The Sottimano winery has five vineyard sites, with the Pajoré site near Treiso having the poorest soils of all. These wines are therefore more elegant and ripe. Pajoré is a super-classic, explosive wine, with tremendous depth and character. Although it has a lot of breadth and texture, it remains light on its feet. Lavender, mint, liquorice and purple berry fruit are beguiling and wonderfully vibrant in the glass. "family business" Rino Sottimano calls his winery smiling. In fact, at the end of the 1960s, after his studies, he had acquired what was then a tiny farm in the middle of a vineyard. This vineyard is today one of the best individual sites in the Barbaresco area and Sottimano's most famous wine: Cottà. Together with his wife Anna, "without whom none of this would have been possible."Rino recultivated the vineyards and gradually acquired the vineyards and the "with any luck" some more famous vineyards in best sites: Cottá, Currá, Fausoni, Pajoré and Basarin, from which the single sites Barbaresco are also pressed. In the meantime, daughter Elena and son Andrea are fully integrated into the company.
Very early Rino Sottimano started with organic fertilization and renounced chemical sprays. Since 1990 with full consistency. The rows are greened and are only mown 2-3 times per year, only in autumn every second row is ploughed. Fermented spontaneously, only with own yeasts. In the cool cellar a very slow fermentation with a long maceration period between 24 and 30 days is practised. Barriques are used, but only one third are renewed per year, the rest are used. You could call the Sottimanos modern traditionalists. Son Andrea, who now rules in the cellar, pays attention to a slow, careful malolactic fermentation and lets the wines mature up to one year on the fine yeast. Then the wines mature 18-24 months in neutral barriques. Since the use of French barriques is so discreet, wood notes are hardly noticeable even in youth. After ageing, the wine is bottled without filtration and other fining. The wines convince by their fine fruity, elegant, subtle and yet hearty character.
The vines are now between 25 and 70 years old and therefore already carry a little less, which is why they hardly need to be thinned out. Through this respect for nature in the vineyards, which are all cultivated the same way, and only minimal interventions in the winemaking process, Sottimano's philosophy is to let the vineyards speak in the wine, "because often already 200 meters make a difference"The glass is easily comprehensible and convinces even skeptics of the terroir idea.
In addition to the multiple award-winning Barbaresco, Dolcetto, Barbera, Langhe Nebbiolo and a wine made from the autochthonous Brachetto grape variety, which are also among the best in the region, are produced. SUPERIORE.DE
