Occhione is a racy and fresh cuvée of 90% Vermentino and 10% Viognier. Bright light yellow with greenish reflections. "Le Difese 2021 is predominantly Sangiovese (55%), departing from the traditional 70/30 split in favour of Cabernet Sauvignon. The third generation of Tenuta San Guido, Priscilla Incisa della Rocchetta, explained that this decision was made to enhance the "local Tuscan" character of the wine and improve its drinkability at an early stage as a "first step into the world of Tenuta San Guido". While the Cabernet is grown on the estate, the Sangiovese is, as always, sourced from long-standing partners in Chianti Rufina. Rich ruby red colour, with a delicate woody note on the nose resulting from the fact that around 45% of the wine is aged for a short time in barriques.
