Bagnara is a village between Cellino San Marco and Campi Salentina. Limestone hills, Mediterranean scrub, figs, olive groves, the wind from the Adriatic Sea. Here, along the old "Limite dei Greci" – the historical borderline of the Greek colonies in Apulia – grows the Fiano of Due Palme. A grape variety with a long history in Salento, already known at the time of Frederick II. Hand-picked, cold maceration at 4°C for 24 hours, temperature-controlled fermentation in steel. Straw yellow in the glass, fresh. The nose opens with citrus, white peach, a hint of almond and Mediterranean herbal spice. Lively on the palate, with good acidity and a long, salty, mineral finish. “SanGaetano” Primitivo di Manduria DOP 2023
The name SanGaetano tells of the co-operative tradition: in 2012, Cantine Due Palme took over the small Cooperativa San Gaetano in Lizzano in order to expand the production of Primitivo di Manduria in a targeted manner. This DOC appellation has long been recognised as one of the most important red wine denominations in Apulia – appreciated both in Italy and internationally. The Primitivo vines grow on the characteristic red-coloured soils of Manduria, whose clay-limestone structure is rich in minerals and iron oxides. These soils with their rocky limestone subsoil have a decisive influence on the character of the wine. The grapes are harvested by hand in small crates at the end of August or beginning of September when they are slightly overripe to guarantee the highest quality. After temperature-controlled fermentation, the SanGaetano matures for six months in American oak barrels – an ageing process that refines the tannins and gives the wine additional complexity.

Cantine Due Palme is one of the most successful co-operatives in southern Italy – founded in 1989 in Cellino San Marco, the cooperative now has over 1,200 members and around 3,000 hectares of vineyards between Brindisi, Lecce and Taranto. Under the management of Angelo Maci, Due Palme has developed into a pioneer of sustainable quality production, combining state-of-the-art cellar technology with traditional cultivation methods such as Alberello Pugliese. Don Cosimo epitomises the sun-drenched power of Salento. The Primitivo grapes ripen on calcareous, loamy soils that store sufficient water even in very hot weather. After a gentle harvest in mid-September, the grapes ferment at a controlled temperature in horizontal rotary fermenters before the wine matures for six months in French barriques and then comes to rest in the bottle.

The Cantalupi Primitivo comes from old vines in south-west Apulia and is classically vinified in stainless steel. Dark ruby in colour with a slight violet tinge. Juicy on the palate with dense fruit, pleasant spice, supple tannins and a lovely flow. The acidity is present but elegantly integrated. A red wine "for every day" with plenty of character - authentic, round and pleasantly accessible. Perfect with pasta with a spicy sauce, grilled vegetables or simply on its own with good friends. “Serre” Susumaniello del Salento IGP 2022
Susumaniello is one of the indigenous grape varieties of Apulia that almost disappeared. Cantine Due Palme was one of the first wineries to recognise the potential of this historic variety from the Alto Salento region around Brindisi and saved it with foresight – vinified in purity to preserve its unique character. The name already reveals its speciality: "Carico come un somarello" – loaded like a donkey – refers to the exceptional fruitiness of the young vines. After around ten years, the yield drops significantly, and only then does Susumaniello produce grapes of astonishing quality. The grapes are easy to recognise: Their ink-blue coloured berries have an extremely high anthocyanin content, which is why Susumaniello was often used as a blending partner in the past to lend depth of colour to other wines. For the Serre, the grapes are harvested by hand in small crates late at the end of September, when they are slightly overripe for optimum concentration. Vinification takes place in horizontal rotary fermenters at a controlled temperature, followed by six months of ageing in French barriques.

The name reveals more than any label. Passamante – the forest right next to the Negroamaro vineyards of Masseria Li Veli near Cellino San Marco. A forest that bears its name from times gone by: "passare" and "amante" – the lover who steals away here unobserved. There are hardly any more romantic names for a wine. 100% Negroamaro, the great grape variety of Salento, on calcareous clay, 10 to 20-year-old vines, harvested in mid-September. Fermentation in temperature-controlled steel, six months in barrique – no more, no less. The Falvo family, who have been at the masseria since 1999, with Roberto Cotarella as Oenologist, do not experiment here. They make authentic wine far from the mainstream.

