Sigmund Freud defined the "id" as that part of the psyche that only obeys a single principle: lust. Unbridled, unregulated, beyond space and time. When Gianfranco Fino gave his wine this name, it was not marketing – it was a manifesto. In 2004, the former olive consultant bought his first vineyard: just 1.3 hectares near Manduria, planted with Primitivo vines over fifty years old in traditional Alberello cultivation. What began as an experiment became a revolution. Six years later, Fino stood on the stage of the Gambero Rosso and received the "Winemaker of the Year" award – the first ever winemaker from central or southern Italy. In a row with northern Italian legends such as Josko Gravner and Romano Dal Forno.

Named after the quartz speckles in the volcanic porphyry rock of Terlan, the most famous Sauvignon Bianco in Italy lives up to its name. Sparkling yellow-green in colour. Filigree, delicately scented with grapefruit, peach, honey and green papaya. Quartz is taut and precise, with a fleshy, creamy texture, great depth and a wonderful mineral-salty finish. The already very well-balanced and classic 2018 vintage can gain again with Fuligni, because no Riserva was produced. Ruby red with orange reflections. On the nose, after some aeration, ripe morello cherries, violets, roses and lots of Mediterranean scrub. Powerful on the palate, the silky tannins give it elegance and the necessary balance, its complexity comes to the fore with every sip. This very authentic and strongly focused Brunello can be counted among the best of the vintage, its wonderfully balanced proportions and its juiciness will give it further impetus in the coming years. There are vintages that change a winery forever. 2016 was such a turning point for Sottimano. After years of meticulous, consistent biodynamic work in the vineyards, Andrea Sottimano reached a point this year where cru and terroir expressed themselves with a clarity and precision that he had never experienced before. The decision to create a Riserva was not a continuation of tradition – previously, old vines from Pajoré and Cottà had been combined for this purpose –but a new beginning, a return to the pure terroir of a single vineyard: Currá. Andrea selected the best grapes for this premium selection from the oldest plots of this legendary 2.8-hectare cru in Neive, where 55 to 75-year-old Nebbiolo vines sink their roots deep into pure limestone. Only 3,000 bottles were intended to tell the story of this exceptional vintage – of a wine that combines complexity, elegance and richness like no other in the portfolio. The Riserva matures for 22 to 24 months in barrels, partly on the fine lees, before being bottled unfiltered and unfined and left to rest in the bottle for a few more years.

2020 is the first organic Oreno vintage. Deep dark ruby violet. On the nose, cassis, blackcurrant and a powerful herbal spice with a good dose of pipe tobacco, tar and crushed boulders. On the palate, dark berries, chocolate and a cornucopia of herbs define the full body. This juicy wine monument has precisely integrated tannins, an enormous silkiness and a seemingly endless finish. The grapes for Terlan's Ikonen wine come from vineyards at an altitude of 300 to 550 metres with volcanic porphyry rock. Powerful, attractively exotic bouquet with bright gooseberries, mango and pink grapefruit, backed by a captivating mineral flavour. There is also lemongrass and herbal, ethereal notes. On the palate, it is juicy and full-bodied, but not overloaded, instead deeply spicy, smoky, with a mineral-salty structure, followed by green-herbal notes in the focussed, mineral final. Every year, Quarz is one of the best Italian Sauvignon Blancs in its full splendour. As always, Cantina Terlano shows a skilful winemaker's hand in guiding the natural flavours of the grape, but also in delivering a very elegant interpretation. SUPERIORE.DE

The world-famous Caiarossa is an extremely exciting blend of the Syrah, Cabernet Franc, Merlot, Cabernet Sauvignon, Petit Verdot, Sangiovese and Grenache varieties, with the rich, dark fruit flavours of the Cabernet grapes taking centre stage. On the nose, a beautiful first wave of dark fruits that never appear too ripe, which greatly benefits the elegance of the wine. The palate is very balanced and focussed with blackberries, cassis and slight hints of salty or rusty minerals. Caiarossa displays a good degree of elegance, not least due to its fine and taut tannins, and despite its density and complexity never comes across as opulent or even overloaded. SUPERIORE.DE

