Metodo Ancestrale (also called Pet Nat) is a natural form of fermentation in the bottle, but without the addition of a dosage. This second fermentation in the bottle stops automatically due to the natural consumption of oxygen. The wine is not shaken and then disgorged as in the Champagne process, but is usually put on sale on its lees.

Dark pink with purple reflections. On the nose, ripe raspberries with a delicate note of elderberries. On the palate, the taut acid structure combined with precise fruit components such as raspberry, cassis, sloe and a hint of citrus are convincing. The Palai area is one of the most representative areas for the production of Müller Thurgau in Italy due to its microclimatic characteristics and the influence of the Cembra and Isarco valleys. In order to preserve its varietal characteristics (aromas and natural antioxidants), the grapes are processed using the hyper-reduction technique (in the absence of oxygen) developed and patented by the company.
