Opera Semplice – a "simple work". But what the three sisters have created here is anything but simple: it is the logical consequence of their Trebbiano obsession, a sparkling wine so radical and uncompromising that it was not actually intended for sale to begin with. An experimental solitaire, produced only in the very best vintages with the finest grapes from their Massifitti vineyard – another milestone in their mission to rehabilitate the almost forgotten grape variety.

September, early harvest, gentle pressing of the whole grapes without any added sulphites. Nothing but pure nature: spontaneous fermentation with wild yeasts, classic bottle fermentation, 24 months on the lees. Dosaggio Zero means absolute nakedness – not a single gram of sugar to hide the true character of the Trebbiano. The result is of purist beauty: brilliant straw yellow with delicate greenish reflections, fine, continuous perlage.

The nose initially reveals slightly sulphurous notes, accompanied by roasted nuts and fresh citrus flavours. The palate is a revelation: crystalline, bone-dry, with vibrant acidity and mineral tension. Green apples, lemon zest, a hint of salinity and that endless, salty persistence that only volcanic soils can give.
