At Pelissero, "Tulin" not only stands for a vineyard, but also for a claim. The extremely rare Barbera from this parcel is not a by-product of the Nebbiolo-heavy winery, but an independent, uncompromisingly sophisticated interpretation of the Barbera grape variety. In a year like 2021, which united structure, freshness and concentration in a rare balance, this wine reaches a level that sets it apart from the crowd - and clearly places it in the rank of an exceptional wine. The vines grow on calcareous marl with blue clay - a constellation that combines maturity with tension. The yields are low, the selection strict. Tulin is matured for around 18 months in French barriques, with the necessary time and care to get the best out of the grape variety - not more fruit, not more wood, but more depth and complexity.

Solicchiata, northern slope of Mount Etna, 800 metres. The Faro family has dug deep into the volcano here since 2005 – literally, because the sandy soils of weathered lava rock allow roots to travel far. 100% Nerello Mascalese, Alberello, vines between 50 and 65 years old. Hand-picked, two weeks of maceration, three months in fine-grained oak barrels. Not a wood wine – a classic red volcanic wine.

Directly in front of the cantina, at an altitude of 450 metres and facing south-west, lies the vineyard that has defined Fontodi's claim to Sangiovese since 1985. Three plots, planted between 1963 and 1973, are united by a special geological feature: slaty Galestro soils that break up into characteristic platelets on the surface. Giovanni Manetti recognised early on that this soil structure gives the Sangiovese the dark fruit and volume on the mid-palate that distinguishes it from the limestone-dominated sites. The name "Sorbo" refers to a local Tuscan fruit – dry, tannic, almost like grapes themselves. What began as a Riserva in 1985 was elevated to Gran Selezione in the 2011 vintage, when the new classification was introduced in Chianti Classico. Since 2012, 100% Sangiovese, previously blended with small proportions of Cabernet Sauvignon.

G.D. Vajra's Ravera (whose vineyard extends over the municipalities of Novello and Barolo) is always the most angular, powerful and vertical of their collection. It comes from soils with clay and sandstone at 320 to 340 metres above sea level. This is the ideal place for wines that show both power and elegance. The tannins are sweet, but every fibre of the backbone is dense and firm. Red and purple fruits with liquorice, tar and white truffle are neatly packaged here and only reveal themselves gradually, but then with beautiful precision and straightforwardness. Deep dark, impenetrable ruby colour with violet reflections. Opulent, warm bouquet of fully ripe cherries, plums, liquorice, young leather with a hint of French oak spice. Powerful and firm on the palate, with a brilliant structure and taut tannins. With increasing aeration, it reveals its good structure and refined elegance. This outstanding Merlot from central Tuscany never seems broad or too heavy until the long finish, but is completely convincing with its terrificenergy and complexity. SUPERIORE.DE

Since the 2016 vintage, Livio Felluga's top wine Sossò has been maturing in the bottle for an extra year before being released for sale. This Riserva is a beautifully rich and comforting red wine that is dense on the palate, imparting pretty cherry and dark fruit flavours with plenty of spice and tobacco. The extremely articulate flavour shoulders a convincing tannin portion and yet steers into an intensely fruity final with terrificlength. Pinot Nero in Lombardy is a quiet discipline - difficult to master, easy to underestimate. With Pinéro, Ca' del Bosco has been proving for decades that this grape variety can also achieve expression and elegance on the edge of the Alps. The 2019 vintage was characterised by balanced vegetation, with cool nights at harvest time - a blessing for finesse, freshness and structure. The grapes come from high-altitude vineyards in the Sebino area with calcareous, clayey soils and good air circulation. After manual harvesting in small crates and strict selection, fermentation takes place in large, open oak vats - a traditional process that preserves structure and aromatic finesse. The wine then matures for 11 months in French barriques - one part new, the other used. Everything is done with care: no excess, no forced concentration, but rather the development of fine depth.

The Greeks knew two types of time. Chronos: the measurable, constant, inexorable one. And kairós: the right moment – the moment that cannot be forced, but must be recognised. Celestino Gaspari has dedicated his wine to this concept – and chose the name carefully: Kairós is created in those years when Gaspari decides that the moment is not ripe for his great Harlequin. No second choice – another decision.

