There are wines that possess that unmistakable clarity that summarises the terroir in a nutshell. The classic Barbaresco from Fontanabianca is one such wine – composed from various parcels around Neive, vinified with the precision that Matteo Pola has made the philosophy of the house in the third generation. Santa Cecilia is Planeta's Nero d'Avola icon – born in the barren, sun-baked cultural landscape of Noto, on white limestone soils that give the variety depth, elegance and saltiness. A dense ruby red colour with a purple core in the glass. The bouquet opens with ripe black cherry, plum and mulberry, flanked by balsamic herbs, black tea, some liquorice and a fine graphite note. Powerful on the palate, but never overpowering: dense, ripe fruit meets a firm tannin structure that is well integrated and lends length. The acidity is precisely set, the finish is long and carried by a salty nuance that reflects the terroir of Contrada Buonivini. The Vigna del Rolat vineyard – barely two hectares in size – lies on the south-eastern slopes of Monte Quarin. There, where the view extends over the gentle waves of the Collio as far as Slovenia. Here, on the fossilised marl soils of the Ponca, Friulano has been growing for generations. The grape variety that defines the Collio like no other. Dario Raccaro is not a man of big words. His family has been cultivating these slopes since 1928, and nothing has changed in his philosophy over the decades: The vineyard speaks, the winemaker translates. The Vigna del Rolat is considered by connoisseurs to be one of the most important single vineyards in the Collio, and the Friulano produced from it has the class that recently led Daniele Cernilli from Doctor Wine to name it the best white wine in Italy. Gualtiero Morellino di Scansano Riserva from Morisfarms shows why this traditional family winery is a firm favourite in the Maremma. The cuvée is predominantly based on Sangiovese (Morellino), supplemented by small proportions of international varieties. The vines grow on sun-drenched hills between the Tyrrhenian coast and the cool foothills of Monte Amiata, whose clay and sandy soils lend the wine fruit and structure. Careful manual harvesting was followed by temperature-controlled fermentation, after which the Riserva matured for 12 months in a combination of barriques and large wooden barrels to harmoniously combine elegance and complexity.

In 1966, when the Italian wine world was at a crossroads, Domenico Poggiali took the bold step of acquiring the then neglected lands of Castelnuovo Berardenga. His son-in-law Giuseppe Mazzocolin, the humanist professor and friend of Luigi Veronelli, subsequently turned this adventure into a legend. Together with the young OenologistFranco Bernabei, they created the first Berardenga in 1967 – a Sangiovese that epitomises the true essence of south-eastern Chianti Classico. The vineyards extend over the geologically heterogeneous terraces between 320 and 420 metres above sea level, where quartz-rich sandstone and calcareous Alberese in the upper areas meet sandstone and clay towards the Crete Senesi. This "Terra di Confine" – the borderland between Chianti Classico and the Colli Senesi – characterises the unmistakable character.

The first 1,850 Pinot Noir vines were brought to Italy from Burgundy by Count Vistarino back in 1865. Since then, the vinification of this demanding grape variety has been continuously refined over the generations. Today, the Pinot Noirs from the winegrowing dynasty can even outshine much more expensive Pinot Noirs from Burgundy at international tastings. Tavernetto is the estate's third cru, named after the 1.71-hectare vineyard where the grapes grow magnificently at an altitude of 250 metres to 325 metres and a south-southeast exposure. It is considered the most balanced of the Tenuta's vineyards, with the most evenly positive results. The calcareous subsoil of the single vineyard is ideal for Pinot Nero, resulting in a top wine of great personality.

Arnaldo Caprais Montefalco Rosso Riserva shows how much depth and complexity can be achieved with this combination of local varieties. The wine is intense and particularly concentrated thanks to ripe fruit and careful oak ageing. You can feel the power of the Sagrantino tannins, but this power is well measured and under control. I Giganti Rosso Tharros consists almost exclusively of Nieddera, an indigenous, little-known grape variety from the Sinis region. The grapes ripen on soils rich in limestone and clay, influenced by the sea breeze and intense sunshine. Careful hand-picking is followed by intensive maceration over 8-10 days, followed by 12 months of ageing in barriques and tonneaux – a combination that gives both depth and elegance. In the glass, it has a deep ruby red colour with lively reflections. The nose is characterised by ripe plum, black cherry and a hint of balsamic herbs, complemented by liquorice and a floral spice. Full-bodied and supple on the palate: seductive fruit meets fine tannins and a clear structure. The texture is velvety, the freshness noticeable and the finish long, mineral and spicy – almost cool in its after-effect.

When Roberto Anselmi talks about his sweet wines, his eyes light up differently. Here, the rebel is suddenly a traditionalist – because I Capitelli stands for the centuries-old Veneto art of creating golden nectar from dried grapes. But where others at least seek DOC recognition for their Recioto di Soave, Roberto once again breaks all the rules: His Passito is simply a "Vino Bianco" – table wine. The most radical form of protest.

The porphyry-rich steep slopes on the Ritten above Bolzano offer first-class conditions for producing a Sauvignon Bianco with unique fruit, minerality, elegance and depth. Between the hills of Gaiole and Radda in Chianti, at an altitude of 460 to 525 metres, lies one of the most extraordinary wine estates in Tuscany. Since 1982, Marco Pallanti and Lorenza Sebasti have shaped the fortunes of Castello di Ama – a winemaking couple who have helped Chianti Classico achieve worldwide recognition. "Ama" was created in 2010 with the introduction of the Gran Selezione as an independent line and represents the essence of the estate's younger Sangiovese clones. Made from 96% Sangiovese and 4% Merlot, the wine comes from densely planted vineyards on chalky, clayey soils. The grapes are harvested exclusively by hand, fermented spontaneously with natural yeasts and matured for twelve months in second-use barriques.

"La Procura" - "The Public Prosecutor's Office". The names of Gerardo Giuratrabocchetti's wines are reminiscent of his father's world as a notary.

In 1090, while Leif Erikson was discovering America and the first universities in Europe were being established, two friends of Abbot Rolando paid "two capons, three loaves of bread and six silver denarii from Lucca" for the annual lease of a vineyard in the divine valley of Dievole. Nine hundred (Novecento) years later, in 1990, this wine was created as a reminiscence of the incredible journey through the centuries. The grapes thrive between 300 and 420 metres above sea level on stony soils of marl, limestone and galestro. The vines, which are on average 15 years old and cultivated organically as in the early days of this domain, undergo a 14-day spontaneous fermentation with wild yeasts in cement vats before maturing for 18 months in large, unroasted French Allier oak barrels.
