      From the very beginning, Pio Cesare produced limited quantities of Barolo Chinato and Vermouth, exactly according to a family recipe handed down from his grandfather. At the beginning of the 1950s, however, production was discontinued as tastes and preferences changed.

      In recent years, Piedmont lovers have become increasingly longing for traditional character, strong personality and great individuality in aromatic wines and wine-based aperitifs. As a result, the decision was taken to produce small quantities of Barolo Chinato and Vermouth again - again strictly according to a secret family recipe that was kept under lock and key for many years under the careful supervision of the grandmother, granddaughter of the founder.

      In addition to the absinthe, which is essential for the production of a good wormwood, it is refined with a mixture of 26 aromatic herbs such as marjoram leaves, gentian roots, orange zest and others, which are dosed together strictly according to the traditional family recipe. Added are various white wines of the winery added including the Moscato d'Asti. After a 15-day maceration, the wormwood obtained matures in oak barrels for at least 4 months. Finally, the recipe is rounded off with the addition of caramelised sugar, which gives this wormwood its light colour and unmistakable aroma and flavour.

      Connoisseurs enjoy it in the old "Piedmontese style": without ice, but only with a small slice of lemon zest. SUPERIORE.DE

      "The NV Vermouth di Torino is based on Chardonnay but is infused and aromatized with cloves, cinnamon, quinine, citrus peel, ginger, nutmeg, marjoram and other secret ingredients that were written down on a piece of paper in 1952 and kept under lock and key ever since. The folks at Pio Cesare did well to bring this traditional recipe for Vermouth back into circulation. This is an ideal aperitivo drink that can be served on ice with a slice of lemon. It opens to a bright orange-gold color and offers a complicated bouquet that recalls the many aromatic ingredients used in the infusion. The fishing is sweet, but not excessively so." Robert Parker

      An infusion of Chinchona (China Calissaja and Succirubra rind) is macerated for 21 days in a small amount of the classic Barolo. Then a mixture of aromatic herbs such as gentian roots, rhubarb, cardamom seeds, sweet and bitter orange, cinnamon and other spices is added, which together represent the special family recipe. After a few weeks of aging, a certain amount of classic Barolo is added. SUPERIORE.DE

      "The base of the NV Barolo Chinato is Barolo wine from the 2012 vintage. Following local tradition (and using a secret recipe passed down five or six generations at the Pio Cesare winery), the wine is infused with cloves, vanilla, nutmeg, cinnamon and sugar. These family recipes are always left incomplete because local custom dictates that each family must keep a few ingredients secret. This is the perfect after-dinner drink with the alcohol and the medicinal flavors to wash the palate clean after a long meal.     Pio Cesare was one of the first winemakers to believe in the high quality and potential of Barolo, Barbaresco, Barbera and other Piedmontese wines. The world-famous traditional house he founded under his own name in the 19th century still has its headquarters in the old town of Alba today. The walls of the cellars date back to the Roman Empire. Today, the fifth generation of the family owns the wine house managed by Pio Cesares, Pio Boffa, the great-grandson of Pio Cesares. The quality products of the Langhe-based company can be found in restaurants and hotels all over the world, are highly appreciated by wine connoisseurs and collectors and are therefore worthy ambassadors of their north-western Italian cultivation zone. The range includes Barolo and Barbaresco site wines as well as other important red and white wines from Lower Piedmont.

    In addition to working in its own vineyards in the Barolo area in Serralunga d'Alba, Grinzane Cavour, La Morra and Barolo and Novello, in the Barbaresco areas of Treiso and other selected production areas in Diano d'Alba, Sinio and Trezzo Tinella, Pio Cesare has long-standing business relationships with local farmers. Friends of the winegrowers have been selling part of their grape harvest to the family for many generations. In the vineyards of Pio Cesare, Nebbiolo, Barbera and Dolcetto thrive alongside other vines, most of which are native to the area.

    In the winery, which has been extended by a new fermentation and maturation cellar and a new bottling plant, strictly selected grapes are turned into balanced wines with a classic character and a very high ageing potential. One of the top wines is Barolo Ornato, which comes from a vineyard of the same name in Serralunga d'Alba was born. Also the Barbera, pressed in the old town of Alba, inspires wine lovers from year to year. Only the finest wines of the house are aged in new barriques. The ruby red Barolo and Barbaresco have fine oak notes at a young age. Concessions to a broad public taste are sought in vain by connoisseurs of fine wines in Pio Cesare's battery of sixteen wines - and this will certainly remain so. SUPERIORE.DE
