Francesco Illy came to Montalcino as a nature photographer – and stayed. What began as a personal project in 1997 is now one of the most exciting biodynamic wineries in the denomination. Demeter-certified, run by a young team, with a philosophy that does not see perfection and joie de vivre as a contradiction. The "Cielo d'Ulisse" – the sky of Ulysses – comes from the western parcels of Montalcino, near Camigliano. Clayey-sandy soils with Galestro influence, evening sun, cool forest climate: a combination that gives Sangiovese freshness and elegance rather than power. Fermentation takes place spontaneously, ageing lasts three years in large used Slavonian oak barrels.

Pelagrilli is the origin – the name of the hillside north-east of Montalcino, which Siro Pacenti acquired in 1970, and at the same time the name of the flagship Brunello that his son Giancarlo has been vinifying since 1988. On sandy-loamy soils, channelling the cooling westerly winds, between 25 and 40-year-old vines, a Brunello is created here that combines Giancarlo's mathematical precision and his Bordeaux experience: fermentation in steel at a controlled temperature, 24 months in small French barriques – not for flavour, but for purity. 2020 was a warm, dry summer – sangiovese under pressure, which, where well managed, turned into concentrated, supple fruit. The northern slope of Pelagrilli absorbed the heat better than the southern sites; the harvest began in mid-September under good conditions.

In the past, the northern slope of Montalcino was not planted with vines, but was cultivated with cereals, olives and cherries. In this area influenced by the Apennines, the seasons are more pronounced, continental and the north wind significantly lowers the temperature in winter. It is therefore the coldest Brunello region at this time of year, but also the wettest. This northern slope is a gentle hill: a characteristic that is more reminiscent of the Crete Senesi area, right next door, than the two stiffer, steeper and warmer southern slopes of Montalcino.

Caparzo bottled the first single-vineyard Brunello ever, years before the word "cru" arrived in Tuscany. The name is a reminder of the tenants who once lived here, in the shadow of Palazzo Montosoli. Today, Sangiovese of rare precision grows in its place. The altitude cools what would be hot elsewhere; the slate gives what heavy soils deny: finesse instead of vigour, elegance instead of opulence.

For Giancarlo Pacenti and his northern vineyards of Pelagrilli, this meant ideal conditions for a Brunello of classic elegance.

Anyone who knows the south-east of Montalcino knows: no sea breezes, no proximity to the lake, no soft light. Monte Amiata reigns supreme here – the extinct volcano in the background, which breaks the winds, intensifies the temperature fluctuations between day and night and gives the soil its unmistakable character: Galestro slate, gritty, barren, rich in minerals. Oaks and holm oaks stand between the vines, where elsewhere cypresses or olive trees characterise the landscape. Poggio al Granchio – the "crab hill" – lies at 380 to 450 metres, south-east exposure, the historical heart of the appellation. Val di Suga acquired this vineyard in 1999, thus completing a triangle that no other producer in Montalcino possesses. The grapes are harvested by hand in crates, in micro-zones, and the optical selection is uncompromising. In the cellar: fermentation for ten to fourteen days, followed by intensive post-fermentation maceration at 30 degrees for twenty to twenty-five days – this is where extract, density and colour are created. 2021 was particularly favourable for the Poggio al Granchio. The influence of Monte Amiata mitigated the dryness of the summer, while the long autumn ensured even ripeness.

Montalcino is not a homogeneous terroir – it is a mosaic of microclimates, altitudes and soil formations that produces completely different interpretations of Sangiovese in a very small area. San Polo is located in the south-east, on the hill of Podernovi, where the extinct volcano Monte Amiata shields the vineyards from the hot Scirocco winds and has left behind pyroclastic deposits that give the Sangiovese a mineral signature that few other sites possess. At 450 metres above sea level, the estate belongs to the cooler zones of the appellation – large temperature amplitudes between day and night promote flavour and acidity structure, while the dryness of the summer concentrates the berries without stressing them.

A lake next to the vineyard – this is not a metaphor, this is geography. Vigna del Lago is located in the north-west of Montalcino, at 280 metres above sea level, and the small lake that gives the vineyard its name softens the otherwise continental climate of this exposure: harsh winters, very hot summers, pronounced day-night temperature fluctuations. The soil is clay – heavy, watery and cool. A combination that forces the Sangiovese Grosso to take deep root, mature slowly and develop elegance rather than mass. The vine material is the densest in the entire Val di Suga portfolio: 7,500 vines per hectare – a figure reminiscent of the planting densities in Burgundy. Double spur cordon, careful foliage management, yield reduction through thinning out. Hand-picking into crates takes place exclusively in the early hours of the morning. In the cellar: fermentation for eight to twelve days, maceration for a further two to three weeks. Maturation in 40-hectolitre Slavonian oak barrels for 24 months, then concrete, then bottle. No barrique, no wood pressure – pure site. 2021 was a lucky vintage for Vigna del Lago. The late frost in April reduced the harvest – and concentrated the best. No extreme summer, no stress.

The 2019 Brunello di Montalcino from San Felice shows rich black cherries and plums with sweet spices, cedar shavings and cool mint. The texture is silky, with a polished blend of red and black berries interspersed with savoury minerals. Medium-bodied and youthfully compact, it also shows a taste of what's to come as florals build over notes of liquorice and clove. A web of fine tannins envelop everything they touch with youthful composure as the wine tapers off with violet reflections. Some vintages need no introduction. 2019 is one of them. Mild winter, soils well watered. Cool spring, vegetation two weeks behind the calendar – a blessing in disguise. Then a summer with moderate warmth around 25 degrees, without the scorching extremes that lignify tannins and burn fruit. And a September that brought everything together: slowly, evenly, precisely. Montalcino breathed a sigh of relief. Roberto Giannelli and Paolo Caciorgna had it easy – and difficult at the same time. Easy, because the raw material was impeccable. Difficult because you have to make a wine of the century from a vintage of the century. The answer: no over-commitment. Steel, concrete, large barrels. Patience instead of intervention and respect instead of actionism.
