The Praesulis Pinot Nero is the latest addition to the Gump Hof wine family – a challenge that Markus Prackwieser has only been taking on for a few years. Because Pinot Noir in the cool altitudes of the southern Eisack Valley is a venture that requires patience and courage. The grapes grow at 550 metres above sea level on calcareous moraine soils over quartz porphyry – those steep slopes that benefit from Mediterranean warmth during the day but are ventilated at night by the cool downdraughts from the Dolomites. A week of cold maceration is followed by two weeks of fermentation and maceration on the skins. The wine then matures for twelve months in barriques with malolactic fermentation.

The basis for the flavoured grappa liqueur is Stravecchia Diciotto Lune, made from a selection of the best marcs from Trentino, aged for at least 18 (diciotto) months in small barrels of fine wood. Pas Dosé - here the normally added dosage is omitted, which after disgorgement determines not only the sugar content but also the style of the sparkling wine fermented in the bottle. Instead, the volume naturally lost during the years of bottle ageing is replaced by other wines of the house, which, however, do not further influence the sugar content. Thus we have here an extremely dry sparkling wine, which, however, in no way lacks volume, character and finely modelled taste nuances. Straw yellow in the glass, bright fruits, herbs, citrus and wild flowers on the nose. In the drink, then, an impressively fine perlage and texture that reveals layers of spices, dried fruits and slightly salty components. Mason. This is what Manincor calls the Mazzon vineyard to avoid confusion with the larger vineyard of the same name above Neumarkt. Four hectares of Pinot Nero are rooted here on a south-facing high plateau between 400 and 450 metres above sea level, spoilt by the sun and constantly exposed to the wind. This breeze is crucial: the narrow-berried Pinot grapes tend to store moisture between the berries – without air circulation, there is a risk of rot. The soil is sandy loam, interspersed with a variety of rocks: dolomite, porphyry, gneiss and granite, from particles the size of a grain of rice to stones the size of a fist. Each parcel is vinified separately. Mash fermentation takes place spontaneously in open wooden vats with wild yeasts. Maceration lasts two weeks and the cap is gently punched down once a day. The 16-month maturation in barriques (20% new wood) on the fine lees refines the flavours and structure without overpowering the fruit.

Named after Cassian, the son of Count Michael Goëss-Enzenberg, who was born in 1996, the same year that Manincor opened its own winery. A name that stands for new beginnings, for the future, for the next generation. The cuvée combines six international grape varieties from the estate's best red wine sites: Manincor, Seehof and Panholzerhof, between 250 and 280 metres above sea level. Exposed to the south-east with a view of the lake, the vines are rooted in strong sandy loam soils interspersed with limestone gravel and glacial rock deposits – these plots are among the warmest sites in South Tyrol. Each grape variety is vinified separately. Mash fermentation takes place spontaneously in wooden vats with wild yeasts. Maceration lasts between 10 and 20 days – depending on the variety and the desired tannin structure. Finesse and elegance are the top priorities, not strength for strength's sake. The 16-month maturation in barriques (one third new wood) refines the structure without dominating the fruit. Blending only takes place shortly before bottling – the art of composition, in which character and individuality merge with solemnity and elegance.

In the gentle hills above Trento, where the Dolomites majestically watch over the Adige Valley, lies a vineyard called Fontanasanta, the "Holy Spring". Here, at an altitude of 400 metres and on calcareous clay soils, Elisabetta Foradori preserves one of Trentino's most precious treasures: the Nosiola, an ancient indigenous grape variety that was once at the heart of the region's wine culture but is now threatened with extinction. Only three hectares are dedicated to this rare variety. Nosiola, whose name is derived from the dialect word "nosela" for hazelnut, requires patience and sensitivity. In wet Alpine years, it can be capricious, but under Elisabetta's biodynamic guidance, it unfolds its full aromatic complexity. The vinification process follows the revolutionary Foradori philosophy: after hand-picking, the de-stemmed berries are placed in Spanish tinajas, where they ferment on the skins for eight months – a process that gives the Nosiola its characteristic golden yellow colour and structural depth. A short maturation in used acacia barrels rounds off the profile.

Innovation often means leaving old paths and exploring completely new ones. Fuoripista – which means "off the beaten track" – is Elisabetta Foradori's most radical response to conventional Pinot Grigio ideas. What began in 2016 as an experiment with biodynamic winemaker Marco Devigili has evolved into a redefinition of what a white wine can be. Just two hectares on the Campo Rotaliano provide the grapes for this extraordinary project. On the typical alluvial soils of gravel and sand, pergola-trained Pinot Grigio vines thrive, whose fruit takes an unusual path. After being harvested by hand, the de-stemmed berries go straight into Spanish tinajas – the egg-shaped clay amphorae that Elisabetta favours for her revolutionary vinification. The impossible happens here: The grapes remain in contact with their skins for eight months, a process that gives the wine its amber-golden colour and structural complexity.

Less than 1,000 bottles of this Gewürztraminer Riserva are produced each year. The grapes are harvested at the end of December - just when they are finely coated with the noble fungus Botrytis cinerea.
