1975 – two years after Riecine’s first Chianti Classico – john Dunkley decided that some years and some grapes deserve more than the usual. The Riserva was born. Since then, it has only been produced when the selection allows: the best vineyards, the oldest vines, two stages of selection – in the vineyard and on the sorting table – before the grapes enter the cellar. The vines for the Riserva are between 25 and 45 years old. After selection, the must is transferred to unglazed Nomblot concrete vats. There, the must is initially kept cool with dry ice for four to five days before spontaneous fermentation begins – slowly, naturally. After fermentation, the wine spends a further ten days on the skins, with the cap submerged. Then comes the centrepiece: the entire Riserva production is transferred to a single large oak cask from Grenier. Untoasted – no toasty aromas, no vanilla, no foreign character. Just the neutral, breathable structure of the wood. 22 months. Then back into concrete for natural stabilisation and clarification. Finally, three months in bottle.

For us, this Barolo belongs in the top class of the appellation, it always carries its great weight with maximum elegance and is highly authentic, completely in the style of Chiara Boschis, who has once again delivered something really great here. Barolo Serradenari DOCG 2022
Serradenari means "holds the money" – a medieval nickname for those who fled to the cool heights after the plague and carried their savings under their arm. The history of the village is inscribed in its name. Giulia Negri built the family vineyard on this cru, at 480 metres, exposed to the south-west, in a natural amphitheatre that envelops the grapes on all sides. The soil is Messiniano – sandy-loamy clay with a strong limestone marl layer and sub-acidic pH. An acidic soil makes minerals more readily available, the vines more vigorous, the grapes smaller and thicker-skinned. More extract, finer tannin, more structure. Spontaneous fermentation, 45 days of maceration – the longest maceration of the three parcels. Then around 30 months in 25-hectolitre Austrian oak barrels.

The 4.5-hectare Convento (di Capestrano) vineyard is the youngest cru within the vineyards of the municipality of Capestrano. It extends over the higher part of the land where vines and vegetables were once grown and which belonged to the old convent of St Francis, which has stood on a hill overlooking the small village of Capestrano since the mid XV century. The microclimate, which is so different from that of the plateau, has two important consequences: A harvest that takes place on average two to three weeks earlier, depending on the year, and the result is a Montepulciano d'Abruzzo that stands out from the crus of other farms in terms of its vigour and concentration.

Giacomo Neri's Pietradonice is Cabernet Sauvignon at the highest level and is now a legend, as there is hardly a wine in Montalcino that can even come close to equalling it. Monumental and very concentrated, with hints of sour cherries and a fine cedar wood and liquorice note. The exciting thing: Pietradonice is clearly recognisable as a Montalcino wine and yet, with its herbal and spicy character, it is as typical of Neri as it is of the grape variety and therefore seems to come from another larger world. “Il Merlot” Merlot Sebino IGT 2015
Some wines are created according to plan. And some are created because nature wants them to be. Il Merlot belongs to the second category – a wine that is only born when terroir, climate and sun come together in rare harmony. Maurizio Zanella, the visionary behind Ca' del Bosco, has elevated this principle to a philosophy: since the first vintage in 1990, only six vintages have been deemed worthy of being bottled as single-varietal Merlot. 2015 was one of them. That year, Franciacorta challenged its winegrowers: a mild winter spurred the vegetation cycle early, fungal pressure in early summer demanded meticulous foliage work, then sweltering heat until the end of July. Only after Ferragosto did rain bring redemption – and gave the Merlot grapes the final ripeness that distinguishes greatness from favour. The harvest began on 9 September for the three "vigne elette" in Cazzago San Martino and Passirano, whose vines, which are on average 37 years old, are rooted in the calcareous moraine soils of Franciacorta.

Livo Felluga's second top cuvée Abbazia di Rosazzo is closely linked to the abbey of the same name, a centuries-old centre of Friulian wine culture. The blend of Friulano, Pinot Bianco, Sauvignon, Chardonnay and Ribolla Gialla comes from steep vineyards with marl and sandstone soils. The climate between the Julian Alps and the Adriatic Sea ensures warm days, cool nights and a long growing season – ideal conditions for aromatic precision and elegant acidity. The 2019 vintage brought a balanced ripeness with cool minerality and fine structure. After being harvested by hand, the wine was matured on the fine lees, partly in stainless steel and partly in wood, giving it depth and complexity.

There are houses that ask themselves a single question. Not: What else can we do? But rather: How well can we do one thing? Galardi, at the foot of the extinct Roccamonfina volcano in northern Campania, has been producing exactly one wine since 1994. Just one. Year after year. The location is exceptional: south-west exposure at 500 metres, volcanic soil of silt, clay and rock, rich in mineral salts from two eras of volcanic activity – leucite lava and basalt, superimposed and weathered over hundreds of thousands of years. Chestnut woods, olive groves, underground springs that never dry up, even in dry years. The sea breezes from the Gulf of Gaeta provide natural climate control. 80% Aglianico, 20% Piedirosso – the legitimate natives of this region. Fermentation with skin contact for 20 days, pumping over twice daily, malolactic fermentation in steel, twelve months ageing in French barriques (40% new, 60% second and third passage), then a further twelve months in bottle.

