At some point in the history of Nals Margreid, the Gambero Rosso even declared Sirmian to be the best white wine in Italy. We are not surprised. Above Nals, in the Sirmian district, the slopes lie between 500 and 700 metres above sea level. South-east facing, alpine climate: mild summers, cool autumns, a long growing season that ends in mid-October with the harvest. The soil is a geological archive: Permeable glacial moraine of limestone, gneiss, mica, slate and marble, deposited millions of years ago by glaciers in the Western Alps, resting on porphyry, the volcanic bedrock of the bedrock.

In 1986, Hans Terzer dared to take the step of vinifying a Chardonnay modelled on Burgundy, which was to set international standards. The grapes for this wine, which has been the flagship of the Sanct Valentin line ever since, come from the best single vineyards in the municipality of Eppan, situated between 450 and 550 metres above sea level on calcareous gravel soils. Warm September days, cool nights – the microclimate of the South Tyrolean mountain vineyards gives the Chardonnay the aromatic depth and structure that allow it to mature from year to year. Each parcel is vinified separately. Fermentation begins in barriques, where malolactic fermentation also takes place, followed by eleven months on the fine lees – followed by a further eight months of ageing in steel tanks to perfect the balance between fruit, wood and minerality.

A clockwork that ticks once a year and strikes once a millennium – designed for 10,000 years. Brian Eno and a group of thinkers founded the Long Now Foundation in 1996 to broaden the view: away from the immediate and towards the long now. Giorgio Pelissero recognised this as the essence of his profession – because there is time in wine. In 1999, he acquired Cascina Tolino between Treiso and Neviglie, steep terrain divided by a municipal border: Only the Nebbiolo on the Treiso side is allowed to become Barbaresco. He combined the rest with Barbera to create perhaps the oldest assemblaggio in Piedmont – only rethought. Vinified separately, ten days of maceration for the Nebbiolo, up to twenty-five for the Barbera, then fifteen months in small oak barrels.

Carmignano is Italy's best-kept secret: a DOCG of just 110 hectares – smaller than some Bordeaux châteaux. It was here, just outside Florence, that Caterina de' Medici brought Cabernet vines from France in the 16th century. While the rest of Tuscany invented the Super Tuscans centuries later, Carmignano had long since reached its goal. Il Sasso comes from the cru of the same name in Santa Cristina a Mezzana: two and a half hectares, thirty-year-old vines, clay and galestro at an altitude of 250 metres. Seventy per cent Sangiovese, plus Cabernet Sauvignon, Merlot and a touch of Cabernet Franc – the classic Carmignano formula in Silvia Vannucci's signature style. Fermented with natural yeasts, almost three weeks on the skins, then twelve months in used French barriques – no new wood, nothing should distract from the terroir. Bottled unfiltered and matured in the bottle for a further six months.

Since 1986, Gewürztraminer has been one of the founding wines of the legendary Sanct Valentin line – the top collection with which cellar master Hans Terzer once raised the bar for South Tyrolean premium wines. The winery selects only the best grapes for this wine from carefully chosen vineyards in the municipality of Eppan, where the grape variety finds ideal conditions on calcareous gravel between 450 and 600 metres above sea level. What characterises it, apart from its aromatic intensity, is its remarkable longevity – a characteristic that sets it apart from many other Gewürztraminer wines and promises a great drinking experience even after years of ageing in the bottle. The grapes are harvested by hand with rigorous selection. A short maceration is followed by gentle pressing before temperature-controlled fermentation begins. The wine is matured in stainless steel tanks – a deliberate decision to preserve the varietal aromas in all their splendour.

Collepiano (gentle hills) is what Marco Caprai calls the vineyards where his vision took shape at the end of the 1980s: to restore the Sagrantino, this ancient Umbrian vine with the highest tannin content in the wine world, to its lost greatness. Not as a sweet passito behind monastery walls, but as a dry red wine of international calibre. What followed was a revolution: collaboration with the University of Milan, clone selection, high-density plantings – and, in 1996, the legendary "25 Anni", the Sagrantino that Michael Douglas and Catherine Zeta-Jones chose for their wedding. Collepiano comes from pure Sagrantino from the Val di Maggio vineyards. After the harvest, the must underwent temperature-controlled fermentation, followed by gentle extraction over ten to fourteen days. The cuvée matured for twenty-two months in French barriques and a further six months in the bottle – time that gave this tannin-rich wine structure and soul.