Castel del Monte Bombino Nero is the only DOCG in Italy reserved exclusively for rosé wines – made from at least 90% indigenous Bombino Nero grapes. The vineyards are located at 400–500 metres around Castel del Monte, the octagonal Staufer castle of Frederick II, whose mysterious geometry inspired the Torrevento logo. The wine cellar of Europe.
Apulia is a long extended region deep in the southeast of Italy at the Adriatic coast and forms with the Gargano mountains the spur and the peninsula Salento the heel of the boot. Due to the warm climate in the fertile plains, Apulia is also an excellent wine-growing region. harvests of up to 900 million litres (decades ago even more), gave the region its nickname "Wine cellar of Europe" one. For a long time, mainly dark red blended wines were produced here, which were sold in tankers to other regions or even other countries. Fortunately, this has changed over the last twenty years. Today the powerful wines are popular all over the world. Negroamaro, Salice Salentino, Nero di Troia or Primitivo are now on many good wine lists.
The name of the region goes back to the Apuli, a tribe of the Osker. Already 3000 years ago the Phoenicians and later the Greeks planted vines here. The "Place of eternal spring"As the Roman poet Horace Apulia described it, Puglia is less mountainous than the rest of Italy, dominated by plateaus and flat land that slopes gently down to the coasts. It is dry and very hot in summer, but always windy with sea breezes. The loamy to sandy soils are richly interspersed with limestone, which, despite the often powerful density, also makes finesse and elegance possible.
Almost 25,000 hectares are classified for DOP-origin wine.
There are now 4 DOCG and 28 DOC regions. However, this is still only about 8% of Apulia's total production. Even today, a large part of the grapes harvested in Apulia are used for the distillation of industrial alcohol and the production of mass wines. But a thorough change in the industry is noticeable. Irrigation, the planting of low-bearing but high-quality grape varieties (including classic French) and the move away from buscher education (Alberello) towards modern wire frame systems have long since led to new wines that make wine connoisseurs sit up and take notice.
Due to the renaissance of the regional grape varieties, the winegrowers of Apulia are on the rise.
Around 90,000 hectares produce around 800 million litres a year in Puglia. Of the 4 DOCG and 28 DOC zones, none of the ten have any significance beyond the region. Apulia is a wine region in which many different grape varieties are cultivated. The most important red wine varieties today are Negroamaro, Primitivo, the earliest ripening grape in Italy, Montepulciano and Sangiovese. Aleatico, Bombino Nero and Uva di Troia follow. The vineyards are often planted with Malvasia Nera, Cabernet, Merlot and Syrah. The proportion of red varieties in cultivation is approx. 55%. The main white varieties are different varieties of Trebbiano, Bombino Bianco, Moscato di Trani and Verdeca, as well as Chardonnay and Sauvignon Blanc. Aleatico di Puglia DOC can be produced from the Aleatico grape in the entire Apulia region. The name stands for a sweet red wine made from rosinated grapes.
The DOC San Severo is located directly on the border to Molise and in the vicinity of the local DOC Biferno. There are larger quantities of fine fruity white Trebbiano and red and rosé wines from Montepulciano and Sangiovese produced. Further south is the DOC with the unpronounceable name Cacc'e Mmitte di Lucera. Here Uva di Troia is transformed into a light, youthful red wine. For a sweet version the Aleatico, Negroamaro, Malvasia Nera and Primitivo are used.
To the west of the capital Bari lies the Castel del Monte wine-growing region, which extends around the famous hunting lodge of the Staufer Emperor Frederick II. It is one of the most famous cultivated areas in Puglia. The fresh, light white wines produced there are usually clearly surpassed by the very fruity rosé wines and the full-bodied, aging red wines. Further south in the small wine-growing village of Locorotondo, the grapes of Verdeca and Bianco d’Alessano the white DOC Locorotondo pressed. This wine is often appreciated as the best white wine of Apulia because of its fine nature.
The peninsula of Salento forms the "boot heel" Italy. To the west of the port city of Brindisi lies the DOC of the same name, from which some of Apulia's best wines originate. Further south are the powerful red and rosé wines of DOC Salice Salentino. The best products are characterized by a fine structure and elegance after some time of maturation. SUPERIORE.DE
