Swiss precision meets Tuscan passion: since 1990, Monika and Thomas Baer-Bettschart have been realising their dream at the Antico Podere Gagliole in Castellina in Chianti. Rubiolo is the certified organic tribute to over three decades of winegrowing in one of Tuscany's most beautiful terroirs. Made exclusively from Sangiovese grapes sourced from both the historic terraces around Castellina and the famous Conca d'Oro in Panzano, this wine embodies the synthesis of two exceptional vineyards.

The grapes ripen on galestro-rich soils at altitudes of between 350 and 450 metres on south-west-facing slopes, where the centuries-old dry stone walls – a UNESCO World Heritage Site since 2019 – create a unique microclimate amongst the vines, olive trees and roses. Following temperature-controlled fermentation with indigenous yeasts and a 20-day maceration, the wine is aged for ten months, half in French barriques and half in concrete tanks, followed by three months' bottle ageing.

The result combines the mineral elegance of Castellina with the powerful fruitiness of Panzano: a luminous ruby red with a brilliant core, the wine opens with aromas of violets, geraniums and red berries. On the palate, it displays a harmonious balance between juicy cranberry fruit and velvety-soft tannins – a Chianti Classico of exceptional purity that perfectly reflects the Baer-Bettschart family's passion for Tuscany, which spans over 30 years.
