Gregory Perrucci has given Primitivo di Manduria back its dignity. When he founded the Felline winery in 1992, Primitivo was still a mass-produced commodity for tanker exports – cheap blended wine without prestige. Perrucci recognised the potential of the grape variety and began to systematically investigate the terroirs around Manduria. With his Accademia dei Racemi, founded in 1996, he became a pioneer in the valorisation of indigenous Apulian varieties. Today, Felline is considered a reference for Primitivo di Manduria – thanks to its work on different types of soil (terra rossa, white earth, black earth, sand) and its uncompromising focus on quality. This basic Primitivo comes from different plots of the 120 hectares of vineyards, which are organically farmed. Hand-picked, vinified separately according to soil type, matured for six months in French barriques – a classic interpretation of the variety.

In the 1980s, Luigi Baudana planted Chardonnay and Sauvignon Blanc on his slopes in Serralunga d'Alba – at a time when white wine had no great tradition in the Langhe. That took courage. This is precisely why the wine is now called Dragon and bears the dragon by illustrator Gianni Gallo on the label: a symbol of courage that the Vajra family incorporated into its own history after taking over the Baudana estate. Today, the Dragon is no longer a simple Bianco. Nascetta – the most fascinating indigenous white wine variety of the Langhe, rescued and cultivated by Vajra – gives the blend its unmistakable character. The "Kretzer" is South Tyrol's most traditional rosé. It is produced on calcareous clay soils between 260 and 380 metres above sea level from the autochthonous king grape variety par excellence. The name Kretzer comes from the medieval vinification process – the "Kretze", a woven wicker basket, was once used to separate must and berry skins. This historic rosé wine tradition is continued today using state-of-the-art cellar technology: The Lagrein grapes undergo traditional rosé vinification at a controlled temperature in stainless steel, where brief contact with the skins gives the wine its characteristic salmon red colour.

The name says it all: Grillo means cricket – and in Sicilian folk tales, the cricket is the fairies' horse that carries them through the night on its back. "Cavallo delle Fate" therefore – the fairy horse. A wine that takes its name seriously: light at first glance, but with an energy that carries. Grillo is one of the oldest grape varieties in Sicily, a cross between Catarratto and Zibibbo, long known primarily for Marsala. In Regaleali, it grows on the hills of Sant'Anna and Piana Case Vecchie, 480 metres above sea level, facing south-east, in deep loamy, slightly calcareous soils. Tasca deliberately plays with two harvest times: Some of the grapes are harvested earlier – for freshness and minerality – the rest later, for body and structure. No wood, no malolactic fermentation, four months of maturation on the lees in steel tanks. Cool, precise, with respect for a grape variety that needs no disguise.

Giravolta – a name with a history. This was the name of the racehorse that once galloped across the Pozzopalo stud farm and always turned round abruptly in front of the old tuff quarry. This "U-turn" gave the wine its name, but it is the terra bianca, the white earth, that characterises it. While the basic Primitivo comes from the Terra Rossa, the Giravolta grows on calcareous, white soil, created by the breaking up of limestone. The tuffy, stony composition ensures rapid water drainage, but the porous stones also store moisture for the roots.

Villa Sandi cultivates over eighty hectares of its own land in this World Heritage area – and for decades has been one of the addresses that have secured Prosecco's reputation as a serious sparkling wine. 100% Glera, hand-picked, pneumatic pressing. Prugnolo Gentile – is the name given to Sangiovese in Montepulciano. And mammolo simply means violet in Italian. Anyone who knows the aromas of this wine will understand why the Corradi-De Ferrari family uses both: 85% Prugnolo Gentile for freshness and fruit, 15% Mammolo for the floral perfume that makes this Rosso unmistakable. Boscarelli has been producing Prugnolo as Rosso di Montepulciano since 1989 – from the youngest, most fragrant vines in the Cervognano cru vineyard at 280 to 350 metres, on calcareous alluvial soil with sand, silt and clay. Col Fondo has been part of the Adami product family since the early 1900s. Initially, grandfather Abele and later father Adriano bottled the wine in spring. This then began to ferment again in the warmer months of May and June, producing what is known in Veneto as "vin col fondo". The origin of the name is easy to explain: it is due to the yeasts that settle at the bottom of the bottle after all the residual sugar has been consumed, causing the wine to develop in an exciting way over time. It always comes onto the market about a year later.

Behind the Castello di Soave, invisible to the tourists enjoying the view of the plain, lies a vineyard that epitomises the opposite of what Soave has been for decades. No mass product, no compromise. Ferra is single-varietal Garganega from volcanic gravel – of a hilltop that has belonged to the Rizzardi family since 1977 and has been bottled as a single vineyard since 2014. What makes this Soave stand out from the standard, pleasing wines: Garganega gets the full stage here. Fermentation in glazed cement tanks preserves the mineral precision, while six months in large foudres give the wine texture, depth and richness that go far beyond what is expected from the appellation.

While the Rive wines from Andreola each bring a single vineyard to the glass, the Dirupo tells a different story: that of the entire denominazione. For this brut, Stefano Pola draws on the privilege of a vineyard network that extends across all 15 municipalities of the Valdobbiadene DOCG – from gentle slopes at 200 metres to extreme steep slopes at 500 metres, on limestone marls, sandstones, conglomerates and deep clay soils. No other wine of the house represents the territory so completely. The choice of grape varieties emphasises this approach: 90% Glera, supplemented by Bianchetta and Perera – two indigenous varieties of the hills, which have long since disappeared from standard Prosecco, but here they quietly contribute to the aromatic depth.

Zisola is the Tuscan dream of the Mazzei family in the south of Sicily. The winery's bestseller is made from 100% Nero d'Avola from traditional Alberello vines near Noto, where chalky soils and proximity to the sea balance the natural exuberance of this indigenous grape variety with freshness and elegance. The Marchesi Mazzei, one of Italy's most historic winegrowing families with over 600 years of tradition, have been continuing their Sicilian project since 2003. 24 hectares of vineyards surround the historic bagli of the 50-hectare tenuta with a view of the baroque UNESCO World Heritage Site of Noto. Hand-picked and fermented for 14-16 days at 26-28°C, the wine matures for 10 months in French oak barrels (33% new).

A red wine with character – irresistible in its depth and yet with supple elegance. Noras comes from 90% Cannonau (Grenache) and 10% Carignano and is harvested from old vines rooted in sandy-granitic soils deep in the Sulcis terroir. After late manual harvesting, the must ferments at a controlled 22-24 °C for 12 days in stainless steel tanks, accompanied by regular pumping over to optimise extraction. Malolactic fermentation takes place early and spontaneously, followed by around six months of maturation in used French barriques. Before it is released for sale, Noras matures for a further six months in the bottle – a maturation and ageing process that gives it depth and elegance.
