In the Conca d'Oro, the golden amphitheatre of Panzano, around 400 olive trees per hectare grow alongside the famous Sangiovese vines. Giovanni Manetti, the mastermind behind the legendary Flaccianello della Pieve and president of the Chianti Classico Consortium, applies the same precision to his olive oil as he does to his wines. The cuvée of 80% Correggiolo and 20% Moraiolo is harvested by hand and gently pressed on the same day – freshness and fruitiness are thus fully preserved. Fontodi has not used herbicides or pesticides since it was founded and has been certified organic since 2008.

Pinot Nero Rosé Vigneti delle Dolomiti IGT 2025
While Lagrein traditionally dominates rosé production in South Tyrol, Franz Haas goes his own way. As a Pinot Nero specialist who has vinified and meticulously documented 592 different Pinot Nero versions in over three decades, he devotes the same attention to his rosé. The vines for this wine grow on Guyot vines at extreme altitudes of between 700 and 750 metres – significantly higher than usual for rosé. Grapes of exceptional quality ripen on dolomite weathered rock, with a high planting density and selected clones. Only 5,000 bottles are produced annually. Vinification consistently follows the white wine method: after destemming, the grapes are pressed directly, without maceration. The must ferments at a controlled temperature in stainless steel, undergoes malolactic fermentation and matures for several months before being bottled. This purist approach preserves the freshness and elegance that can be expected from Pinot Nero at altitude.

Bruno Giacosa was convinced that great wines begin in the vineyard – and the best way to access the vineyard is through trust in experienced farmers. Whilst other estates bought land, Giacosa spent decades building up a network of reliable grape suppliers whom he knew better than their own accountants. From these relationships emerged the Barbaresco and Barolo wines that are now among Italy’s most iconic. And from the same relationships comes the Dolcetto. The grapes come from selected vineyards in Neive, Neviglie, Treiso and Alba – the heart of the Langhe, which Giacosa had known since his youth at the family estate. Since Bruno’s death in January 2018, his daughter Bruna has been running the estate, guided by the same conviction: no intervention that obscures the grape’s identity. The Dolcetto is produced entirely without the use of wood: 7 to 10 days of maceration in steel, full malolactic fermentation, 6 months in steel, one month in bottle.

Solicchiata is located on the northern slope of Mount Etna, where the volcano still gives everything to its soil – minerality, warmth, tension – without imposing the glowing ripeness of the southern flank. The Faro family founded Pietradolce here in 2005, on 35 hectares between 600 and 900 metres above sea level. The credo: exclusively indigenous varieties, separate vinification of the individual vineyards, as little intervention as possible. The Etna Bianco is the gateway to this universe – and at the same time an unequivocal commitment. 100 per cent Carricante, Alberello, 800 metres above sea level. The small, museum-like island of Mozia in the Marsala lagoon is a production site of unrivalled uniqueness. It is a marine ecosystem that has always been linked to the vineyard. The English, who came to Marsala at the beginning of the 19th century and recognised its great potential, initiated the first planting. The vines are cultivated naturally using the Gobelet system with natural irrigation. The grapes are harvested in crates, brought to the mainland in flat-bottomed boats and then transported to the Regaleali winery in air-conditioned lorries to guarantee their aromatic integrity.

The same hills, the same family, the same philosophy – what applies to the wine also applies to the oil. Around a thousand olive trees grow on the slopes of Monti in Chianti, mainly Correggiolo with some Moraiolo in between, in mixed cultivation with fruit trees according to old tradition. Marco Ricasoli Firidolfi harvests by hand before the olives are fully ripe – lower yields, but acidity levels below 0.2% and a wealth of polyphenols. The olives are pressed on the day of harvest, under nitrogen, to prevent any oxidation.