Lareale combines grapes from two of Lamole's best vineyards: "Il Prato" and "Le Masse". 95 per cent Sangiovese, supplemented by five per cent Canaiolo Nero, produce a Chianti Classico of remarkable elegance and oysteriness after optical berry selection and two weeks of maceration. When the first snow powders the peaks and most winegrowers have long since closed their cellars, the real work begins on Mount Roen. At the end of November, sometimes not until the beginning of December, grapes are still hanging on the vines here – golden-brown, raisined, concentrated to the essence. Every year it is a new bet with the weather, a calculated risk that the Tramin winery has been taking for decades. Because what matures here on the eastern and south-eastern slopes above Söll at an altitude of 300 to 500 metres is no ordinary sweet wine. The 15 to 25-year-old vines are deeply rooted in calcareous gravel and loamy soil, interspersed with porphyry rock. The extreme climate – mediterranean-sunny days, followed by icy downdraughts from the Dolomites – forces the grapes to concentrate, squeezing everything they have to give. The yield? A meagre 25 hectolitres per hectare. Luxury in liquid form. harvest is followed by careful maceration, then gentle pressing at just 1.2 bar. The must matures in barriques for a whole year before being left to rest in the bottle for a further few months.

Chiarandà is Donnafugata's great white solitaire, a Sicilian Chardonnay with an unmistakable format and clear terroir profile. The grapes come from selected plots around Contessa Entellina, at an altitude of around 350 to 400 metres. The Mediterranean climate is characterised by hot days and cool nights, while the clay and limestone soils offer the best conditions for ripeness with structure. The grapes are harvested exclusively by hand, selectively and early in the morning. One part of the wine is matured in stainless steel tanks, the other in French oak, where malolactic fermentation also takes place. The assemblage is followed by extended bottle ageing of at least two years – careful ageing with a view to longevity.

“Il Chiuso” Pinot Nero Toscana IGT 2022
In 1984, a silent act of rebellion against convention took place on a nameless podium in the hills between Gaiole and Radda. Marco Pallanti, the visionary Oenologist at Castello di Ama, dared to do the impossible: He planted Pinot Nero clones from Morey-Saint-Denis, the heart of Burgundy, in the chalky soils of Tuscany. What began as a bold experiment became a legend – il Chiuso, named after the secretive, mysterious place where Burgundy's noblest grape variety found its Tuscan soul. Five hundred metres above sea level, on intensely limestone soils reminiscent of the Grands Crus of the Côte d'Or, the descendants of those Burgundian pioneers thrive today. Clones 111, 114 and 115 from Morey-Saint-Denis have found a new identity in this exceptional terroir – tuscan in their warmth from the sun, Burgundian in their finesse. The cool microclimate of this altitude, tempered by the Chianti winds, preserves the elegance and acidity structure that help Pinot Nero achieve its purest expression.

The Andreola family winery in Col San Martino was founded in 1984 by Nazzareno Pola in the heart of the Valdobbiadene wine-growing region. In his honour, a wonderful Prosecco Superiore is produced here every year in small batches, which once again received the highest award in the Gambero Rosso for the 2024 vintage. For Stefano Pola, the Etichetta del Fondatore represents the highest expression of finesse and olfactory elegance that the Glera grape can give in the core zone of Prosecco Superiore – combined with the verticality and juiciness that the soils give it, without ever losing its lightness and drinkability.

“Dunico” Primitivo di Manduria DOP 2019
Dunico – unique in the dunes. The name already reveals what distinguishes this wine from all other Primitivo: It comes from vineyards right on the coast, where sandy soils turn into dunes and the vines still grow on their original rootstock, ungrafted, ungrafted, like before the phylloxera catastrophe. It is an absolute rarity today, as most of these coastal vineyards fell victim to the "holiday home building frenzy". What remains are a few plots with ancient bush vines and extremely low yields, which produce a Primitivo of exceptional intensity and concentration. Sandy soil protects against phylloxera – and gives the wine a unique minerality and elegance that is rarely found in Primitivo. The grapes are harvest at the end of August, earlier than all other crus, as the grapes ripen more quickly here due to the proximity to the sea and the warmth of the sand.

There are wines that reinvent a region. Nero is one such wine – born from a vision of the Zecca brothers in the early 1980s, when they began experimenting with Cabernet Sauvignon at Tenuta Cantalupi near Salice Salentino. What initially seemed like a gamble turned out to be the most successful wine story in Apulia: the first Nero vintage in 1998 hit like a bomb and won the Tre Bicchieri of the Gambero Rosso for six consecutive years – an achievement that no other Apulian wine has ever equalled. The history of Conti Zecca dates back to 1580, when Francesco Antonio Zecca came from Naples to the fertile lands of Leverano, in the heart of Salento. For centuries, the Zeccas cultivated their vineyards with Negroamaro, Primitivo and Aglianico and became key figures in the European wine trade – relations between the Bourbon kingdom and France, England, Sweden and Denmark passed through their estate. In 1884, Pope Leo XIII awarded the family the title of Count in recognition of their services to the development of the territory. In 1935, Count Alcibiade Zecca founded the modern winery in Leverano and began to vinify his own wines. However, it was his heirs who took the decisive step of combining the indigenous Negroamaro with the international Cabernet Sauvignon.
