The three sisters from Fittà: Meri, Valentina and Alessandra Tessari have turned the winery founded by their parents Giovanni and Rosetta in 1982 into one of the most respected addresses in Soave Classico. Suavia is the Germanic origin of "Soave" – the name says it all. While their neighbours from the flatlands have long since bowed to industrial pressure, the sisters cultivate exclusively the autochthonous Garganega and Trebbiano di Soave grape varieties on twelve hectares at an altitude of 300 metres. Their vineyards are located on the volcanic hills of Fittà, on copper-red, black and grey soils full of basalt and other volcanic rock. Here, where 50-year-old vines thrive on mineral-rich subsoil, wines of unmistakable expressiveness are produced.

While the whole world was talking about the extinction of Trebbiano di Soave, the three Tessari sisters set out on a mission: to save an almost forgotten grape variety. In collaboration with Professor Attilio Scienza from the University of Milan, they selected the best clones of old Trebbiano vines and planted the Massifitti vineyard in 2006 – named after the "dense rocks", the large, compact basalt boulders that characterise the south-facing slope. Only two hectares at an altitude of 300 metres, where the volcanic minerality shows itself in its purest form. What is produced here is unique: probably the only single-varietal Trebbiano di Soave in the world. It matures for 15 months in stainless steel on the fine lees, then a further 12 months in the bottle before the sisters release it.

Monte Carbonare comes from red volcanic iron soils with plenty of black basalt in the centre. Six hectares of 60-70 year old vines in cooler sites, which continue to rise to the crème de la crème of the top sites as the climate warms. A richer wine than the younger Classico, but without the same cheeky vitality. While the Classico is an unbeatable everyday wine, the Monte Carbonare is a complex wine that demands food and a little more contemplation. Mirabelle plum, apricot pit, a hint of dried mango and plenty of smoky, sharp mineral grip, with dutiful freshness that brings wonderful length. SUPERIORE.DE

Le Rive: the steep slope. In Venetian dialect, this term describes those rugged, 45-degree south-facing slopes where only the bravest winegrowers cultivate their most precious grapes. Since 1992, the Tessari family has been harvesting their most overripe Garganega grapes from ancient vines on a single hectare in the UGA Fittà – only at the end of October, when the first mists of autumn drift over the hills. What happens in these steep rows is natural alchemy: Garganega "surmatura", overripe and concentrated by months of sunshine, develops a golden complexity that few wines in the world can match. 20 days of fermentation in large French oak barrels, 15 months on the lees without a single racking, then a further 12 months of bottle ageing. Patience as a craft.

Suavia is the ancient name for the famous wine village of Soave. This name alone shows the traditional connection of the Tessari family with their northern Italian homeland. Just as deeply rooted in the terroir are the idiosyncratic and autochthonous grape varieties Garganega and Trebbiano di Soave, the only grape varieties cultivated by the winegrowing family on twelve hectares of vineyard land. After grafting in the cellar of this fascinating Veneto family business, which has risen almost unnoticed in the regional hierarchy, these fruits have an unmistakable expressiveness. Giovanni and Rosetta Tessari, who took over the farm, which is situated on a natural terrace in the picturesque village of Fittà, are now an experienced winemaking couple working only in the background. Today, the winery is run by their daughters Alessandra, Arianna, Meri and Valentina, who are highly skilled and determined to work hard. The four young sisters give outsiders the impression that they live in perfect interaction and harmony with their environment.
The vineyards of the small Suavia winery, cultivated with great sensitivity, heart and mind, are located in the higher hills of Fittà, in the heart of the Soave country. They reach heights of around 300 metres. The plants, most of which are well over fifty years old, grow in very good locations on copper-red, black and grey soils full of basalt and other volcanic rocks. The subsoil contains essential mineral trace elements such as manganese and zinc. In addition to the exceptional soil, the climatic conditions in this growing area are particularly favourable. The warmth of the day is quickly replaced by a cool breeze after dark.
The rich and amazingly original Soave wines are given ample time to age by the female quartet, out of great respect for their historical raw materials. The terroir-true plants captivate with finesse, clarity and a great elegance. In addition, as a result of successful experiments, a few more drops are being pressed in the family business, which is intended to discover the full potential of traditional grape varieties. The Tessari family, unlike some large wineries and cooperatives, has never given in to the commercial pressures of the market and has produced wines that are above all cheap and uncomplicated. The sisters also do not feel an excessive urge for higher growth. Rather, as members of a family whose roots in the wine-growing region go back to the 19th century, they would like to write their personal wine history of the Soave. SUPERIORE.DE
