Neromàccarj is the broodingwine from Gulfi's high-quality Nero d'Avola range. The vines are rooted in the single vineyard Màccari, a barren hilly landscape near Pachino, where calcareous clay, volcanic rock and sea breezes create a powerful, yet always balanced microclimate. The vines are ungrafted, some are over 50 years old and yields are low. The harvest by hand and the wine is matured in the traditional way: a long maceration period followed by two years of ageing in used barriques and large wooden barrels. All this with organic care – and a firm determination to bring the best of the variety into the glass.

Directly in front of the cantina, at an altitude of 450 metres and facing south-west, lies the vineyard that has defined Fontodi's claim to Sangiovese since 1985. Three plots, planted between 1963 and 1973, are united by a special geological feature: slaty Galestro soils that break up into characteristic platelets on the surface. Giovanni Manetti recognised early on that this soil structure gives the Sangiovese the dark fruit and volume on the mid-palate that distinguishes it from the limestone-dominated sites. The name "Sorbo" refers to a local Tuscan fruit – dry, tannic, almost like grapes themselves. What began as a Riserva in 1985 was elevated to Gran Selezione in the 2011 vintage, when the new classification was introduced in Chianti Classico. Since 2012, 100% Sangiovese, previously blended with small proportions of Cabernet Sauvignon.

The wolf's mouth. This is the translation of Bocca di Lupo – a name that captures the wildness of this landscape. Here, in the heart of the Alta Murgia near Minervino Murge, a dream began in 1998: the Antinori family, creators of legendary super Tuscans, recognised the dormant potential of Apulia and invested in a terrain that could not be more barren. Limestone tuff soils, karstic hills, an almost lunar panorama at an altitude of 250-300 metres. But it is precisely this barrenness that is the secret. At the centre of the project: the rediscovery of Aglianico – the noble, once underestimated grape variety that is to find an authentic Apulian voice here. The organically cultivated vines yield slightly overripe grapes that fully develop their phenolic potential. After manual harvesting, the must ferments at 25–27 °C in stainless steel, maceration takes place over 15–18 days with gentle remontages and délestages. Malolactic fermentation takes place in French barriques, where the wine matures for a further 15 months. This is followed by a full 24 months of bottle ageing – this wine is only released onto the market after a total of three years (+).

In the annals of Tuscan wine history, there are vineyards that bear witness to dynasties and eras, and the Vigna dell'Impero is one of these living monuments. In 1935, in that fateful year when Europe was on the eve of great upheavals, the Savoia royal family had a vineyard planted on their hunting reserve in Valdarno di Sopra, which is now one of the most venerable terroirs in Tuscany. Three hectares of terraced vineyards, planted by hand at an altitude of 300 metres, where the Sangiovese vines dig their roots deep into the stony, galestro-rich soil. Antonio Moretti Cuseri recognised the exceptional quality of this ancient site and decided in 2012 to create a limited edition from this historic cru. Only in the best vintages, in numbered bottles, as a tribute to 85 years of winegrowing history. The Sangiovese in Purezza undergoes a particularly gentle, one-month maceration to extract all the noble components of the grapes harvested at optimum phenolic ripeness. 24 months of ageing in large 15 and 25 hectolitre barrels, followed by months of bottle ageing without filtration – to preserve the purest terroir notes.

Pinot Nero in Lombardy is a quiet discipline - difficult to master, easy to underestimate. With Pinéro, Ca' del Bosco has been proving for decades that this grape variety can also achieve expression and elegance on the edge of the Alps. The 2019 vintage was characterised by balanced vegetation, with cool nights at harvest time - a blessing for finesse, freshness and structure. The grapes come from high-altitude vineyards in the Sebino area with calcareous, clayey soils and good air circulation. After manual harvesting in small crates and strict selection, fermentation takes place in large, open oak vats - a traditional process that preserves structure and aromatic finesse. The wine then matures for 11 months in French barriques - one part new, the other used. Everything is done with care: no excess, no forced concentration, but rather the development of fine depth.

