Radda in Chianti is one of the coolest municipalities in the appellation. Here, at an altitude of 400 metres, where dense forests surround the vineyards and stone-walled country lanes run through the hills, Sangiovese thrives in ideal conditions. The strong day-night temperature fluctuations give the grapes the freshness and aromatic clarity that make Radda wines unmistakable. Castello di Radda has been cultivating its vineyards in a fully certified organic way since 2020, with each parcel vinified separately and only brought together at the time of blending. The cuvée of 95% Sangiovese and 5% Canaiolo is destemmed after manual harvesting and fermented in temperature-controlled stainless steel tanks. Maceration on the skins lasts two to three weeks – this is made possible by the perfect physiological ripeness of the grapes. Malolactic fermentation takes place in both steel and wood before the wine matures partly in 500-litre Liters and partly in 20-hectolitre French and Slavonian oak barrels. Several months of bottle ageing round off the harmonious development.

Pietra nera – black stone. This is the name of the introduction to the world of Piaggia, the small winery in Carmignano founded by Mauro Vannucci in the 1970s and now run by his daughter Silvia. Carmignano, the forgotten DOCG at the gates of Florence, where Cabernet has been permitted in blends since the Medici era – centuries before the Super Tuscans were invented. Pietranera shows this tradition in small format: 80% Sangiovese, 20% Cabernet Franc. Fermented with natural yeasts, eighteen to twenty days on the skins, then only three months in used barriques – just enough to smooth the edges, not enough to let the wood taste.

Castelnuovo Berardenga marks the southernmost tip of the Chianti Classico, where the gentle hills of the historic centre merge into the austere beauty of the Crete Senesi. Here, on south-facing slopes at an altitude of 280 metres, the Sangiovese finds the warmth that gives it fullness without losing its lively acidity. Poggio Bonelli presses its Chianti Classico as a genuine expression of this grape variety: 90 per cent Sangiovese, supplemented by a small proportion of other red varieties. After temperature-controlled fermentation and ten days of maceration, the wine matures for ten months in French oak barrels.

In the divine valley – the translation of Dievole – has been cultivating vines since 1090, twelve kilometres north of Siena. Since the takeover by Alejandro Bulgheroni in 2013 and organic certification in 2017, the traditional estate has experienced an impressive renaissance. The classic blend of Sangiovese, Canaiolo and Colorino matures for 13 months in large, unroasted French oak barrels, which gives the wine its characteristic elegance.

When a princess decided to bottle wine in 1958, she didn't do it just like that, but with ambition. Eleonora Ruspoli Berlingieri, who brought the historic Lilliano estate near Castellina in Chianti into family ownership back in 1920, was the first to recognise the oenological potential of this location. At her side: Giulio Gambelli, legendary Sangiovese guru and one of the great interpreters of Tuscan wines. Today, the brothers Giulio and Pietro Ruspoli carry on the legacy – the family still resides in the historic Palazzo Ruspoli in the heart of Rome. The Chianti Classico, which is named after them, comes from around 40 hectares of vineyards on calcareous, stony Alberese soils, which delay the ripening of the grapes at an altitude of around 300 metres and thus preserve acidity and aromatic freshness. The organically farmed vineyards produce a cuvée of 90 per cent Sangiovese, supplemented by five per cent each of Colorino and Merlot – a classic blend that complies with the DOCG statute and emphasises the typicality of the zone.

In May, when the iris – tuscan "giaggiolo" – the vineyards of Lamole are bathed in violet light, the soul of this wine is revealed. The name Maggiolo was born from the fusion of flower and month: a Chianti Classico that expresses the sunny generosity of the altitudes between 420 and 655 metres in liquid form. Unlike the purist Duelame, Maggiolo is a blend of 80% Sangiovese with 10% each of Cabernet Sauvignon and Merlot. After visual berry selection, the grapes ferment separately in stainless steel. The Sangiovese matures for 18 months in large oak barrels, the international varieties in barriques – a marriage that combines structure and suppleness.

Mussels in the vineyard? Not uncommon in Valdarno di Sopra. Where today Chardonnay vines take root at the foot of the Pratomagno, millions of years ago there was a lake – the metamorphic soils are criss-crossed with fossilised evidence of that era. The name "Lamelle" honours these grooves in the fossilised shells, which give the wine its unmistakable minerality. After being harvested by hand, the grapes are left to rest overnight at 5°C before being gently pressed. Pure stainless steel vinification at 16°C, two months on the fine lees – that's all it takes to capture the freshness of this terroir.

