Bertone – almost two hectares, planted in 2001 with Burgundian clones for great finesse – on the slope opposite the Cru Pernice. 400 metres, south to south-west facing, directly above Villa Fornace, the family's historic residence. Calcareous, clayey soil with sand and silt, a dry microclimate that accelerates ripening and concentrates the grapes. Small like a Burgundian plot, consistent like a family decision. 2021 was a year of balance at Oltrepò Pavese: a long, cool spring, a dry and structured summer. Fermentation in conical wooden vats, malolactic fermentation in barriques in spring, then twelve months in carefully selected French barrels of various origins – followed by at least one year in the bottle.

In 2000, buyers were at the door. The Fucci family had almost given up on the six hectares of vineyards that their grandfather Generoso had acquired at the foot of Monte Vulture in the 1960s – the parents teachers, the children on their way into the world. At the last moment, daughter Elena decided otherwise. Not out of calculation, but out of a feeling that she herself later described as "a stab in the heart": she could not accept that a foreign name would do something great with the oldest vines of the Vulture while she watched.

Düsseldorf, ProWein, 1997: Two men meet between the trade fair stands and tasting zones: Stefano Inama, who has given Garganega white wines a new dignity in Soave, and Sabatino Di Properzio, who is in the process of leading Fattoria La Valentina out of the shadow of Abruzzese mass production. What begins as an industry skirmish turns into a friendship – and an idea that Inama formulates with a joke: "Montepulciano is the Barolo of the south. We should do something together." Sabatino's answer, without hesitation: "Facciamo." Three years later, the two buy a vineyard in San Valentino in Abruzzo Citeriore at a forced sale that nobody wants. 4.2 hectares at an altitude of 350 metres, completely south-facing, at the foot of the Majella National Park – and planted with an ancient Montepulciano clone that was abandoned long ago due to its low yields. The grapes form two-lobed panicles reminiscent of the silhouette of the African continent: the "Clone Africa". Small-berried, thick-skinned, with a concentration that more modern clones cannot match. The vines, now over fifty years old, are rooted in loamy mid-mountain soil under the traditional Abruzzese pergola – and yield just 45 quintals per hectare.

Neromàccarj is the broodingwine from Gulfi's high-quality Nero d'Avola range. The vines are rooted in the single vineyard Màccari, a barren hilly landscape near Pachino, where calcareous clay, volcanic rock and sea breezes create a powerful, yet always balanced microclimate. The vines are ungrafted, some are over 50 years old and yields are low. The harvest by hand and the wine is matured in the traditional way: a long maceration period followed by two years of ageing in used barriques and large wooden barrels. All this with organic care – and a firm determination to bring the best of the variety into the glass.

There are wines that define an appellation. And there are wines that show where an appellation can go. The Gran Selezione from Lilliano belongs to the second category. When the Chianti Classico producers created the new top of the quality pyramid in 2010, there was a great deal of scepticism: is there really a need for another category above the Riserva? Lilliano answered this question with deeds rather than words. While other estates defined their Gran Selezione with an international use of wood and concentrated opulence, Lilliano remained true to its line: tradition, terroir, typicity. The Gran Selezione comes exclusively from the two best single vineyards of the Tenuta – piagge and Casina, both situated at an altitude of around 300 metres, both characterised by the calcareous Alberese soils that make Castellina in Chianti one of the most mineral terroirs in the entire appellation. Piagge is south-facing, fully exposed to the sun, and produces Sangiovese of concentration and vigour. Casina, on the other hand, exposed to the east-south-east, produces Colorino and Sangiovese of elegance and aromatic finesse. Together they produce a cuvée of 90% Sangiovese and 5% each of Colorino and Merlot – an assemblage that seeks perfection within the rules rather than innovation.

On the northern slopes of Montalcino, where the cool forest breezes of Monte Amiata meet the warming influences of the Tyrrhenian Sea, lies one of Tuscany's best-kept secrets. Since 1953, when Bramante Abbruzzese returned to the land of his ancestors, Valdicava has been producing wines of an intensity and finesse that few estates can match. Today, his grandson Vincenzo continues the legacy. A man who prefers to be out among the vines rather than in the office and whose demand for perfection is legendary. The Rosso di Montalcino 2022 is made from the same select Sangiovese Grosso grapes that are also used for the world-famous Brunelli. At an altitude of 300 metres, in the coolest areas of the appellation, the vines thrive in a mixture of clay, sand and limestone – soils that produce fruit of exceptional intensity. Since the end of the 1980s, Vincenzo has completely dispensed with chemicals and practised biodynamic cultivation, allowing each grape to express the pure essence of its terroir.

