Full-bodied yet refreshing – this is how Peter Zemmers’ Chardonnay from the finest vineyards around Kurtinig in South Tyrol’s Unterland region presents itself. The vines, grafted onto low-growth rootstocks and trained using the Guyot system, benefit from their favourable location in the valley floor, ideal sunlight and good air circulation around the grapes. The hand-picked grapes are left to macerate on their skins for a few hours in a cool place before pressing – a step that transfers the fruity aromas from the skins into the must and intensifies the bouquet. Following gentle pressing and natural sedimentation, fermentation takes place at a controlled temperature of 19 °C in stainless steel tanks.

South Tyrol's very own red wine variety, vinified by a master of his trade. Peter Zemmer cultivates his Lagrein on the warm clay soils of the municipality of Auer in the South Tyrolean lowlands – where the indigenous grape variety has been at home for centuries. The outstanding location and careful cultivation of the vineyards create ideal conditions for grapes of particular concentration. After fermentation, the must is kept in contact with the skins through regular pumping over and gentle crushing, which ensures optimum colour yield and accentuated fruitiness. 70% of the wine is then matured in large oak barrels, the remaining 30% in two- to three-year-old barriques. Further bottle ageing follows the assemblage.

The aromatic soul of South Tyrol. Gewürztraminer is considered the most typical of all South Tyrolean white wines – full-bodied and unmistakably aromatic. At Peter Zemmer, this grape variety grows on low-growing rootstock in the Guyot system, in the best vineyard sites on the valley floor around Kurtinig at 220–230 metres above sea level. The favourable location, ideal sunshine and good aeration of the grapes create ideal conditions for this demanding variety. After destemming, a six to eight-hour cold maceration follows, which transfers the valuable flavours from the skins into the must and intensifies the characteristic bouquet. Gentle pressing and subsequent fermentation at a controlled temperature of 19 °C in stainless steel preserve the varietal aromas in all their splendour.

A vintage South Tyrolean sparkling wine of elegant lightness. The Chardonnay grapes grow at an altitude of 450 metres around Buchholz in the South Tyrolean lowlands, where ideal sunshine and perfect aeration guarantee an excellent acid-sugar ratio. After pressing and destemming, fermentation takes place with pure yeasts at a controlled temperature of 19°C in stainless steel tanks. The second fermentation takes place according to the Metodo Charmat in pressurised tanks, where the wine matures on the lees for six to nine months at 14°C, developing aroma and body. After separation from the yeast and cooling, the wine is left to mature in the bottle for a further three months.

Buchholz – as early as the Austrian land register of 1858, the name referred to the valley slopes above Salurn, where terraced vineyards lie on dolomite sedimentary rock at altitudes between 400 and 800 metres. Peter Zemmer, whose family has been making wine in Kurtinig on the Weinstraße since 1928, has chosen this diverse site for his Chardonnay: a mosaic of microclimates and soils that combines alpine freshness with southern ripeness. In the mornings, the breeze from the north cools the vines; in the afternoons, the ‘Ora’ from the south warms them: a daily rhythm that gives the grapes time to develop. The winemaking process is deliberately restrained: a short cold maceration to preserve the fruit, followed by fermentation at 19°C in large wooden barrels.

After six to eight hours of cold maceration, the grapes are gently pressed and clarified by natural sedimentation before controlled fermentation takes place at 18°C in stainless steel tanks.

Pinzon. A vineyard site that has long been regarded by connoisseurs as synonymous with South Tyrolean Pinot Noir of the highest calibre. This small wine-growing village on the eastern side of the Adige Valley, first mentioned in records in 1230, lies amidst the vineyards that, along the Pinot Noir Trail, are counted amongst Italy’s finest Pinot Noir terroirs. Here, at an altitude of around 550 metres in the municipality of Montan, Peter Zemmer cultivates his vines on porphyry soils with deposits of dolomite carbonate rock – —a geological combination that lends the wine its characteristic minerality. The microclimate of the site is shaped by its elevation above the Adige floodplain and its north-westerly aspect, which grants the vineyards long hours of evening sunshine. The ‘Ora’, that famous valley wind which rises from Lake Garda through the Adige Valley, cools the vines in the afternoon and regulates humidity – ideal conditions for this demanding Burgundian variety.

In the local dialect, ‘Giatl’ means ‘small plot of land’ – and this name is steeped in history. The ten-hectare single vineyard in the valley floor of Kurtinig a.d.W. is one of the most exceptional terroirs for Pinot Grigio in the South Tyrolean Unterland. On sandy alluvial soils with calcareous gravel, vines grafted onto low-vigor rootstocks thrive here under ideal conditions, trained using the Guyot system. The unique microclimate of this sun-drenched spot is shaped by two contrasting wind systems: the warm ‘Ora’ blows northwards from Lake Garda in the afternoons, tempering the daytime heat, whilst at night cool downdrafts from the Dolomites provide relief. These extreme temperature fluctuations allow for long, slow ripening phases whilst perfectly preserving acidity and concentrating the aromas. Following hand-harvesting and destemming, a short cold maceration takes place to emphasise the fruitiness. The gently pressed grapes are clarified through natural sedimentation before alcoholic fermentation takes place in small and large French oak barrels (12 months) and in stainless steel tanks (6 months). Yeast ageing lends the wine valuable complexity and depth, whilst further months of bottle ageing round off its profile.