The owner of Selvapiana, Francesco Giuntini, and the owner of the Petrognano winery, Cecilia Galeotti Ottieri, have enjoyed a long friendship. Their small winery on the border between Tuscany and Emilia Romagna is located in the centre of the Pomino DOC, which was first mentioned in a document in 1716 and is one of the first four protected appellations in Tuscany (alongside Rufina Classico, Carmignano and Valdarno Superiore). For some years now, the two have been linked by the "Villa Petrognano" project, under which Selvapiana produces one of the most authentic and best Pomino Rosso wines in the region.

Pian di Nova embodies a sophisticated blend of 75% Syrah and 25% Sangiovese, which combines the international vigour of the Syrah grape with the lively fruitiness of Tuscan Sangiovese. It represents a new generation of Tuscan red wines that harmoniously balance tradition and innovation. The hand-picked grapes come from organically cultivated vineyards at the foot of Monte Pratomagno, where loamy-sandy soils at an altitude of 200 metres offer optimal drainage. After cooling to 5°C at night, the grape varieties are vinified separately: two days of cold maceration, ten days of controlled fermentation at 25-28°C, followed by a further 20 days of skin maceration. Six months of ageing in Allier oak barriques, one month in steel tanks and a further six months of bottle ageing complete this elegant blend.

A circular forest sits enthroned on the highest point of the vineyard, and inside it rests an Etruscan tomb – over 2,500 years old. Al Passo, "at the passage", is what they call this place, from where the view extends as far as the Torre del Mangia in Siena. Here, where past and present meet, the estate's most popular cuvée is created: equal parts Sangiovese, Merlot and Cabernet Sauvignon, grown on the silty-clayey limestone soils of Castelnuovo Berardenga. Double selection, 20 days on the skins, then 14 months in French oak – six of which on the fine lees, which gives the wine its silky texture.

Barbara Widmer's Chianti Classico emphasises clarity and origin: 100% Sangiovese from plots in Castellina and Radda (230–400 metres), on limestone and clay soils with south to south-west exposure. Fermented in stainless steel tanks, followed by around twelve months in stainless steel and cement on the fine lees – deliberately without the use of wood to allow the grape variety to speak purely and precisely. Bright ruby red in colour with a cherry-red core. Juicy cherry, redcurrant and violet on the nose, with a hint of herbs and wet stone. Straightforward and animating on the palate: fresh, finely chiselled acidity, taut, young tannins and a salty, minerally finish that gives length. The Trebbiano and Malvasia Bianca grapes for this exceptional white wine come from the Casanova dell'Aia vineyard in Radda in Chianti, the first 0.2-hectare, calcareous and clayey plot that the family bought and planted in the 1980s and then renewed in 2014. It matures on the fine lees mostly in terracotta amphorae and only a small part remains in stainless steel tanks. Total production per vintage: 2,500 bottles.

In the heart of Chianti Classico, where the hills of Castellina in Chianti, Castelnuovo Berardenga and Radda in Chianti meet, lies the historic Castello di Fonterutoli estate. Owned by the Marchesi Mazzei family since 1435, this Chianti Classico represents the epitome of a centuries-old winemaking tradition. The grapes come from 114 individually cultivated plots between 220 and 570 metres above sea level, each with its own microclimate and terroir. Composed mainly of Sangiovese, supplemented by small proportions of Malvasia Nera and Colorino, each parcel is vinified and matured separately in order to preserve the extraordinary diversity of flavours and complexity.

Since 1977, a different bird has adorned every Castellare label – a tribute to the biodiversity of the Tuscan vineyards and a symbol of Paolo Panerai's vision of preserving the authentic Chianti Classico. The estate consistently eschews international grape varieties in favour of Tuscan tradition: 95% Sangioveto, the noble local Sangiovese clone, and 5% Canaiolo form the classic formula of Italy's most famous red wine. The grapes grow on chalky soils between 350 and 400 metres above sea level in Castellina in Chianti, where they develop their typical elegance. After vinification, the wine matures for seven months in French barriques.
