Founded in 1889 by Pastor Christian Schrott, the Tramin Winery is today one of the most renowned co-operative wineries in Italy – supported by around 270 winegrowing families who cultivate their vineyards around Termeno, Neumarkt, Montan and Auer. Oenologist Willi Stürz, who has been at work since the 1990s, has turned this collective strength into a portfolio that has won many international awards. His credo: purity and terroir character – not a word too much in the cellar. The Pinot Bianco grows on chalky and clayey soils with gravel and crushed stone, between 250 and 500 metres above sea level.

Pinot Grigio is the most widely cultivated white wine variety in South Tyrol – and at the same time the most misunderstood. Anyone who thinks it only knows one note has not yet drunk one from the vineyards around Termeno. The Tramin winery gets the best out of this grape variety: calcareous clay and gravel soils, altitudes between 200 and 400 metres and the temperature fluctuations between day and night that are typical of the valley. This is what gives the Pinot Grigio its tension. Vinified in steel tanks, with careful temperature control – no wood, no distractions. What ends up in the glass is the location.

Moscato Giallo is one of the most fragrant grape varieties in South Tyrol – and one of the most vulnerable. In the wrong hands it becomes sugary sweet and arbitrary, in the right hands it shows something rare: aromatic depth with complete dryness. Nals Margreid cultivates it in the southernmost part of its vineyard area, in Margreid – the warmest, most Mediterranean tip between Nals and Lake Garda. The vineyards lie at an altitude of 220 to 350 metres, exposed to the south-southeast, on white, broodinglimestone gravel soil with a high humus content. The climate bears the fingerprint of the Ora, the warm afternoon wind that blows daily from Lake Garda over the slopes, extending the growing season and shaping the flavour of the grapes. Hand-picked, three weeks of fermentation in steel, five months of ageing on the fine lees.

The Eisack Valley between Klausen and Brixen is one of the coolest wine-growing regions in South Tyrol – and one of the steepest. At 615 to 908 metres above sea level, on weathered mica schist and sandy gravel soils, the Müller-Thurgau vines of two winegrower partners, which Alois Lageder looks after organically, grow. This altitude is no coincidence: Müller Thurgau needs coolness and slow ripening to develop its fine flavour – the Eisack Valley has both in abundance. In the cellar, Lageder works with a level of care that goes beyond the usual: temperature-controlled fermentation in steel and in large wooden barrels, a small percentage ferments and macerates on the intact grapes – stalks and skins included. Maturation takes place on the fine lees in steel and on the full lees in large wooden barrels. Not filtered.

Some vineyards have names that you never forget. The Hexenbichl – or Hexenbühel, as the older people around Tramin call it – lies on the southern slopes of the village, between 300 and 450 metres, on calcareous clay and gravel. Vernatsch has thrived here for generations; the vines for this wine are between 60 and 100 years old. They have not been replaced because they knew that no young vine could match the vigour of these roots. Fermented in steel tanks, matured in large oak barrels – without pressure, without haste. Vernatsch, also known as Schiava in South Tyrol, needs this. It is not a grape variety for feats of strength, but for precision and patience.

Autochthonous power from the heart of South Tyrol – lagrein embodies the soul of the Bolzano valley floor like no other grape variety. In Gries and the surrounding slopes, the vines thrive on warm, sandy alluvial soils, where extreme temperature fluctuations between day and night create the complexity that characterises this classic. Intense ruby red colour with violet reflections. Ripe cherries and blackberries on the nose, framed by floral notes of violets and lilacs, while the typical cocoa flavour reveals its origins. Oenologist Stephan Filippi deliberately selects special vineyards in Überetsch and Ritten for this Sauvignon Bianco, where dry sandy soils and the alpine climate give the grape variety its characteristic expressiveness. Controlled vinification after the harvest harvest takes place exclusively in stainless steel in order to optimally preserve the natural freshness and flavour. Straw yellow in colour with greenish reflections. In the glass, it immediately unfolds its typical vegetal spectrum: tomato leaves and nettles meet spicy sage, while yellow peach and lime provide fruity accents. South Tyrol's very own red wine variety, vinified by a master of his trade. Peter Zemmer cultivates his Lagrein on the warm clay soils of the municipality of Auer in the South Tyrolean lowlands – where the indigenous grape variety has been at home for centuries. The outstanding location and careful cultivation of the vineyards create ideal conditions for grapes of particular concentration. After fermentation, the must is kept in contact with the skins through regular pumping over and gentle crushing, which ensures optimum colour yield and accentuated fruitiness. 70% of the wine is then matured in large oak barrels, the remaining 30% in two- to three-year-old barriques. Further bottle ageing follows the assemblage.

The grapes for this full-bodied red wine grow on warm, calcareous and gravelly clay soils in hilly areas between 250 and 350 metres above sea level. After maceration at a controlled temperature (28-30°C), the wine is matured in large wooden barrels – which gives it the necessary depth without masking the varietal character. The colour in the glass is a deep garnet red. The nose reveals a fruity bouquet of blackcurrant and red berries, underpinned by characteristic notes of green pepper, dried fruit and a hint of tobacco and chocolate. Dry and full-bodied on the palate, with supple tannins and earthy spice.