Furggl is a field name that sticks in the memory. In the municipality of Auer, in the heart of South Tyrol’s Unterland region, this single vineyard is situated on alluvial soils composed of limestone and porphyry gravel, interspersed with sand and loam. A terroir that offers the late-ripening Lagrein exactly what it needs: warmth, depth and the soil moisture that ensures a consistent supply of water even in dry years. The vines, grafted onto low-vigor rootstocks and trained using the Guyot system, yield concentrated harvests of just 45 hectolitres per hectare. Following the hand-harvest in early October, the destemmed grapes first undergo a one-day cold maceration before fermentation takes place at 28–30 °C over ten days. Regular pumping over and gentle submersion keep the must in contact with the skins – , allowing colour pigments and fruit aromas to permeate the heart of the wine. After two careful rackings, the long ageing process begins: 12 months in French barriques, followed by 6 months in stainless steel, then a further 6 months of bottle ageing. Only after a total of 24 months’ ageing does this wine reach the customer – ready to drink, yet with the potential to age for a decade or more.

Punggl is a word from the dialect of the South Tyrolean lowlands that refers to a small hill. But this inconspicuous name stands for one of the region's most renowned vineyards: at the foot of the Fennberg, south of Margreid, rises the eponymous hill with its precious alluvial soils of fine sand, silt and clay deposits. Here, where the Mediterranean climate of the warm valley floor meets the thermals of the Alps, the Merlot finds ideal conditions for a ripeness that combines vigour and finesse. From April to October, constant air currents characterise the microclimate of the site. The warm afternoon wind that rises from Lake Garda through the Adige Valley and the cool morning breeze from the north create an interplay that allows the grapes to ripen slowly and evenly. Vigna Crivelli is one of the most renowned white wine vineyards in the South Tyrolean Unterland. Named after Count Crivelli, a leading member of an ancient noble family from Margreid, the Chardonnay thrives here on alluvial soils of fine sand with silt and clay deposits under ideal conditions. The unique microclimate of this single vineyard is characterised by strong downdrafts from the Fennberg and the daily southerly wind, the ‘Ora’, which ensures perfect aeration of the grapes. At an altitude of 1,030 metres, where apple trees still stood thirty years ago, one of Italy’s most remarkable Pinot Noirs is now grown. Peter Zemmer took the plunge a good decade ago: he planted Burgundy vines on the south-facing slopes at the Koflhof in Aldein – —an experiment at an altitude that is exceptional even by South Tyrolean standards. The first vintages remained unofficial; in 2016, hail struck. But since 2017, Vigna Kofl has demonstrated what is possible when porphyry soils meet dolomite carbonate and the daily ‘Ora’ breeze from the south provides that cool tension that Pinot Noir loves so much. The vinification follows the rhythm of the vineyard: seven days’ fermentation at a controlled temperature, gentle extraction through pumping over, then two careful rackings without a centrifuge – — a time-consuming process reserved for fine wines. Twelve months in French barriques, a further six in stainless steel, and finally half a year of bottle ageing.

Only 650 people live in the tranquil village of Kurtinig on the wine route in the South Tyrolean lowlands near the Adige river. Founded in 1928, the family business is now one of the leading wineries in South Tyrol. Peter Zemmer is a passionate winemaker who is the third generation to run the business and benefits from the experience and knowledge he has gained over the years. Sites of impressive variety.
Around 1,800 hours of sunshine a year, a favourable average temperature of 18 degrees in the vegetation period and optimal rainfall distribution characterise the distinctive and expressive wines. The loose soils consist of dolomite and limestone with glacial deposits of gravel, grit, sand and clay. As the subsoil is also well aerated and therefore easy to warm, the vines can develop ideally.
Over 800 metres difference in altitude between the lowest and highest vineyard - this is the extraordinary variety of vineyard sites that the Peter Zemmer winery has at its disposal. This special feature is also reflected in the attractive range of award-winning single-vineyard wines, whereby the white Burgundy varieties have always characterised the Peter Zemmer range. In addition to the Vigna Crivelli Chardonnay Riserva, the Giatl Pinot Grigio Riserva is the only Riserva of this grape variety in South Tyrol to have firmly established itself in the top segment of high-quality white wines. And rightly so, as these wines are characterised by quality and tangible passion.
Hand in hand with nature.
Sustainability is a pioneering way of life for the winery. For example, the entire energy requirements of the business have been covered by renewable energies for years and the vineyards are always worked according to the minimum principle. Clear regulations and requirements apply to the use of fertilisers and pesticides, which are kept to an absolute minimum.
The centrepiece of the winery, which is one of the leading wineries in South Tyrol, is the exemplary cellar. The most valuable and finest white and red wines mature there in large and small barriques as well as in stainless steel.
