For many, Carricante is inextricably linked with Etna. But with Carjcanti, Gulfi shows that this grape variety can also develop its very own, characterful profile in the south-eastern hinterland of Chiaramonte Gulfi on calcareous and clayey soils at an altitude of around 600 metres. Organic cultivation, hand-picking in the cool morning hours and gentle ageing in stainless steel tanks followed by six months of storage on the fine lees – accompanied by regular bâtonnage – ensure complexity, texture and freshness at the same time.

A wine like a Sardinian epic: Pentima bears the name of its place of origin, a tiny spot in the Surrau Valley, and also the soul of past generations. This Riserva is a broodinghomage to the terroir that has an impact far beyond the borders of Gallura. The 2021 vintage had long periods of sunshine with cool sea nights – ripening was therefore intense but never overheated. The grapes were harvested late and, as always, selectively, allowing them to ripen fully in terms of structure and flavour density. A vintage that allowed for both stature and finesse and significantly shaped the complexity of this great Riserva. Fermentation took place in large Slavonian oak barrels, followed by 18 months of ageing.

In 1984, Count Giuseppe Tasca d'Almerita wanted to celebrate his golden wedding anniversary with his wife Franca by creating a wine that told the family story and the history of the Tenuta at the same time. The uniqueness of the grape composition shows his romantic spirit: Inzolia and Sauvignon from the Tasca selection, the selection of a vineyard in Regaleali that dates back to the end of the First World War. The use of selected yeasts from the estate's own vineyards links this wine even more inextricably with the terroir from which it comes. Fresh in its youth, the wine is unexpectedly ageable and balances its tertiary aromas with the intensity of the fruit.

Produced in just 6,000 bottles per vintage, Godenza from the vineyard of the same name undergoes spontaneous fermentation with indigenous yeasts, followed by temperature-controlled maceration in stainless steel tanks. After malolactic fermentation, it then matures for 12 months in cement vats and at least 9 months in the bottle. Made from 100% Sangiovese grapes, it is characterised by its complex and open bouquet with aromas of small red berries and spices. Probably the most precise expression of Sauvignon Bianco, which Volpe Pasini vinifies year after year, comes from the privileged single vineyard Zuc di Volpe. At high altitude near Togliano, on marl and calcareous flysch soils, the grape variety achieves a rare balance of aromatic richness, vibrant freshness and elegant texture. 2023 was a challenging but ultimately harmonious vintage: a cool spring and changeable weather until July demanded a great deal of sensitivity, but the stable, mild late summer produced concentrated, expressive grapes with a perfect acid structure. The wine is aged exclusively in stainless steel tanks and matures for several months on the fine lees, which gives it additional depth and balance.

The historic terraces of local Macigno del Chianti – the characteristic sandstone that stores the sun's heat during the day and releases it again at night – create a unique microclimate for this organically certified wine. Lareale combines grapes from two of Lamole's best vineyards: "Il Prato" and "Le Masse". 95 per cent Sangiovese, supplemented by five per cent Canaiolo Nero, produce a Chianti Classico of remarkable elegance and oysteriness after optical berry selection and two weeks of maceration. Maturation in oak barrels for over two years gives the wine additional complexity and structure.

Furggl is a field name that burns itself into the memory. In the municipality of Auer, in the heart of the South Tyrolean lowlands, this single vineyard is situated on alluvial soils of limestone and porphyry gravel, interspersed with sand and clay. A terroir that offers the late-ripening Lagrein exactly what it needs: Warmth, depth and the soil moisture that ensures an even supply even in dry years. The vines, grafted onto low-growing rootstock and trained using the Guyot system, produce concentrated yields of just 45 hectolitres per hectare. After manual harvesting at the beginning of October, the destemmed grapes undergo a one-day cold maceration before fermentation at 28–30 °C for ten days. Regular pumping over and gentle submersion keep the must in contact with the skins – this allows colour and fruit flavours to migrate into the heart of the wine. After two gentle racking, the long maturation process begins: 12 months in French barriques, followed by 6 months in stainless steel, then a further 6 months in the bottle. Only after 24 months of total maturation does this wine reach the customer – ready to drink, but with potential for a decade or more.