The name says it all – and rarely has a wine deserved its name so consistently. Quartz: a mineral that was formed in fire, has survived for millions of years and is still visible today in Terlan's soils as a fine speckle in the volcanic porphyry rock. 55 to 60 per cent quartz content, slightly acidic pH value, skeleton-rich sandy-loamy structure without carbonate – a soil that allows water to pass through, rations nutrients and puts the vine under controlled stress. This micro-stress is not a deficiency. It is intentional. It forces the plant to produce terroir-specific polyphenols, which give the wine the savoury tension for which Terlan is internationally renowned.

The grapes for this graceful Valpolicella Classico come from the Miniere vineyard on the Bertani Villa Novare estate, a south-west-facing site covering just 4 hectares and consisting of two terraces. Bright ruby red in colour, with a very clear nose of fresh fruit, cherry and wild berries, with elegant notes of white pepper. Spicy, juicy and flavoursome on the palate, with remarkable persistence, straightforwardness and great length! SUPERIORE.DE

Ravera is considered one of the great Grand Cru sites of Barolo – majestically situated on a south-west facing high plateau of Novello. G.D. Vajra's plots here lie at an altitude of 320 to 340 metres, where the vines are deeply rooted in the calcareous and clayey marl soils of the Sant'Agata formation. This geological mixture gives the wine its characteristic depth, firm structure and mineral signature. Ravera is famous for Barolo with cool precision, rich fruit and enormous ageing potential. The 2021 vintage offered picture-perfect conditions: a harmonious growing season with no periods of extreme heat, a long, sunny autumn with cool nights and a late, perfectly ripe harvest at the end of October. Fermentation took place gently with an extended maceration period to maximise colour, structure and aromatic finesse. The organic ageing for 30+ months in large Slavonian barrels was deliberately restrained in order to preserve the powerful but nuanced personality of the terroir unadulterated.

Tenuta Tignanello is located in the heart of Chianti Classico on the gentle hills between the valleys of the Greve and Pesa rivers and comprises 319 hectares of land, of which around 130 are planted with vines. The estate's vineyards include two jewels: Tignanello and Solaia, which are located on the same hill, on calcareous and schistose marl soils of marine origin from the Pliocene, and which benefit from warm days and fresh nights during the growing season. Two wines are produced from these vineyards, which many years ago had the potential to become the starting point of the Italian wine renaissance. Nothing has changed to this day.

Capitel Monte Olmi 2018 takes things to another level. It coats the glass with a deep purple glow and exudes a dark and seductive bouquet of redcurrants, sultanas, black liquorice and a hint of spiced citrus. The brooding, velvety texture is complemented by juicy acids and tart red fruits that drench everything they touch, leaving a complex layer of savoury spices, minerals and fine tannins. This wine is structured, long and full of character, but with a balance that will carry it for many years in the cellar. SUPERIORE.DE

In the heart of the Valdarno Superiore, where the ancient Via dei Setteponti inspired Leonardo da Vinci's immortal landscape studies, lies the Tenuta Sette Ponti – named after the seven bridges that have connected Arezzo and Florence since Etruscan times. Here, on 300 hectares between history and modernity, Dr Antonio Moretti Cuseri realised a visionary idea in 1999: to create a Tuscan Bordeaux style that combines international elegance with the soul of Tuscany. Oreno – named after the small river that crosses the tenuta in the clay-rich zone where the Merlot vines take deepest root – was born out of a passion for Bordeaux finesse. Moretti Cuseri, fascinated by his travels to Bordeaux, had existing vineyards grafted with Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot. While Merlot thrives in the clay soils, Cabernet vines find their home in gravelled terraces that offer perfect drainage and natural temperature regulation. The Petit Verdot completes the cuvée with spicy notes and intense flavours.
