“Bianco Secco” Veneto IGT 2024
In a winery that is world-famous for its monumental Amarone and Recioto, a dry white wine seems like a quiet provocation. But Giuseppe Quintarelli would not be Quintarelli if this Bianco Secco was not vinified with the same uncompromising dedication. The exceptional blend combines 70 per cent of the indigenous Garganega with Chardonnay, Sauvignon Blanc, Trebbiano and the rare Saorin – a white grape variety that only survives in a few vineyards in Valpolicella. The vines, which are at least thirty years old, are rooted in the characteristic limestone and basalt soils of Negrar, which give the wine that volcanic smokiness that distinguishes it from other Venetian white wines. After the harvest, a twelve-hour cold maceration takes place, followed by temperature-controlled fermentation. Ageing takes place in stainless steel on the fine lees, with regular bâtonnage for added texture and complexity.

While the world looks to Amarone and Recioto, Giuseppe quietly composes a wine that follows no category and yet embodies the entire philosophy of the house. An unusual blend, an "insolito assemblaggio", as the Italians say: 85 per cent classic Valpolicella grapes – corvina, Corvinone and Rondinella – meet 15 per cent Cabernet Franc, Cabernet Sauvignon, Sangiovese, Nebbiolo and Croatina. A vinological puzzle that combines Veneto with Piedmont and Bordeaux. Vinification follows the traditional Ripasso method: after three days of maceration and initial alcoholic fermentation, the wines undergo a second fermentation on the still-warm marc of the Amarone – a noble technique that gives structure, depth and complexity without achieving the power of an Amarone. This is followed by seven years of ageing in large wooden barrels, a patience that seems almost unimaginable today ...

"This is probably not ONE Valpolicella, but THE Valpolicella", wrote one critic about this wine – and hit the nail on the head. Giuseppe Quintarelli has created a monument from a DOC that was often dismissed as a light everyday wine. His method is radical: half of the grapes – corvina, Rondinella and Corvinone grapes from the vineyards in Negrar – in wooden crates for two months, as with Amarone. The other half is processed fresh. After the harvest, a three-day maceration with wild yeasts takes place, then the wine rests on the fine lees and undergoes a second fermentation. What follows is a patience that seems almost forgotten today: six years of ageing in large Slavonian oak barrels. Quintarelli only releases his wines when they are truly ready – never before.

But this wine is not a nostalgic gesture – it is the answer to one of the most difficult questions in viticulture: what does a perfectionist do in a year when nature does not give enough for an Amarone? 2016 was such a year. Cooler conditions, demanding ripeness – not an Amarone vintage by Quintarelli's uncompromising standards. So the family vinified Rosso del Bepi instead, that rare wine that is only produced in such years and shows what great producers can achieve with patience and mastery, even from difficult harvests. The grapes – 55% Corvina and Corvinone, 30% Rondinella, 15% Cabernet Sauvignon, Nebbiolo, Croatina and Sangiovese – are dried as for Amarone. Twenty days of maceration, followed by 45 days of slow fermentation. This is followed by 84 months in large Slavonian oak barrels, seven years of patience.

This is not a wine – this is a legend. Giuseppe "Bepi" Quintarelli, the "Maestro del Veneto", is considered the father of Amarone, the man who redefined an entire appellation over six decades and inspired generations of winemakers. His Amarone is only produced in exceptional years; in normal vintages, the "Rosso del Bepi" is produced, in weak years nothing at all. The 2018 marks one of these rare moments. The cuvée of 55% Corvina and Corvinone, 30% Rondinella and 15% Cabernet Sauvignon, Nebbiolo, Croatina and Sangiovese follows a ritual that extends over many years: half of the grapes are processed fresh, while the other half dries for five months in ventilated chambers until the end of January, losing up to 30% of its water content and concentrating sugar, flavours and structure. Botrytis – noble rot – is deliberately encouraged, a risky endeavour that only masters can master. Pressing is followed by 20 days of maceration, then 45 days of slow fermentation with wild yeasts. What follows is a patience that seems almost forgotten today: seven years of ageing in large Slavonian oak barrels.

While the regular Amarone is released after seven years of barrel ageing, this Riserva spent over eight years in large Slavonian oak barrels before being bottled at the end of 2023. An additional year of patience for the absolute peak. The cuvée of 55% Corvina and Corvinone, 30% Rondinella and 15% Cabernet Sauvignon, Nebbiolo, Croatina and Sangiovese undergoes the legendary ritual: five months of appassimento until the end of January, deliberate promotion of botrytis, twenty days of maceration, 45 days of slow fermentation with wild yeasts. What follows is a maturity that combines monumentality with elegance. The 2015 presents itself as a warm, sunny vintage with 16.5 percent alcohol and three to four grams of residual sugar per Liters, which lends additional volume and depth to the final.

In the house of Quintarelli, each wine is given the time that is actually needed to later live up to the traditional name. In 60 years, thanks to his many secrets of success, the founder Giuseppe Quintarelli formed one of the most legendary wineries in Veneto. Since then, nothing has been left to chance. The commitment to quality includes every single step of production: from the vines to the oak barrels to the corks, the selected bottles and the hand-written label templates.
Giuseppe died in 2012 and the founder's considerable legacy is carried on today with the same passion by his daughter Fiorenza, son-in-law Giampaolo and grandsons Francesco and Lorenzo. North of Verona, narrow roads wind through the countryside to the small, well-hidden winery in the village of Negrar. A few hectares of vines thrive here in the best sites of the Valpolicella area on limestone and basalt soils.
The list of grape varieties planted is long, but yields are low: thanks to great skill, the Corvina, Molinara, Rondinella and Corvinone varieties produce outstanding Valpolicella Classico Superiore, unique Recioto della Valpolicella and particularly precious Amarone. For this purpose, selected grapes dry for months until fermentation in well-ventilated drying chambers (appassimento method) and thus experience a unique concentration of aromas.
The winery is considered one of the first to also use international grape varieties in the Valpolicella area and created great wines right away. In addition to the noble red wine selection, autochthonous white grape varieties such as Garganega, Trebbiano and Saorin meet a small amount of Chardonnay and Sauvignon Blanc for the Bianco Secco IGP and the sweet Amabile del Cerè.
Giuseppe Quintarelli was a perfectionist in every sense of the word: the great "Maestro del Veneto" stipulated that his Amarone della Valpolicella should be produced only in the best years. His family says they are all obsessed with wine quality, and it is against this background that it becomes clear why these wines are still in a league of their own today.
Thanks to elaborate and largely manual production methods, the Guiseppe Quinatrelli family winery brings amazingly fresh, full-bodied and long-lasting wines to the market.