The year is 1773 and a storm drives the English merchant ship "Elizabeth" into the harbour of Marsala. John Woodhouse, a merchant from Liverpool, seeks shelter – and finds a wine in an osteria that won't let him go. To stabilise it for the long journey home, he fortifies it with Acquavite. A makeshift solution that establishes the history of an entire wine. Pellegrino, the centrepiece of the Marsala tradition since 1880, has dedicated its own cuvée to this far-sighted Englishman. "Old John" – respect in two words. Grillo, Catarratto and Inzolia, harvested in the hinterland between Marsala and Mazara del Vallo, are fortified with neutral alcohol after fermentation has stopped and topped with mosto cotto – grape must – flavoured and slightly sweetened. Then comes the time: at least 48 months in large oak barrels and a further six months in barriques. The 1998 is a true Riserva – not a vintage for the impatient.

700 is not just a number, but a promise: At an altitude of exactly 700 metres, in the cool Tenuta Ficuzza not far from Palermo, the grapes grow for a Sicilian sparkling wine that tells the story of its terroir in a dazzlingly fine form. The high altitude, calcareous soils and significant day-night fluctuations create ideal conditions for the grapes to ripen perfectly – chardonnay and Pinot Nero – before they are refined in classic bottle fermentation to create an Etna sparkling wine with character. After the first fermentation in stainless steel tanks, the wine matures on the lees for around 36 months. It is disgorged without dosage, which further emphasises its dry elegance and purist style.

This mature Refosco dal Peduncolo Rosso comes from the single vineyard "Zuc di Volpe" – a prime example of the ripening potential and aristocratic depth of this autochthonous variety. 2013 was a classic vintage: a cool spring, a moderate summer and a dry autumn allowed a late harvest of perfectly ripe grapes with a distinctive tannic structure and lively freshness. The wine was matured in large wooden barrels and barriques and then allowed to rest in the bottle for many years. Today it displays a multi-layered bouquet of dark cherry, blackberry, graphite, undergrowth and liquorice. Powerful and focused on the palate, with ripe tannins, savoury spice and a characteristic balsamic freshness that characterises the long finish. Ginestrino comes from younger Nebbiolo vines in Barolo vineyards around Monforte d'Alba, whose calcareous marl soils with clayey and sandy veins give the wine a precise structure and fine minerality. Bright garnet red with ruby-coloured reflections. Red cherry, raspberry and rosehip on the nose, accompanied by hints of violets, dried herbs and a delicate spiciness. Fresh and straightforward on the palate, with clear fruit, well-integrated acidity and fine-grained tannins that give the young Nebbiolo contour and length. After fermentation, it matures for around nine months in used French barriques, which rounds off its structure and gives it fine, harmonious wood notes. Bolgheri Rosso 2023 conveys a powerful image with Mediterranean gravitas. The grapes come from the windy slopes between Castagneto Carducci and Bolgheri – an ancient region that Grattamacco characterised in 1977 as one of the first important addresses alongside Sassicaia. Brilliant ruby colour with a sparkling rim in the glass. The nose opens with dark fruits such as sour cherry and plum, along with delicately bitter-sweet spices, leather notes and a hint of Mediterranean herbs. Velvety and full-bodied on the palate, with juicy fruit, subtle tobacco notes and a lively, fresh acidity. Fine-grained tannins provide tension and respectable length. Even older than the Bianco: Ca' del Bosco first vinified this red wine, known in the local tradition as "burdonsì magher", back in 1975 – a testimony to Franciacorta's ancient vocation for red grapes, long before the Spumanti came to characterise the region. The name travelled from Franciacorta Rosso DOC to Terre di Franciacorta and Curtefranca Rosso until it became Corte del Lupo in 2016: The farm and the wolf as a symbol of terroir and quality. The cuvée combines 49% Merlot, 31% Cabernet Sauvignon, 11% Carménère and 9% Cabernet Franc from eight certified organic vineyards. After the harvest, each individual grape is washed and gently dried – the famous "Metodo Ca' del Bosco" – before fermentation takes place entirely in small oak barrels.