A journey through time on five hectares: Giovanni Manetti is a man who knows how to unravel historical secrets. When he discovered drawings from the 15th century in the archives of the University of Florence that showed that the hill of San Leolino was once completely planted with vines, this was the key to an extraordinary revitalisation project. Where for centuries there had only been olive trees – with the exception of a small plot from the 1970s –the Terrazze di San Leolino were created anew. The terroir tells a different story to the famous Vigna del Sorbo: here, at an altitude of 450 metres, it is not the slatey Galestro that dominates, but the calcareous Alberese soil. This geological peculiarity gives San Leolino its unmistakable character – mineral, salty, with a freshness that immediately reminds the nose of crushed stones and earthy notes.

There are stories that the volcano itself has written – with fire, time and the inexorable force of geological eras. Feudo di Mezzo is one such story: once a coherent contrada, it was torn in two by Etna's explosive fury and has borne its name ever since, like a reminder of that night when glowing lava flows divided the land and "di Mezzo" – in the centre – a place between two worlds. Giuseppe Russo has created his most complex and ambitious red wine from this dramatic testimony to the terroir. He selected just 0.76 hectares of the very best plot for this extraordinary wine, where hundred-year-old Nerello Mascalese vines sink their gnarled trunks into the volcanic earth like sculptures. Here, at an altitude of 670 metres in Castiglione di Sicilia, the unique microclimate that prompted the ancient Greeks to plant their first vines here prevails. A terroir so extraordinary that history itself has chosen it as a wine-growing region.

The "25 Anni" from Caprai has been THE ambassador for Umbria's top wines for many years. It captivates with a beguiling bouquet that combines black fruits with citrus fruits, exotic spices, a hint of oregano, menthol and a hint of cocoa. The texture is more like pure silk, delicately lapping the palate, leaving a satisfying mix of intense dark fruits, minerals and fine-grained tannin. There is so much depth and concentration to work with that even when it finishes youthfully structured and dry, it lingers for well over a minute with notes of redcurrant, sage and dark chocolate. This exceptional Sagrantino is undisputedly not only Caprai's top wine, but also one of Italy's most characterful wines, which, with a little more ageing, will give incredible pleasure and should therefore definitely be aerated for 3-4 hours when young. Capitel Monte Olmi 2018 takes things to another level. It coats the glass with a deep purple glow and exudes a dark and seductive bouquet of redcurrants, sultanas, black liquorice and a hint of spiced citrus. The brooding, velvety texture is complemented by juicy acids and tart red fruits that drench everything they touch, leaving a complex layer of savoury spices, minerals and fine tannins. 1993 – marco Caprai stood in his vineyards and looked back on a quarter of a century that his father Arnaldo had begun in 1971 with a dream: to create a world wine from a forgotten Umbrian vine. Ten years of research lay behind him: collaboration with the University of Milan, clone selection, the risk of vinifying the Sagrantino dry instead of sweet. For the 25th anniversary, he wanted to make a statement: the ultimate Sagrantino, the essence of everything he and his father had learnt. The 25 Anni was born – and the wine world held its breath. What followed is legend. In 2000, Michael Douglas and Catherine Zeta-Jones chose this wine for their wedding. Luigi Veronelli proclaimed Sagrantino as one of Italy's greatest red wines. Montefalco was transformed from a sleepy village into a Mecca for wine tourism. And the 25 Anni remained – year after year, vintage after vintage – the flagship of this Umbrian revolution. It comes from the best vineyards in the Val di Maggio, a meticulous clone selection of pure Sagrantino from vines rooted with six to eight thousand plants per hectare.

San Leolino was already considered a cru site 200 years ago. Above the thousand-year-old Pieve, the Romanesque chapel that has been documented since 982, terraces run through the upper part of the Conca d'Oro. In the 15th century, Giovanni Manetti found drawings in the University of Florence that proved that this slope was once completely planted with vines. What followed was a rebirth: the terraces were renewed, 4.5 hectares at an altitude of 450 to 500 metres, on Alberese limestone. These soils are fundamentally different from the slatey Galestro of the Vigna del Sorbo – here, hard limestone dominates, giving freshness, brightness and mineral precision. The pandemic years gave Giovanni the leisure to walk through his vineyards, to reflect. He realised that this parcel has its own identity, a terroir that calls for separate vinification. The first vintage was 2019, the fourth now 2022. Production remains small: only 5,000 bottles.

