Two hands, one dream: When Elena Celli and Luca D'Attoma discovered the wild hills of Riparbella in 2000 – unploughed, stony and overgrown with macchia – they recognised the potential of this rugged terroir, situated at an altitude of between 250 and 300 metres. Here, where the salty breeze from the Tyrrhenian Sea meets Mediterranean wilderness, one of Italy's most extraordinary Cabernet Francs has been produced for over two decades. Luca D'Attoma, legendary Oenologist and creator of iconic wines such as Le Macchioles Messorio, is committed to radical purity: biodynamic cultivation in accordance with Demeter guidelines, spontaneous fermentation in conical oak barrels, and 20 months' ageing in barriques comprising 80% new oak.

In 1994, Rita Tua and Virgilio Bisti set aside two barrels of Merlot, without realising that they were creating a cult wine that would catapult the winery onto the world stage. The name comes from a small stream that flows close to the vineyards, as unassuming as the project's very beginnings. Then, in 2000, came the sensation: Robert Parker awarded it a hundred points – the first ever for an Italian red wine. The Redigaffi became a legend, the epitome of Tuscan Merlot mastery, compared to Pétrus and Masseto – and yet distinct in its own right, shaped by the metal-rich hills of the Maremma, by loam and clay, by its proximity to the sea ... The vines grow in the middle section of the vineyard, where the clay content is highest – the very place where Merlot achieves its greatest density. Hand-selected in three passes, using only fully ripe grapes. Vinification involves a long maceration, followed by eighteen to twenty months in new French barriques, then months in the bottle before the wine leaves the estate.

Monteverro – a classic French blend of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot – is a grand cru from the Maremma, brimming with opulence and complexity. A deep, dark ruby colour with a black core. Incredibly rich in aromas of dark fruit, chocolate and spices; soft and full-bodied, with polished tannins. There are wines that define a region. Saffredi is one of them. When Elisabetta Geppetti, in 1987 – in her mid-twenties and driven by a vision to bring the sleepy Maremma to world fame – created this wine together with the legendary Giacomo Tachis, nobody could have imagined that a Super Tuscan was being born here, one that would rival Sassicaia and Tignanello. The name is a loving tribute to Fredi, Elisabetta's father-in-law Alfredo Gentili, who sparked her passion for wine and, in the 1980s, planted the five-hectare vineyard from which the grapes for Saffredi are still sourced today. The Saffredi single-vineyard plot near Pereta lies at an altitude of 250 metres, facing south-west for the old vines and south-east for the newer plantings. The soil is the result of millions of years of geological processes: of sandstone origin, rich in calcareous marl and iron minerals, low in organic matter, with clay layers only appearing at a depth of 30 centimetres. On clear days, the view from here sweeps across the hills to the Mediterranean, 25 kilometres away – a proximity to the coast that lends the wine its distinctive freshness and vibrancy.

Lodovico Antinori has always been the creative force behind Tenuta di Biserno in Bibbona. In 2018, however, he launched a new project with his daughter, Sophia Antinori, called Tenuta del Nicchio. The estate comprises 12 hectares of vineyards near Bolgheri and two hectares near the village of Castagneto Carducci. Il Nicchio (debut vintage 2021) is by no means simply Lodovico's 'second wine'. It is inspired by the magnificent Saint-Émilion Château Cheval Blanc and is made primarily from Cabernet Franc. This grape variety thrives on the region's complex soils, which consist of silt and alluvial sand with a high clay content. Just a hint of the estate's own Merlot is added to create a wine with a character all of its own.