Barolo Via Nuova is a blend of fruit from different vineyards in several villages of the appellation. Packed with cherry and raspberry flavours, it is both supple and firmly structured. Shows notes of earth, minerals, eucalyptus and aniseed that give it volume and structure, while the muscular tannins still have the upper hand on the finish at first. Deep and rich as it progresses, but never heavy. We find a hint of oak sweetness, but this only adds to the exotic beauty of the wine. In the heart of the Valdarno Superiore, where the ancient Via dei Setteponti inspired Leonardo da Vinci to create his immortal landscape studies, lies Tenuta Sette Ponti – named after the seven bridges that have linked Arezzo and Florence since Etruscan times. Here, on 300 hectares where history meets modernity, Dr Antonio Moretti Cuseri realised a visionary idea in 1999: to create a Tuscan Bordeaux-style wine that combines international elegance with the soul of Tuscany. Oreno – named after the small river that flows through the estate in that clay-rich area where the Merlot vines put down their deepest roots – was born out of a passion for Bordeaux finesse. Fascinated by his travels to Bordeaux, Moretti Cuseri had existing vineyards grafted with Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot. Whilst the Merlot thrives in the clay-rich soils, the Cabernet vines find their home in gravelly terraces that offer perfect drainage and natural temperature regulation. The Petit Verdot rounds off the cuvée with spicy notes and intense flavour.

The temperature fluctuations during the day play a decisive role in developing the finest flavours, which are elegant and complex. The historic Cerretta cru vineyard is located just north of the village of Serralunga d'Alba and is considered one of the most complex parcels in the appellation. The slopes are exposed to the south-west and west, giving the vines both long hours of sunshine and cooling evening breezes. The soils consist of a characteristic mixture of calcareous marl, clay and fine veins of sand – a constellation that gives the Nebbiolo here its unmistakable balance of power, elegance and aromatic depth. The 2021 vintage brought perfect conditions with cool nights, clear autumn days and a harmonious ripening curve. The grapes were harvest exclusively by hand, followed by traditional maceration and around 32 months of ageing in large Slavonian oak barrels, which allow the character of the vineyard to shine through clearly.

In 2011, Giampaolo Motta created a manifesto of love for both his daughter Carla and that unruly Tuscan diva called Sangiovese. After two attempts that proved unsatisfactory, the breakthrough came in 2011: the birth of a wine that comes exclusively from plot number 6 – a unique terroir of grey slate and sand that rests like a mysterious treasure in the golden Conca d'Oro of Panzano. What Bordeaux romantic Motta and his famous Oenologist Stéphane Derenoncourt have achieved here is a completely new interpretation of a single-varietal Sangiovese wine. "This wine is made by the soil, not the vineyard," philosophises Motta – a subtle but crucial distinction between terroir and mere geography.

There are pyramids in the Vigna Iannazzo. Not the Egyptian ones – small, hand-built towers made of black lava, which farmers stacked out of the fields for centuries when clearing the land for farming. Each stone was carried, each tower layered, without mortar, using the ancient dry stone walling technique. The Piramidi dell'Etna – as they are called – are today one of the silent, unmistakable landmarks of the Cottanera vineyards. And they stand right here: in the Vigna Iannazzo, a named single vineyard within the Contrada Feudo di Mezzo, one of the recognised MGAs of Castiglione di Sicilia.

"The new road". This was once a small vineyard on the edge of the historic centre of Barolo, named after the road that connected Barolo with Novello and was actually new at the time. Today, all that remains of this path is a narrow footpath through the vineyards. When the cru vineyard was incorporated into the larger Terlo subzone in 2010, Chiara Boschis could have simply abandoned the name. Instead, she turned it into an idea: Via Nuova was rethought – as an assemblage of six parcels that represent the entire Barolo region in one wine.

From the historic Mosconi cru hillside in Monforte d'Alba: Fides is Pio Cesare's clear commitment to the Barbera grape – for years from a singular parcel, with the strictest yield limits and tiny production. Hand-picked, followed by fermentation in stainless steel with around 30 days of maceration; malolactic fermentation takes place gently in tanks. Ageing: around 20 months in large oak barrels (botti), a small proportion in French barriques – enough to anchor depth and texture without masking the origin.

Some wineries tell their story on display boards. At Fuligni, it hangs on the walls. The palazzo in the centre of Montalcino dates back to the 17th century – the Medici resided here and a Spanish princess left a room that still bears her name today. Underneath, deeper than the palazzo itself, are the cellars: built at the end of the 16th century, with vaulted ceilings in tecnica mista, completely naturally insulated. This is where the Brunello matures in Slavonian oak barrels. It also matured here when Giovanni Maria Fuligni came to Montalcino at the beginning of the 20th century – and it matures here, just as his ancestors made wine in the Maremma before him, without interruption, without abbreviation.
