Luigi Veronelli was regarded as Italy’s most influential wine critic of the 20th century. When Giuseppe Russo talks about his rosato, his eyes light up with the same intensity as the powder-pink glow that settles over the Contrada San Lorenzo in the early days of October. Here, where eighty-year-old Nerello Mascalese vines are rooted in volcanic soil at an altitude of 700 metres, one of Italy's most elegant rosés is created – born from the perfect balance between timing and technique. The magic begins with the early manual harvest, when the grapes have that crystalline freshness that only the cool Etna nights can give. Giuseppe uses a traditional vertical press in which the whole grapes are gently pressed for five hours – long enough to extract the delicate colour, short enough to preserve the mineral elegance. No maceration on the skins, no artificial intervention: just the natural connection between grape and volcanic terroir. After spontaneous fermentation with indigenous yeasts, the wine matures for six months in stainless steel, where it develops its characteristic finesse.

In 1886, Carlo Campagnola founded his winery in the Marano Valley, in the heart of Valpolicella Classico. In 1907, he won the first gold medal for the best Recioto at the Verona Wine Fair – since then, the family, now in its fifth generation, has continued what began as a small farm. The vineyards for this Amarone are located on calcareous slopes between 200 and 350 metres above sea level, where Corvina, Corvinone and Rondinella are harvested by hand at the end of September. The traditional appassimento drying process takes around 100 days until the grapes have lost 35–40% of their weight. Gentle pressing in December, 30 days of maceration, then ageing: 60% matures for 24 months in large Slavonian oak barrels, 40% for 18 months in new Allier oak barriques.

With the name Shardana, Cantina Santadi builds a bridge from the past to the present. The wine symbolises the island's ancient, proud identity: unshakeable, powerful, full of character. It is no coincidence that the Carignano – a grape variety with deep roots in the south of the island – takes centre stage here. Like the Shardana itself, this wine defies time and fashion, remains true to itself and tells a story of origin, resistance and pride.

A wine like a Sardinian epic: Pentima bears the name of its place of origin, a tiny spot in the Surrau Valley, and also the soul of past generations. The 2021 vintage had long periods of sunshine with cool sea nights – ripening was therefore intense but never overheated. The grapes were harvested late and, as always, selectively, allowing them to ripen fully in terms of structure and flavour density. A vintage that allowed for both stature and finesse and significantly shaped the complexity of this great Riserva. Fermentation took place in large Slavonian oak barrels, followed by 18 months of ageing.

Two names characterise this Riserva: Il Corno and Poggio Selvale. The Sangiovese grapes from which Castello di Radda creates its classic Riserva style come from these two top vineyards, situated between 350 and 450 metres above sea level. The clayey-calcareous soils with their high proportion of Galestro and Alberese – the characteristic limestone slate of the region – give the wine mineral depth and structural complexity. In this coolest zone of the Chianti Classico, where dense forests surround the vineyards and the temperature fluctuations between day and night are particularly pronounced, the Sangiovese reveals its most elegant side. After manual harvesting, the grapes are destemmed and fermented in 50-hectolitre stainless steel tanks. Maceration on the skins lasts three to four weeks – a luxury that only fully ripe grapes from top vineyards allow. Malolactic fermentation takes place in wood before the wine begins its 20-month maturation: in French second and third passage tonneaux and in 20-hectolitre Slavonian oak barrels. A nine-month bottle maturation completes the development.

The name Manna evokes biblical associations, but the true story is even more beautiful: Franz Haas dedicated this extraordinary wine to his wife Maria Luisa Manna in 1995 – a token of love in bottle form that unites the philosophy of the winery in a single cuvée. What began as an assemblage of Riesling, Chardonnay, Gewürztraminer and Sauvignon Blanc was expanded to include Kerner from 2013 onwards – five grape varieties, five personalities that merge into a harmonious symbiosis. The vineyards are located between 350 and 800 metres above sea level in a south-westerly direction on geologically highly diverse soils: dolomite, porphyry, sand and marl give each plot its own character. The grapes ripen at different times and are harvested and vinified separately – chardonnay and Sauvignon Blanc ferment in barriques, while Riesling, Gewürztraminer and Kerner ferment in stainless steel tanks. After fermentation, the young wines are blended and left to rest on the fine lees for around ten months, followed by further months of bottle ageing. This patient approach results in a wine of exceptional complexity.

Here comes a wine that completely tantalises the senses: Maximo is a sweet wine rarity based on Sauvignon Blanc, harvested at the height of the Villa Bianchi estate – where humidity and dry winds favour the noblest form of Botrytis cinerea. The grapes ripen on the cool Colli del Verdicchio before they are hand-picked several times and transferred to the cellar, where they are pressed particularly gently in a small Vaslin press basket. Spontaneous fermentation takes place at 15 °C for around a month. After static clarification, the wine matures in small stainless steel tanks for around a year.

Bolgheri Rosso 2023 conveys a powerful image with Mediterranean gravitas. The grapes come from the windy slopes between Castagneto Carducci and Bolgheri – an ancient region that Grattamacco characterised in 1977 as one of the first important addresses alongside Sassicaia. Brilliant ruby colour with a sparkling rim in the glass. The nose opens with dark fruits such as sour cherry and plum, along with delicately bitter-sweet spices, leather notes and a hint of Mediterranean herbs. Velvety and full-bodied on the palate, with juicy fruit, subtle tobacco notes and a lively, fresh acidity. Fine-grained tannins provide tension and respectable length. Even older than the Bianco: Ca' del Bosco first vinified this red wine, known in the local tradition as "burdonsì magher", back in 1975 – a testimony to Franciacorta's ancient vocation for red grapes, long before the Spumanti came to characterise the region. The name travelled from Franciacorta Rosso DOC to Terre di Franciacorta and Curtefranca Rosso until it became Corte del Lupo in 2016: The farm and the wolf as a symbol of terroir and quality. The cuvée combines 49% Merlot, 31% Cabernet Sauvignon, 11% Carménère and 9% Cabernet Franc from eight certified organic vineyards. After the harvest, each individual grape is washed and gently dried – the famous "Metodo Ca' del Bosco" – before fermentation takes place entirely in small oak barrels.

The name Plenio (derived from the Latin plenus) stands for fullness and expression, and this is precisely what characterises every facet of this Riserva. The grapes come from higher-lying plots near Cupramontana, in the historic centre of the appellation. Calcareous clay soils, cool nights and selective hand-picking create the basis for a Verdicchio with depth and Storage potential. Fermentation is followed by partly reductive, partly oxidative ageing in stainless steel and large wood, followed by extended storage on fine lees and final maturation in the bottle.
