclave, undergoes a second fermentation for 60 days and then matures on its own yeasts for a further 180 days. Almost nine months from must to bottle, a comparatively long time for a Prosecco Superiore. 33,000 bottles, 670 magnum bottles, 10 Jéroboams.

As Graziano Merotto in 1972 his small and almost hidden winery in Farra di Soligo in the Valdobbiadene wine-growing area, to which at first only a vineyard called "Olchera" he was already fully aware of the importance of successful vineyard management. So the young winemaker began to produce Sur Lie wines with Prosecco grapes, which now bear the name Glera. These are white droplets which are stored for up to several months on the yeast residues (french lees) formed during fermentation and are bottled directly with or without these sediments. Just one year after the start of the project, Merotto had already purchased "Particella 86" This is another vineyard that still produces the best grapes today, along with some other vineyards. Between 1975 and 1979, the owner of the estate, who was keen to experiment, began to produce his pearly drops according to the Italian production method. "Classico Metodo" to generate a Between 1978 and 1986, he also partly applied the "Méthode Charmat" (The Frenchman Eugène Charmat is regarded as the inventor of the pressure vessels; therefore the method of making sparkling wine in large containers bears his name).
To date, Graziano Merotto has achieved many of his ambitious quality goals with constant dedication and hard work, as well as considerable investment, so that he can justifiably count himself among the best producers of Prosecco Superiore DOCG. According to an assessment by the wine guideGambero Rosso, his sparkling products reveal a clear and genuine style in all variations. The wines of the northern Italian winegrower are therefore regularly - and not only by Gambero Rosso- honoured with high awards.
In the wine house Merotto mainly Prosecco grapes are cultivated. The newly built, excellently equipped winery on the outskirts of San Martino makes it possible to fill more than half a million bottles a year. On the often very steep slopes, the committed winegrower with his highly motivated and competent staff lets only 800 grams of fruit per square meter ripen. During the harvest, the grapes are sieved again, so that at the end only between 500 and 600 grams of grapes are processed. Fermentation in pressure tanks takes place at the lowest possible temperatures and lasts for two months.