Only one wine ever bears the name of the estate – and there is a reason for this. The Montecucco Rosso Riserva is the centrepiece of production: the wine that most directly expresses the philosophy of the estate. In the glass, this is convincing every year anew. 80% Sangiovese, 10% Ciliegiolo, 10% Cabernet Sauvignon – grapes from vineyards on sandstone, marl and clay at 300 metres. This name is the programme for a Teroldego that revolutionises conventional ideas of this powerful grape variety. Just one kilometre from the famous Morei vineyard as the crow flies, but completely different in character, is the 2.5-hectare Sgarzon vineyard. Here, the Noce River has deposited sandy sediments over thousands of years, creating a cooler, more open microzone. While other Teroldego vineyards are already harvesting their grapes, the Sgarzon berries ripen a week longer – a decisive difference that gives this wine its exceptional finesse.

Between light and shade, between strength and elegance, sometimes only a few hundred metres decide the character of a wine. Less than ten minutes' walk from Sgarzon, but geologically in a different world, lies Morei, "the dark one" in the old Trentino dialect. Here, on the warmer, rockier terrain of Campo Rotaliano, Elisabetta Foradori has been writing another exciting chapter in the Teroldego story since 1984. The name says it all: where Sgarzon embodies youthful freshness, Morei reveals the deep, mineral soul of this extraordinary grape variety. The 2.5-hectare plot rests on the ancient riverbed of the Noce, where thousands of years of erosion have left behind a mosaic of pebbles, sand and dolomite rock. This stony matrix stores the heat of the dolomite sun and releases it to the vines at night – a natural heat reservoir that gives Teroldego its characteristic depth and concentration.

The "yellow of Arles" refers to the golden colour that Greco di Tufo takes on when it is fully ripe, but behind this lies Luigi Moio's deep connection to classical education and his vision of a wine that translates the ancient greatness of Greco into modern perfection. Here, where the Greeks recognised two and a half millennia ago that this grape variety finds its highest perfection on the tufa soils of Campania, Moio is writing a new chapter in an ancient success story. The vineyards of Lapio, located in the heart of the Greco di Tufo zone, offer ideal conditions for this demanding grape variety. Here, at an altitude of 400 to 500 metres, the roots of the old Greco vines penetrate the characteristic tufa layers – the volcanic deposits that gave the appellation its name and give the wine its unmistakable mineral character. The extreme temperature fluctuations between day and night, intensified by the altitude, create a beautiful tension between strength and elegance.

Like a precious legacy, this wine is steeped in the history of the Serristori patrician family, who acquired the Donoratico estate in 1512 and built the magnificent villa in 1660. From the shadow of these historic walls springs a wine that embodies the soul of the Tuscan Maremma – where the salty murmur of the Tyrrhenian Sea meets the warm hills of Bolgheri. In the vineyards of Argentiera – the estate within the Bolgheri DOC that lies closest to the coast and is also the highest in elevation – the grapes ripen amidst Mediterranean scrub and the endless blue of the archipelago. Here, on just twelve hectares of the Villa Donoratico vineyard, Cabernet Sauvignon and Merlot take root in sandy and rocky soils, whilst the subsoil is permeated by marine flysch rock – a geological memory of seas long past.

Laura Brunelli's Rosso is a blend of Sangiovese grapes from Podernovone – 500 metres above sea level on the south-eastern slope of Montalcino with south-western exposure – and Canalicchio on the north side of the village. The vines for the first vineyard were planted in 1998, those for the second in 1989. "Our Rosso is made from the same grapes as the Brunello," says Laura Brunelli. The wine is traditionally aged for a year in large oak barrels. It is extremely fresh every year and not without complexity. The aromas of redcurrants, wild strawberries, black pepper and juniper are followed by a bright bouquet of red fruits on the medium-bodied palate. It has velvety tannins and a refreshing, integrated acidity. A really great interpretation of the terroir and, as every year, a little Brunello. SUPERIORE.DE

Rosso del Conte was Sicily's first answer to the question of whether the island could produce wines of international standing and longevity. Conte Giuseppe posed this question in 1970 – and the answer has been contained in every bottle produced on the high hills of Tenuta Regaleali ever since. The grapes – Nero d'Avola, Perricone and a small proportion of other varieties grown on the estate – ripen at an altitude of 480 metres, facing south-southeast, on loamy-sandy, slightly calcareous soil, trained using the Alberello system. Hand-harvested, traditionally fermented in stainless steel at a controlled temperature, 20 days on the skins, 18 months in new French barriques.
