For many, Carricante is inextricably linked with Etna. But with Carjcanti, Gulfi shows that this grape variety can also develop its very own, characterful profile in the south-eastern hinterland of Chiaramonte Gulfi on calcareous and clayey soils at an altitude of around 600 metres. Organic cultivation, hand-picking in the cool morning hours and gentle ageing in stainless steel tanks followed by six months of storage on the fine lees – accompanied by regular bâtonnage – ensure complexity, texture and freshness at the same time.

Bright straw yellow in the glass with silvery reflections. The aroma is precise and complex: Amalfi lemon and grapefruit zest meet fennel, crushed mussel shells, white flowers and a cool, mineral trace. Powerful on the palate, but not loud: The acidity is present but well integrated, carried by salty minerality and a fine melting sensation resulting from the yeast contact. The finish is cool, clear and long – like a sea breeze blowing through sun-warmed limestone cliffs. Carjcanti is an original white wine from Sicily – precise, pure and full of character. An ideal accompaniment to fine fish dishes, prawns with citrus fruits or simply as a contemplative soloist.
