In 1958, Bertani produced his first Amarone. The category was virtually non-existent, and "Amarone" is a new term for an age-old practice, yet most producers were still unsure whether this dry Appassimento wine had a future. Bertani, however, had no doubts at the time. Since then, the estate has been one of the leading voices behind a wine that is now considered one of the world's longest-lived reds. The key is patience. Corvina and Rondinella from the Tenuta Novare in Arbizzano di Negrar – vineyards dedicated exclusively to Amarone grapes – hand-harvested from the second week of September.

The Allegrini family has been contributing to the history of Valpolicella since the 16th century. Giovanni Allegrini, the visionary, is considered the architect of its rebirth. A man they called "il ragno delle botti", the cellar master spider, because he wandered restlessly between his barrels, always in search of perfection. His son Franco carried on the legacy, revolutionising the Appassimento with the construction of the Terre di Fumane – a state-of-the-art drying facility that precisely controls temperature, humidity and air circulation. Since 2022, the winery has been in the hands of the third generation: Francesco, Giovanni, Matteo and Silvia. The Amarone comes from vines that have been rooted for over 30 years on the hills of Fumane, between 450 and 520 metres above sea level, on clay and limestone soils of volcanic origin. Corvina Veronese and Corvinone each make up 45 per cent of the cuvée, supplemented by Rondinella and Oseleta. After the manual harvest in September, the transformation begins: the grapes rest for four months in the fruttaio, losing 40 to 45 per cent of their weight and concentrating sugar and aromas. Gentle pressing in January, followed by 25 days of maceration at a controlled temperature. Ageing: 18 months in new barriques, a further seven months in large barrels and finally 14 months in the bottle – a total of over three years before the wine leaves the winery.

The name already gives away the meaning: "Bepi's red wine", dedicated to Giuseppe "Bepi" Quintarelli, the man who took over his father's winery after the war and led it to worldwide fame. But this wine is not a nostalgic gesture – it is the answer to one of the most difficult questions in viticulture: what does a perfectionist do in a year when nature does not give enough for an Amarone? 2016 was such a year. Cooler conditions, demanding ripeness – not an Amarone vintage by Quintarelli's uncompromising standards. So the family vinified Rosso del Bepi instead, that rare wine that is only produced in such years and shows what great producers can achieve with patience and mastery, even from difficult harvests. The grapes – 55% Corvina and Corvinone, 30% Rondinella, 15% Cabernet Sauvignon, Nebbiolo, Croatina and Sangiovese – are dried as for Amarone. Twenty days of maceration, followed by 45 days of slow fermentation. This is followed by 84 months in large Slavonian oak barrels, seven years of patience.

Catullo follows the historic Ripasso method in its most rigorous form. After the Amarone Classico has been produced, the pomace is put to use once more: the Valpolicella is passed over these residues, ferments a second time, and absorbs colour, tannins and complexity. The ratio is strict: for every bottle of Bertani Amarone Classico, exactly one bottle of Catullo is produced. No more is possible. The Ripasso is therefore inextricably linked to the Amarone.

The lily is the flower of all flowers in Valpolicella and this exceptional Riserva is dedicated to the best of them. The grapes for this new flagship of the winery, produced in very small quantities, grow on 300-metre-high soils of mainly limestone with some sandy silt in the Monti Garbi district of the municipality of Mezzane di Sotto. The vines have an average age of 40 years and produce only small yields. After harvest, the grapes are selected twice by hand. The Lilium Est is aged for three years in new Bordeaux barriques, the laths of which have been dried outdoors for 36 months. Before it goes on sale, it remains in the bottle for at least another four years.

At the beginning of the 20th century, La Fabriseria referred to the parish council of Sant'Ambrogio, the Fabbriceria, commissioned to build a new church. Grandfather Riccardo Tedeschi was one of the Fabbriceri – and it was customary for each councillor to bring his best wine to the meeting. At the end, a toast was made to God and good work. This rite sealed contracts and friendships; today it seals one of the most precious wines of the house. In 2000, the family acquired the seven-hectare vineyard in Le Pontare, between Fumane and Sant'Ambrogio, and planted it with exceptional density: 7,200 vines per hectare in Guyot training, at an altitude of 450 metres with a view of the entire valley, Verona and Lake Garda. The soil tells of the Cretaceous period: pink-white limestone marl, rich in calcium carbonate and iron oxide, interspersed with grey-yellow clay slate – a terrain that provides structure and balance, aromatic complexity and longevity.

Between stone and altitude. The name already reveals where this wine gets its soul from: from the highest parcels of the Tenuta Costalunga in Sant'Ambrogio di Valpolicella, where the ground gives way to bare rock at 300 to 350 metres. Cresasso – a word that describes precisely this encounter in the local dialect: where earth meets stone, where the Corvina must put down its deepest roots in the barren, calcareous moraine soil with its high proportion of skeleton and chalky white inclusions. Sergio Zenato's vision was to create a wine that celebrates Corvina Veronese in its purest form – without the accompaniment of Rondinella or Corvinone, without the appassimento technique of Amarone. Instead, a slight over-ripening on the vine, hand-picked in the second half of October, when the grapes have reached their maximum concentration. Vinification follows the rhythm of the fruit: 15 days of maceration at 25-26°C, then 24 months of ageing in French tonneaux, followed by at least a further year of bottle ageing. Time as an ally, not an adversary.

This immensely popular and elegant classic Amarone from Zenato comes from Sant'Ambrogio, the heart of the Valpolicella Classico region, where the family has been based since 1960. Corvina makes up eighty per cent of the blend, complemented by Rondinella, Oseleta and Croatina – all grown on the slopes of the Costalunga vineyard. Following the hand-harvest in October, the appassimento process begins: the grapes rest in shallow crates for four months, losing water whilst concentrating their sugar and aromas. Pressing does not take place until January, followed by slow fermentation in contact with the skins. The wine then matures for thirty-six months in large Slavonian oak barrels before being released following further bottle ageing.

Three years after the Annata, Romano and his sons launch a small edition of the same vintage in large formats. The 2015 Valpolicella Superiore Monte Lodoletta is a particularly elegant, pretty and typical expression of the Dal Forno style. Black cherries dipped in rum, plum sauce, brown spices and a hint of cocoa rise from the glass. Silky and polished, it seamlessly washes over the palate with ripe red and blackcurrants, while leaving minerals and a fine layer of tannins behind. At the beginning of the 20th century, Caterina Zardini lost her husband. What remained were ten children, a hundred hectares of land in the heart of Valpolicella Classica and a winery that her husband Carlo Campagnola had built up with passion – he had won the prize for the best Recioto in the region in 1907. Caterina could have handed over the estate. But she didn't. She took over the work and continued to run the winery with all her children, laying the foundations for five generations of a wine family that is still rooted in Marano di Valpolicella today. This Amarone bears her name, a tribute.

Two stone crosses stand in the vineyard of Le Pontare, probably of Celtic origin, signposts for pilgrims on the path to a nearby sanctuary. According to legend, Dante Alighieri also passed by here on his wanderings through the Veneto, perhaps in search of that vin pretto – the pure wine – which he praised so highly in his Convivio. If you stand between these crosses today, at 450 metres above sea level, you can look down over the entire Valpolicella Classica valley, Verona and the shimmering waters of Lake Garda.
