Nizza is a small municipality in Monferrato that has given Barbera its highest level. Only elevated to an independent DOCG in 2019, Nizza epitomises what Barbera can achieve when the terroir and craftsmanship are right: Depth, structure, length. Soils with fine veins of lime and sand, which inscribe the flavour and freshness of the variety into the fruit. Prunotto vinifies the Bansella with six days of maceration at 28°C, completing the malolactic before winter – followed by twelve months in second and third passage barriques. Wood as a silent reserve, not as a commentary.

The Lageder family has only been cultivating Lagrein on the geologically fascinating Margreider Schuttkegel for around ten years – thus opening up a completely new terroir for this indigenous grape variety. Conus, Latin for cone, refers to this unusual formation of dolomite limestone and gravelly sand between 230 and 320 metres. The biodynamic Demeter cultivation of the site promotes vines of particular stability and depth. After spontaneous fermentation, the Lagrein matures for twelve months, partly in stainless steel and partly in small wooden barrels.

The Riserva represents the roots of Fattoria Le Pupille – it is the very first wine produced and marketed by the winery. Originally launched in 1978 as "Rosso di Pereta", it became the foundation of a terroir with the establishment of the Morellino di Scansano discipline, which Elisabetta Geppetti led to international recognition with passion and vision. As the first woman to head the Consorzio Morellino di Scansano, she not only shaped the denomination, but also the entire Maremma wine culture. Sangiovese (90%) with Cabernet Sauvignon (10%) from the La Carla, Maiano, Bozzino and Vecchie Pupille vineyards at an altitude of 50 to 250 metres. The soils vary from clayey-silty to sandy-loamy structures with a limestone marl component. After 25 to 30 days of maceration at 26 degrees, the wine matures for twelve months in Slavonian oak barrels with a capacity of 20 to 40 hectolitres.

Pinot Noir is a grape variety that seeks altitude. It finds it in South Tyrol – and Tiefenbrunner has selected the highest and coolest Pinot Noir sites in the entire portfolio for the Turmhof: Völser Aicha at 600 to 980 metres, on clayey sandy soil over grey porphyry, exposed to the south. Graun at 700 to 940 metres, calcareous-loamy dolomite soil. Penon, Hofstatt and Rain at 400 to 650 metres, calcareous dolomite soils. Mazon, Pinzon and Glen at 400 to 550 metres, sandy loam soil on dolomite rock. Four soil profiles, one wine. These altitudes require Pinot Noir to do what it does best: ripen slowly, build up structure, intensify flavours. Ageing in barriques and large wooden barrels gives the wine depth and elegance.

A tribute to the landscape that supports and characterises this estate, long before a Renzo Piano wine cellar was dug into the rock here. The wine itself is the second label of Rocca di Frassinello – and what Oenologist Alessandro Cellai could call the heart of the estate: not the grand gesture, not the introduction, but the substance. Sangioveto, Cabernet Sauvignon, Merlot – the same triad as in the entire estate, the same philosophy of the link between Tuscany and Bordeaux. But this is where the wood comes in for the first time. Twelve months in partly new barriques, then nine months in the bottle: patience as a method.

The Vigna Scot, with its east-north-east exposure, benefits from the same chalky, clayey geology that gives the great Baroli their structure. The grapes undergo traditional vinification with indigenous yeasts and short 3-4 day maceration, followed by six months in 50-hectolitre Slavonian oak barrels and a further six months in concrete tanks. Anyone who knows Amarone knows it from the history of Recioto. According to tradition, Italy's most famous red wine was created by chance: a Recioto that was fermented too long in the barrel – until none of the sweetness remained. What began as a mistake became a legend. But the Recioto itself, the older of the two, was almost forgotten. Wrongly so. In Valpolicella Classico, the upper, wide-open wings of the grape panicles are called "Recie" – ears. It is these wings that hang the highest, are most exposed to the sun and ripen the most. They are carefully selected for the Recioto and harvested by hand – at the end of September, when the season has reached its peak in the hills of Marano di Valpolicella on calcareous Eocene soils between 200 and 350 metres.

Castello di Semivicoli – once the summer residence of Sicilian nobles, later a military hospital, then a derelict ruin – was purchased by Gianni Masciarelli as a gift for his wife and, after years of restoration work, was transformed into one of the most beautiful wine resorts in Abruzzo. The Pecorino vines that now surround the historic building are rooted at an altitude of 380 metres in the calcareous soils of the Provincia Chieti, which have always been prized for their mineral complexity. Here, where the maritime influences of the Adriatic meet the continental mountain climate, white wines of characteristic freshness and distinct territoriality are produced.

In the southernmost tip of the Bolgheri appellation, where the vines almost touch the sea and rows of pine trees stand guard over the landscape, lies Tenuta Le Colonne – the winery with the vineyards closest to the sea in the entire denomination. Under the leadership of Alejandro Bulgheroni, organically certified wines of impressive clarity have been produced here since 2016. Originating from vineyards at an altitude of 50 metres with a south-westerly exposure, the vines are rooted in sandy alluvial soils with skeleton-rich inclusions. Spontaneous fermentation in truncated cone-shaped cement tanks with indigenous yeasts for 13 days, followed by twelve months of ageing in large, untoasted barrels, gives this wine its characteristic elegance.

In 1987, there were still 0.5 hectares of Timorasso in the whole of Piedmont. The grape variety, once widespread in the hills south-east of Turin, had almost disappeared due to phylloxera, structural change and lack of interest. Walter Massa rescued it – and brought it back into the dialogue. Giorgio Rivetti from La Spinetta, whose eye for exceptional terroirs has made his company great, recognised the potential and planted in Montemarzino, Montegioco and Monleale. Derthona – the ancient Roman name for Tortona, the capital of these hills – became the name of the wine. 100% Timorasso, south-west and south-east facing vineyards, organic cultivation. Destemming, gentle pressing, fermentation in temperature-controlled small stainless steel tanks. Then seven months on the fine lees – no malolactic fermentation, the acidity remains naturally lively. Four months in the bottle before release.

"Cladrecis" is an elegant interpretation of Chardonnay from the far north-east of Italy – full of character, harmonious and impressively balanced. The grapes come from a small parcel in the eponymous district of the municipality of Prepotto, whose chalky soils and cool microclimate offer ideal conditions for the finesse typical of the grape variety. Maturation in wooden barrels and on the fine lees gives the wine a subtle creaminess, fine roasted flavours and a hint of vanilla without masking the freshness.

The Riviera Ligure di Ponente is not an easy landscape. There is little space between the sea and the Alps – the vineyards climb up terraces of dry stone walls, the slopes are steep, the paths winding, the harvest almost exclusively by hand. It was in this solitude that Riccardo Bruna began bottling his family's Pigato in 1970 – a bold decision at the time for a grape variety that hardly anyone knew. Majé is Bruna's most accessible Pigato: from the iron-rich, argillaceous soils around Ortovero and Ranzo, 200 to 300 metres above sea level, just 20 kilometres from the coast. Gentle pressing, fermentation and ageing in steel – the result is the character of this terroir in its most direct form.

Light, bright straw yellow with a subtle greenish shimmer – is how this exceptional white wine appears in the glass. The grapes come 100% from Nascetta, probably the only autochthonous white wine variety in the Langhe, which has been revitalised in Novello far beyond eye level – as a true expression of the diversity of regional grape varieties. The wine is matured in equal parts in stainless steel tanks and Slavonian 15-litre oak barrels – precisely balanced to combine freshness with an enveloping structure.