It comes from soils with clay and sandstone at 320 to 340 metres above sea level. This is the ideal place for wines that show both power and elegance. The tannins are sweet, but every fibre of the backbone is dense and firm. Red and purple fruits with liquorice, tar and white truffle are neatly packaged here and only reveal themselves gradually, but then with beautiful precision and straightforwardness. There are moments in the history of Italian viticulture that shine like beacons through time. 1962 was one such moment when Fabrizio Bianchi, driven by a vision and surrounded by the scepticism of his contemporaries, made a decision that would change Chianti Classico forever. He dared to vinify the grapes from a single vineyard separately: Il Poggio. What began as an experiment became a revolution – the first cru of Chianti Classico was born. Il Poggio – "the hill" – lies in the heart of Monsanto like a natural amphitheatre, surrounded by wild cypresses, juniper bushes and strawberry trees. Here, on the characteristic Galestro soils between 280 and 320 metres above sea level, the Sangiovese vines have driven their roots deep into the slate-like rock over the decades. These soils – a gift of geological history – give the wine the mineral depth and structural complexity that have made Il Poggio a living legend.

Livio Felluga has three wines that bear witness to the estate – wines that are not only among the best in his portfolio, but also part of Friuli’s history: Terre Alte, Picolit and the Sossò. The word comes from the Friulian language and refers to the slow, deliberate sipping – the opposite of drinking. A hint as to how this wine is intended to be enjoyed. Sossò brings together three characters from old vines in Rosazzo: Merlot provides the fullness and the smooth integration. Refosco dal Peduncolo Rosso – — named after its red stalk, documented in writing in Friuli as early as 1390, then the favourite drink of Livia, wife of Augustus – brings darkness, tannin and the wild side of this landscape. And Pignolo, the ‘pine cone’ – one of Italy’s rarest grape varieties, saved from extinction in the 1970s, with compact, pine-cone-shaped grapes and a naturally high tannin content – lends a complexity and longevity that no other vine in this region can match. When he discovered drawings from the 15th century in the archives of the University of Florence that showed that the hill of San Leolino was once completely planted with vines, this was the key to an extraordinary revitalisation project. Where for centuries there had only been olive trees – with the exception of a small plot from the 1970s –the Terrazze di San Leolino were created anew. The terroir tells a different story to the famous Vigna del Sorbo: here, at an altitude of 450 metres, it is not the slatey Galestro that dominates, but the calcareous Alberese soil. This geological peculiarity gives San Leolino its unmistakable character – mineral, salty, with a freshness that immediately reminds the nose of crushed stones and earthy notes.

There are stories that the volcano itself has written – with fire, time and the inexorable force of geological eras. Feudo di Mezzo is one such story: once a coherent contrada, it was torn in two by Etna's explosive fury and has borne its name ever since, like a reminder of that night when glowing lava flows divided the land and "di Mezzo" – in the centre – a place between two worlds. Giuseppe Russo has created his most complex and ambitious red wine from this dramatic testimony to the terroir. He selected just 0.76 hectares of the very best plot for this extraordinary wine, where hundred-year-old Nerello Mascalese vines sink their gnarled trunks into the volcanic earth like sculptures. Here, at an altitude of 670 metres in Castiglione di Sicilia, the unique microclimate that prompted the ancient Greeks to plant their first vines here prevails. A terroir so extraordinary that history itself has chosen it as a wine-growing region.

The grapes for this elegant Nebbiolo come from the Ravera di Monforte vineyard, a small, calcareous and clayey plot on the south-eastern slope above the village of Monforte d'Alba. It shares its name with the famous Novello cru, but is independent and characterised by stony soils that give the roots depth and minerality. Bright garnet red with a ruby-coloured core. The bouquet opens with clear, youthful fruit: sour cherry, redcurrant and a hint of raspberry, underpinned by violets, dried herbs and a subtle hint of cinnamon. On the palate, the wine is taut and fresh, with precise acidity, ripe tannins and an animating, slightly salty length.
