The Rizzardi family has been cultivating the hills of Pojega in the heart of Negrar since 1649. What began as a vineyard became, over generations, a place where landscape and wine become inseparable – the famous Giardino, the Teatro di Verzura, the villa itself. From the south-facing plots of this historic cru comes an Amarone Riserva that is only produced in vintages deemed worthy of the family. However, the fact that 2020 is one of them is anything but self-evident. Because 2020 was a testing year. Sunny spring, heavy summer rains, heat and coolness in constant alternation – valpolicella demanded experience and sensitivity. The old Corvinone vines in Pojega in particular, late-ripening and deeply rooted in the chalky clay, produced grapes of unusual concentration from the climatic contradiction. On its centenary, the Consorzio spoke of wines with "strong personality and remarkable balance" – at Villa Rizzardi, this hits the nail on the head.

In the quiet hollow above Söll, where the Gewürztraminer vines escape the warm south wind from Lake Garda, a mystery of rare beauty takes place every year. Here, protected in this natural arena between 400 and 500 metres above sea level, the eagerly awaited Botrytis cinerea – the noble rot – finds its perfect conditions. While other vineyards have long since been emptied, the Terminum grapes remain on the vine until the first months of winter. December is their time of perfection, when they have become golden treasure troves of pure flavour, marked and concentrated by botrytis. Each berry is selected individually, each bearing the promise of exceptional complexity. Twelve hours of maceration, gentle pressing at a maximum of 1.8 bar, then the must is transferred to French barriques. Fermentation begins there, which lasts six to nine months. A further seven to ten months of ageing in wood, followed by at least three months of bottle ageing complete the deceleration process.

Acininobili Bianco Passito is a stunning interpretation of the indigenous Vespaiola grape, offering impressive depth, complexity and personality. Basically, the same Vespaiola grapes are used here that are used for Torcolato. The Romanesque Pieve di San Marcellino was built in the year 1000. It still stands today – in the middle of the vineyards of Rocca di Montegrossi, seven kilometres south of Gaiole, at the southern tip of the Chianti Classico. The vineyard bears its name. And the vines that surround it are older than most of the appellations that appear on labels today. Marco Ricasoli-Firidolfi is a descendant of Baron Bettino Ricasoli – the "Iron Baron" who defined the formula for Chianti Classico in the 19th century. Not as a marketing idea, but as a genetic link to this soil. The vineyard has been certified organic since 2010 and has been planted with Pugnitello alongside Sangiovese since 2006 – an autochthonous Tuscan grape variety that was almost extinct in the 1980s. Pugnitello deepens the colour, thickens the structure and sharpens the profile of the Sangiovese grape. Hand-picked, separate fermentation of both varieties on wild yeasts in upright wooden tanks, 24 months in Allier barriques and tonneau, bottled unfiltered. Only produced in outstanding vintages – the 2020 is one of them.

Contrada Rampante is one of the highest and most renowned vineyards on the north-east slope of Mount Etna. At around 1,000 metres above sea level, Nerello Mascalese thrives here on volcanic sandy soils with a high lava content – a terroir of rare expressiveness that combines cool nights, long vegetation cycles and extreme slopes. The vines are over 100 years old – partly ungrafted – produce small-berried, concentrated grapes. After fermentation in cement, the wine matures for around 12 months in large wooden barrels and then for several months in the bottle.

More than two centuries ago, Elisa Bonaparte Baciocchi, Princess of Piombino, had something planted on the ferruginous hills above Suvereto that would change this landscape forever: Merlot, Cabernet Sauvignon – grape varieties from the Bordelais. The Maremma, still rough and wild at the time, became the testing ground for a woman with a feel for terroir. Francesca Moretti, daughter of Bellavista founder Vittorio, deliberately picks up on this thread with Petra. The name says it all. Petra. Stone. Consistency. 60% Cabernet Sauvignon, 30% Merlot, 10% Cabernet Franc, hand-picked from the Vigneto di Petra in San Lorenzo Alto. Limestone soils with the right balance of clay and skeleton, 10 to 15 per cent slope. Fermentation with natural yeasts in large oak vats, ageing for at least 15 months in French barriques – 25 per cent new – followed by at least 17 months in the bottle. The cellar, a structure by Mario Botta, works with gravity: no pumping, no stress.

High above Sambuca Val di Pesa, just three kilometres south of the famous Tenuta Tignanello, rises the venerable Abbey of San Michele Arcangelo – a bastion of faith since the 10th century, where Giovanni Gualberto, the founder of the Vallombrosan order, once lived and died. Here, where wine of exceptional quality was already appreciated around the year 1000, only the finest Sangiovese grapes thrive on calcareous soils with a clay content at an altitude of 300 metres. The historical importance of this place is documented in hundreds of volumes in the Florentine state archives – centuries of Sangiovese cultivation and rural life, preserved for eternity.

Montosoli. Anyone who knows the name of this hill knows that this is the heart of Montalcino. And right in the centre, on five hectares of Galestro slate, is Vigna La Casa – the vineyard that made history in 1977. Caparzo bottled the first single-vineyard Brunello ever, years before the word "cru" arrived in Tuscany. The name is a reminder of the tenants who once lived here, in the shadow of Palazzo Montosoli. Today, Sangiovese of rare precision grows in its place. The altitude cools what would be hot elsewhere; the slate gives what heavy soils deny: finesse instead of vigour, elegance instead of opulence.

Pieluni is Illuminati's flagship wine - a single-varietal Montepulciano made from selected grapes from old vines in the highest parcels of the Colline Teramane. The exceptional 2017 vintage was characterised by heat, drought and low yields, but produced concentrated, healthy berries with a dense tannin structure. Fermentation was followed by careful ageing in new and used barriques for 24 months, followed by long bottle ageing.
