The fresh, supple and very drinkable Casa Boschino is made from a similar blend of grapes as the Cerviolo, the star of the San Fabiano house. However, its grapes come from younger vineyards, so that it can be had for a sensationally low price. San Fabiano Calcinaia was acquired in 1983 by the current owner Guido Serio in Cellole near Castellina in the heart of the Chianti Classico area and developed into a winery according to modern standards. The origins of the farm date back to the eleventh century, when it was still part of a medieval hamlet. In the place of the estate there used to be a monastery where pilgrims stopped on their way to Rome. The vineyards, the winery, the bottling plant and the barrique cellar were gradually renovated by the owners. The result is not only an exemplary winery, but also a sensational architecture in which functional aspects are combined with artistic sensory stimuli. Guido and his wife Isa are happy when guests in San Fabiano Calcinaia or in Borgo di Cellole, the country house in Castellina, want to spend some days in tastefully furnished apartments and taste local specialties in the Osteria.
From the outset, however, the owners focused on the production of quality wines. The positive effects of the renewal on the quality standard of their own products were not long in coming. The wines of San Fabiano Calcinaia set out loud Gambero Rosso "on a clearly articulated and concentrated fruit". The Tuscan estate has long been producing world-famous plants. Guido can count on the expertise of the consultant Carlo Ferrini and the oenologist Franco Campanelli for his work. Both wine experts attach great importance to well-balanced wines. The balance is achieved, among other things, by an in-house method of barrel maturation.
The estate also produces IGT wines such as Cerviolo, a little Vin Santo del Chianti Classico and Grappa, as well as the two DOCG classics - a vintage wine made from Sangiovese, Chianti Classico and Chianti Classico Cellole Riserva. For the Riserva, the grapes thrive at a remarkable 450 metres above sea level. There the roots of the vines are in loamy soils with a high mineral content. The wines of San Fabiano Calcinaia mature on a total area of 42 hectares in vineyards established around the estate and the village of Cellole. SUPERIORE.DE
