This elegant rosé sparkling wine made from Pinot Nero is produced after a short maceration period and gentle pressing. The base wine matures on the fine lees until December, is then fermented in an autoclave and matures on the lees for a further six months. This is followed by at least two months of ageing in the bottle. The colour in the glass is pale pink with a fine, persistent perlage. The name says it all: Meczan is the local dialect form of Mazzon – the high plateau to the east of the Adige Valley, at an altitude of 350 to 460 metres, with north-facing slopes and soils of limestone gravel and clay. What Paolo Foradori began to prove in the 1960s and Martin Foradori Hofstätter continues to develop today is now undisputed: Mazzon is Italy's most important location for Pinot Nero. The Meczan is the entry into this world. Some of the grapes are fermented without destemming to give the Pinot more structure and aromatic depth. Ten days on the skins, vinified exclusively in stainless steel.

In 1850, Count Augusto Giorgi di Vistarino travelled through Burgundy. He recognised what he saw: those chalky, clayey soils, those temperature fluctuations, that stillness between the hills – the same promise, just three hundred kilometres further east, south of Pavia. He brought the first Pinot Nero grape seedlings directly from France and planted them in Rocca de' Giorgi. An act of conviction that changed Oltrepò Pavese forever. Today, the Vistarino family is the fifth generation to carry on this legacy – ottavia Giorgi di Vistarino replanted with Burgundian clones, selecting for low yields and aromatic depth. The Costa del Nero is Pinot Nero from a single, dedicated ridge. 700 metres. That is the altitude at which one of Pojer e Sandri’s two Pinot Noir vineyards is situated – in Palai, south-facing, on local limestone soil, swept by the Ora del Garda. For Pinot Nero in Trentino, this is exceptionally high. Long, cool nights, marked temperature fluctuations, and a slow ripening process that gives the grape variety exactly the time it needs to develop elegance and freshness. The second vineyard is in Faedo itself, in Località Rocol, at 300 metres – lower, warmer, and more full-bodied. Together, these two sites produce a Pinot Nero that fully embodies Faedo. Since 2002, the winery has been using a proprietary, patented process: Iperriduzione – the entire processing of the grapes takes place without oxygen, exclusively in stainless steel tanks. No external intervention – the grape’s natural protective compounds do the work. Fresh, clear, consistent.

Pinot Noir is a grape variety that seeks altitude. It finds it in South Tyrol – and Tiefenbrunner has selected the highest and coolest Pinot Noir sites in the entire portfolio for the Turmhof: Völser Aicha at 600 to 980 metres, on clayey sandy soil over grey porphyry, exposed to the south. Graun at 700 to 940 metres, calcareous-loamy dolomite soil. Penon, Hofstatt and Rain at 400 to 650 metres, calcareous dolomite soils. Mazon, Pinzon and Glen at 400 to 550 metres, sandy loam soil on dolomite rock. Four soil profiles, one wine. These altitudes require Pinot Noir to do what it does best: ripen slowly, build up structure, intensify flavours. Ageing in barriques and large wooden barrels gives the wine depth and elegance.

While Lagrein traditionally dominates rosé production in South Tyrol, Franz Haas goes his own way. As a Pinot Nero specialist who has vinified and meticulously documented 592 different Pinot Nero versions in over three decades, he devotes the same attention to his rosé. The vines for this wine grow on Guyot vines at extreme altitudes of between 700 and 750 metres – significantly higher than usual for rosé. Grapes of exceptional quality ripen on dolomite weathered rock, with a high planting density and selected clones. Only 5,000 bottles are produced annually. Vinification consistently follows the white wine method: after destemming, the grapes are pressed directly, without maceration. The must ferments at a controlled temperature in stainless steel, undergoes malolactic fermentation and matures for several months before being bottled. This purist approach preserves the freshness and elegance that can be expected from Pinot Nero at altitude.

From Burgundy to Italy
Pinot Nero probably came over the Brenner Pass with Habsburg officials as early as the 19th century. The variety is considered to be capricious, but it soon found a second home in the cool valleys of northern Italy. The first single-vineyard wines were produced in the 1860s, when Austro-Hungarian Oenologistselected plots in what is now the Alto Adige. Today, Pinot Nero enjoys DOC status in South Tyrol and Oltrepò Pavese; Trentino, Friuli, the Aosta Valley and individual hills of the Langhe also play a role. But it also performs at its best in Sicily, especially on the cool slopes of Mount Etna. The Pinot Nero grape variety is known internationally as Pinot Noir. In South Tyrol, it is often referred to as Pinot Noir, but the term Pinot Noir can also be found on the labels.
Delicate flavours of Italy
The colour in the glass is a transparent ruby red that is never overpowering. The nose opens with wild raspberry, cranberry and dried rose, followed by damp autumn leaves and white pepper. On the palate, the wine is silky, the tannins remain fine-grained and the acidity vibrant. Maturation in medium-sized barrels or used barriques lends depth without overwhelming the fragile fruit structure. After a few years in the bottle, hints of leather, truffles and a salty note appear, revealing the Alpine terroir.
Alpine cru and cool valleys
The most renowned origin remains the high plateau of Mazzon near Neumarkt. Between 350 and 450 metres, the sun falls steeply into porphyry soils, while nightly downdraughts preserve the freshness. Names such as Hofstätter and Franz Haas are considered to be grand cru names here. In nearby Eppan and Tramin, Kellerei St. Michael-Eppan, Cantina Tramin and Alois Lageder demonstrate how calcareous moraine soils deliver delicate fruit and salty tension. In Oltrepò Pavese, for example, Conte Vistarino and Ca' del Bosco rely on chalky, marly slopes for still Pinot Nero and outstanding Metodo Classico. The Aosta Valley, with its heroic steep slopes, produces mineral-rich wines, for example from Les Crêtes. High-altitude vineyards in Trentino are similarly distinctive, where Pojer e Sandri combine Burgundy elegance with Dolomite coolness. Martin Foradori Hofstätter aptly summarises the characteristics of Pinot Nero as follows: "Pinot Nero is a whisper that is more convincing than any outcry."
Table partner with finesse
Pinot Nero loves aromatic finesse instead of brute roasted flavours. It accompanies roast duck breast, venison liver with cranberries, bacon dumplings in clear broth or tagliatelle al tartufo just as convincingly as smoked char, porcini mushroom risotto or taleggio. The optimum serving temperature is between fourteen and sixteen degrees Celsius. A Burgundy goblet with a wide opening gives the fine flavours space; too cool the wine appears sinewy, too warm broad.
Elegance in a roundabout way
In the 1980s, South Tyrolean winegrowers secretly transported their first Pinot Nero barriques to France in the boot of their car in order to get hold of used barrels with the ideal toast. The Italian police initially thought this was smuggling, but allowed the cars to pass when it was explained that the luggage only contained "a little French elegance". This humorous episode shows just how much dedication was needed to achieve the quality of today. Pinot Nero in Italy proves that those seeking finesse should not shy away from detours, but will be rewarded with wines that quote Burgundy and yet sound unmistakably Alpine.
