When Giuseppe Russo talks about his rosato, his eyes light up with the same intensity as the powder-pink glow that settles over the Contrada San Lorenzo in the early days of October. Here, where eighty-year-old Nerello Mascalese vines are rooted in volcanic soil at an altitude of 700 metres, one of Italy's most elegant rosés is created – born from the perfect balance between timing and technique. The magic begins with the early manual harvest, when the grapes have that crystalline freshness that only the cool Etna nights can give. Giuseppe uses a traditional vertical press in which the whole grapes are gently pressed for five hours – long enough to extract the delicate colour, short enough to preserve the mineral elegance. No maceration on the skins, no artificial intervention: just the natural connection between grape and volcanic terroir. After spontaneous fermentation with indigenous yeasts, the wine matures for six months in stainless steel, where it develops its characteristic finesse.

On the Ponca hills of Capriva del Friuli, in marly soils of Eocene origin, the variety finds a terroir that leaves no room for mediocrity. Gentle pressing, brief sulphur-free decanting, fermentation in stainless steel at a controlled temperature – followed by eight months' ageing on the lees. No oak, no detours, everything focused on the Ponca.

Malvasia Istriana is not Malvasia. At least not what most people know by that name. While other varieties of this ancient Greek grape family are often lush and sweetly aromatic, the Istrian variety shows a completely different face: richer, more complex, more mineral and capable of true greatness in Collio Goriziano – and capable of its true greatness in the Collio Goriziano. Schiopetto has been vinifying it as a single variety since 1974: hand-picked at the beginning of September, fermented in steel at 16 degrees for ten to twelve days, matured on the fine lees for nine months. The result needs no explanation, just a large glass.

The name says it all: Badilante honours those workers who, with their spades – the "badili" – for generations to drain and reclaim the marshland of the Maremma. Simone Castelli, son of the legendary OenologistMaurizio, vinifies this single-varietal Sangiovese on the organically farmed Podere 414 vineyard near Scansano. The grapes grow at an altitude of 230 metres in clayey, loamy soils with a high proportion of skeleton. Spontaneous fermentation in cement, 15–18 days maceration with délestage and remontage, followed by maturation partly in cement and partly in wood.

Pale to dusky pink in colour with a fine foam and accentuated, persistent perlage. The bouquet is almost magical and yet very distinguished, with hints of raspberry and wild strawberry, which is what makes a top-class Lambrusco, but still seems to be an unattainable goal for many local winegrowers. A fine acidity on the palate, with delicate, dry bitter notes and an exciting brightening of fruity tones of wild strawberry and pomegranate. In 1886, Carlo Campagnola founded his winery in the Marano Valley, in the heart of Valpolicella Classico. In 1907, he won the first gold medal for the best Recioto at the Verona Wine Fair – since then, the family, now in its fifth generation, has continued what began as a small farm. The vineyards for this Amarone are located on calcareous slopes between 200 and 350 metres above sea level, where Corvina, Corvinone and Rondinella are harvested by hand at the end of September. The traditional appassimento drying process takes around 100 days until the grapes have lost 35–40% of their weight. Gentle pressing in December, 30 days of maceration, then ageing: 60% matures for 24 months in large Slavonian oak barrels, 40% for 18 months in new Allier oak barriques.

A wine like a Sardinian epic: Pentima bears the name of its place of origin, a tiny spot in the Surrau Valley, and also the soul of past generations. The 2021 vintage had long periods of sunshine with cool sea nights – ripening was therefore intense but never overheated. The grapes were harvested late and, as always, selectively, allowing them to ripen fully in terms of structure and flavour density. A vintage that allowed for both stature and finesse and significantly shaped the complexity of this great Riserva. Fermentation took place in large Slavonian oak barrels, followed by 18 months of ageing.

Made from 100% Sangiovese grapes, it is characterised by its complex and open bouquet with aromas of small red berries and spices. The year is 1773 and a storm drives the English merchant ship "Elizabeth" into the harbour of Marsala. John Woodhouse, a merchant from Liverpool, seeks shelter – and finds a wine in an osteria that won't let him go. To stabilise it for the long journey home, he fortifies it with Acquavite. A makeshift solution that establishes the history of an entire wine. Pellegrino, the centrepiece of the Marsala tradition since 1880, has dedicated its own cuvée to this far-sighted Englishman. "Old John" – respect in two words. Grillo, Catarratto and Inzolia, harvested in the hinterland between Marsala and Mazara del Vallo, are fortified with neutral alcohol after fermentation has stopped and topped with mosto cotto – grape must – flavoured and slightly sweetened. Then comes the time: at least 48 months in large oak barrels and a further six months in barriques. The 1998 is a true Riserva – not a vintage for the impatient.

This mature Refosco dal Peduncolo Rosso comes from the single vineyard "Zuc di Volpe" – a prime example of the ripening potential and aristocratic depth of this autochthonous variety. 2013 was a classic vintage: a cool spring, a moderate summer and a dry autumn allowed a late harvest of perfectly ripe grapes with a distinctive tannic structure and lively freshness. The wine was matured in large wooden barrels and barriques and then allowed to rest in the bottle for many years. Today it displays a multi-layered bouquet of dark cherry, blackberry, graphite, undergrowth and liquorice. Powerful and focused on the palate, with ripe tannins, savoury spice and a characteristic balsamic freshness that characterises the long finish. A hint of dark chocolate and a touch of iron add depth.

700 is not just a number, but a promise: At an altitude of exactly 700 metres, in the cool Tenuta Ficuzza not far from Palermo, the grapes grow for a Sicilian sparkling wine that tells the story of its terroir in a dazzlingly fine form. The high altitude, calcareous soils and significant day-night fluctuations create ideal conditions for the grapes to ripen perfectly – chardonnay and Pinot Nero – before they are refined in classic bottle fermentation to create an Etna sparkling wine with character. After the first fermentation in stainless steel tanks, the wine matures on the lees for around 36 months. It is disgorged without dosage, which further emphasises its dry elegance and purist style.

In Nals, there is a phenomenon that rarely occurs elsewhere with such intensity: the Venti di Caduta – the downdrafts that plunge down from the mountains and can lower the daytime temperature by up to 20 degrees. Hot days, freezing cold nights – all within a matter of hours. For the Sauvignon Blanc, this means maximum ripeness of the fruit during the day and maximum preservation of acidity and aromatics at night. A microclimate that keeps this grape variety on its toes. Added to this is a soil that is unrivalled in terms of depth and composition: a 150-metre-deep alluvial fan, built up over millennia by the Sirmian and Nals streams, consisting of 70 per cent limestone gravel and 30 per cent porphyry debris. Two geological worlds that lend the Sauvignon both mineral rigour and aromatic depth. Facing east-southeast, at an altitude of 330 to 400 metres, this is the heart of the Nals terroirs.