At an altitude of 750 metres, where the boundaries of the Etna DOC end in the cold north-west of the volcano, lies a hidden geological secret that only three of the hundreds of contrade on Etna can lay claim to. In its sandy soils, San Lorenzo bears the pure legacy of the Ellittico volcano – the ancient eruption centre whose explosive activity 60,000 years ago created a terroir purity that is now one of Sicily's rarest treasures. Giuseppe Russo is aware of this peculiarity when he cultivates the precious white vines that have been sinking their roots into these elliptical volcanic sands for eighty years among the centuries-old Nerello vines of his red Contrada wines. Here, where Etna sends its coldest winds over the vineyards and time is measured in geological epochs, white wines are produced with a minerality that only this unique combination of ancient lava and extreme altitude can produce.

At the centre of the Via Bolgherese, that legendary wine route where the Tuscan dream and the Bordeaux vision merge into an indelible myth, lies a small kingdom of just 5.5 hectares. Here, nestled between the giants Ornellaia to the right and Sassicaia to the left, Antonio Moretti Cuseri and his sons Alberto and Amedeo tell a story of unbridled passion, a story called Orma. Orma means footprint. And this 2021 truly leaves one in the soul of the taster. The purest expression of an exceptional vintage, this organically certified Bordeaux blend of 50% Merlot, 30% Cabernet Sauvignon and 20% Cabernet Franc unfolds like a symphony in purple and garnet. The Mediterranean sun of Bolgheri, tempered by the salty breezes of the Tyrrhenian Sea, gave the grapes that unique ripeness that only a few terroirs in the world are capable of producing.

Perlé Zero is a purist Trento Doc, which is concentrated on the essentials without any dosage. It embodies the essence of Chardonnay from the foothills of the Alps like no other sparkling wine in Trentino. Refined perlage with golden, luminous reflections. Clean, straightforward aroma of grapefruit, ginger and fresh pineapple, with hints of cumin and delicate herbs as it progresses. Dry, racy mouthfeel, very precise, then opens up with a fine spectrum of aromas, leading into a never-ending finish. On the "hill of the blackbirds" – is the poetic translation of Poggio ai Merli – has been producing one of the most impressive interpretations of the Merlot grape variety in Tuscany since 1999. Here, where Paolo Panerai expresses his vision of international grape varieties on Tuscan terroir, Merlot vines grow on calcareous soils between 350 and 400 metres above sea level, developing a personality that is rarely found even in the best international appellations thanks to their unique location. The name deliberately plays on the ambiguity between "Merli" (blackbirds) and Merlot – a play on words that emphasises the close connection between this terroir and the birdlife that Castellare has always protected and celebrated. Each bottle is labelled with a bird that nests in the estate's pesticide-free vineyards – a symbol of the estate's sustainable philosophy.

Andrius. Here, where in 1893 courageous winegrowers laid the first foundation stone of South Tyrolean co-operative history, a Sauvignon Blanc of rare strength and elegance is still produced today. The vines thrive on the calcareous slopes between 260 and 380 metres, where dolomite rock and Andrian porphyry characterise the terroir like two old friends who complement each other. It is the Mediterranean climate that shows its cooler side up here. Temperatures drop at night, allowing the vines to breathe. During the day, the South Tyrolean sun warms the stony soils – an interplay that gives the Sauvignon Bianco that special tension that characterises great wines. In the hands of cellar master Rudi Kofler, selected grapes from the oldest vineyards are turned into a wine of remarkable depth. Six months on the fine lees. Eighty per cent in stainless steel for freshness, twenty per cent in large wooden barrels for structure.

Pure Chardonnay in the finest Burgundy style in honour of Lidia, the mother of the three Rivetti brothers. Straw yellow in colour with greenish reflections. Delicate, buttery nose of pineapple and peach, with hints of stone fruit, jasmine and nutmeg. Multi-layered, creamy and dry on the palate, the beautiful mineral vein and subtly lingering fruit accompany this elegant Chardonnay into a complex and long finish.
