Firmly anchored in La Morra, Elio Altare has been vinifying a Barolo in Serralunga d'Alba on a rented plot for a few years, vinified and bottled separately. Serralunga d'Alba. Anyone who hears this name knows that this is where the masculine, powerful side of Barolo is born. Not the Burgundian elegance of La Morra, not the finesse of Barolo – but structure, tannin and longevity. The Cerretta vineyard is located on the south side of Serralunga, surrounded by legendary crus such as Lazzarito and Vigna Rionda. Sandstone, limestone, chalk – a terroir that gives Nebbiolo strength and depth. Elio Altare has been cultivating 20-year-old vines with a southern, south-eastern and south-western exposure here for decades. The "Vigna Bricco" – the highest point of the vineyard, where the sun shines the longest, where the grapes reach perfect ripeness.

The grapes of UnoPerUno come from the cru vineyards Arborina in La Morra, Cannubi in Barolo, Pernanno in Castiglione Falletto, Sarmassa in Barolo and Cerretta in Serralunga d'Alba and are individually destemmed. As a result of this intensive manual work, only 1,300 bottles of this exceptional wine are sold in well-stocked specialist shops, and only in the best vintages. Due to the manual destemming, no green overtones of the stems get into the mash, making the tannins silkier and creamier than in the conventional process. The result is something to be savoured: UnoPerUno is of high fruit intensity, has an incredible depth and structure and is a benchmark of the appellation every year in its purity and clarity on the nose and palate. It was spring 2010, a family lunch at Altare. Elio opens a bottle of Larigi 1986 – a Barbera from a notoriously difficult vintage, characterised by hail and rain, one of the last bottles from the family library. The expectations? Low. The result? Spectacular. Antonio Galloni later said of this wine: "The fruit remains lively and incredibly pure right through to the long, polished final. The balance is simply superb." Why was this wine so exceptional? Because in 1986, in a vintage destroyed by hail, Elio decided to destem every single berry by hand – only the few perfect berries went into the mash. Two barriques, 600 bottles, one great Barbera. Silvia Altare remembers this lunch and the idea that came from it: "Why don't we try this with Nebbiolo? And why not with our historic family vineyard Arborina?" The 2010 harvest was imminent and the grapes were perfectly ripe. The goal? Maximum purity of the fruit – no stems, no leaves, no unwanted berries, no insects. Because Nebbiolo is difficult to destem completely: The stems are fragile, even the most expensive machines cannot work as precisely as the human hand. 26 days of work, three barriques, 900 bottles – the first UnoPerUno was born. 2010 was never released, it was the first attempt ...

Cannubi comes from one of the most legendary Barolo vineyards of all. Located between Barolo and La Morra, this gently rolling hill rises to an altitude of around 290 metres. The soils are a complex mix of calcareous marl, sand and clay, giving the wines an unrivalled combination of finesse, aromatic depth and silky structure. The south to south-east exposure ensures optimal ripeness without overloading the character of the site. The 2020 vintage offered almost ideal conditions: balanced vegetation, warm but not excessive summer temperatures and cool nights before the harvest. The grapes were harvested by hand at the beginning of October, followed by gentle fermentation and careful ageing in barriques, in keeping with the elegant, modern style of Altare.

Cannubi. Three syllables that sound like an anthem in the world of Barolo. The most famous vineyard in the Langhe, the heart of the municipality of Barolo, the absolute king among the crus – so say the insiders. Almost one hundred per cent white clay, gently rolling hills between Barolo, La Morra and Novello. A site that does not possess the masculine power of Serralunga or Castiglione, but instead shows the finer, more Burgundian side of Nebbiolo: red fruit, finesse, harmony. Here, where Sandrone and Scavino also make their best wines, Silvia Altare has been cultivating just 0.25 hectares since 2011 – two leased plots that only fill four barriques. Less than 1,500 bottles per year. A privilege for a few.

UnoPerUno is not just another single-vineyard Barolo, but a vinification manifesto: every single Nebbiolo berry is separated from the stalk by hand after the grape harvest and placed intact in the fermentation barrel. This meticulous work – almost unique in the region – preserves the integrity of the fruit and gives the wine a rare fineness of tannin.