107 hectares. That's all. Across the entire Valdobbiadene Denominazione, which stretches across 15 municipalities and thousands of hectares of steep slopes, there is exactly one hill that has been demarcated by its own regulations since 1969 – a 'golden pentagon', as the locals call it, whose plots measure on average barely two tenths of a hectare. Cartizze is the grand cru of Veneto. Andreola sources his grapes from the "Cartizze Alto" sub-region – the limestone-rich ridge of the hill, where marl and sandstone alternate, the soils are flat and rich in minerals, and the perfect south-facing aspect balances the "Alta Collina" climate. Temperatures remain mild and stable – cooler than in the valley floor, warmer than the exposed steep slopes surrounding it. It is precisely this balance that produces a Glera of exceptional ripeness and aromatic complexity. The grapes come from long-standing contract growers who have been supplying Andreola for generations – because Cartizze is not a vineyard you can simply buy. If you're lucky, you might cultivate a fraction of it.

Giacosa grows Dolcetto on the Falletto – that cru in Serralunga d'Alba which seems made for Nebbiolo and for wines that take decades to develop. No other estate in Piedmont would do this so matter-of-factly. The monopoly in Serralunga, supplemented by plots in Lirano di Sinio, provides the Dolcetto with soils otherwise reserved for Barolo – rich in limestone, structurally robust, with a minerality that has characterised this site for generations. The vinification is restrained: 8 to 10 days’ maceration in wood, full malolactic fermentation, then 6 months in steel, one month in bottle. The south-western and western exposure, the soils of Serralunga – all of this shapes the character without anyone needing to intervene.

Since the Middle Ages, the Abbey of San Giovanni in Venere has overlooked the Abruzzo coast – that enchanting stretch of land between the Apennines and the Adriatic, which Giuseppe D’Annunzio sang of and which is now known as the Costa dei Trabocchi. Surrounding this monastery lie the olive groves from which Ursini produces its most famous oil: around 80 independent olive growers from Fossacesia, Rocca San Giovanni and Mozzagrogna – each with their own trees, their own harvest, their own contribution. The name Terre dell’Abbazia pays homage to this community and to Pierino Ursini, the family founder and passionate pruner who set everything in motion. Seven varieties – gentile di Chieti, Cucco, Leccino, Olivastra, Crognalegno, Ascolana and Dritta – in proportions determined by the character of each vintage. Cold-pressed, stored in stainless steel tanks, naturally clarified (settled) before bottling.

Rissoa is the Italian name for a sea snail, elegantly shaped, which has been at home on the Tuscan coast since the Pleistocene. Depicted on the label, it conveys the most important message: this Rosato is dedicated to the sea. Campo di Sasso lies on sandy and gravelly soils of medium texture, 50 metres above sea level, with the Tyrrhenian Sea always within earshot. Predominantly Cabernet Franc, followed by Syrah. Hand-harvested in the second half of August, in the cool early morning hours. The same meticulous vinification process as for the Occhione: cooling to 8–10°C, gentle pressing of the free-run juice only, fermentation in stainless steel at a controlled temperature, 30 days on the fine lees with daily bâtonnage, followed by a further two months in stainless steel.

The family-run Andreola winery in Col San Martino was founded in 1984 by Nazzareno Pola in the heart of the Valdobbiadene wine-growing region. What Felsina has achieved with Sangiovese in Chianti Classico has been transferred to the olive grove since 2002: uncompromising quality, respect for the terroir, traceability from the harvest to the bottle. The idea behind this has a famous name: "Olio secondo Veronelli", named after Luigi Veronelli, the legendary wine critic and close friend of the estate, who elevated the connection between oil and origin to a philosophy. The olive groves extend over three areas of the 400-hectare estate: Fèlsina, Pagliarese and Boschi – each with its own microclimate and soils. Four varieties grow here: Leccino, Pendolino, Moraiolo and Raggiolo (also known as Correggiolo in Chianti). All four are combined for the cuvée – a reflection of the territory in an extra virgin. The olives are harvested by hand in October and November, when they are still green to purple and their polyphenol content is at its highest. They are pitted in the company's own mill – this method is called "denocciolato" and only the flesh is pressed, not the bitter stone. The result is an oil of remarkable purity.

“Pétracine” Riesling Langhe DOC 2025 (BIO)
There are said to be vineyards in Piedmont that do not like Nebbiolo. The Vigneto Fossati in the highest location in the municipality of Barolo is one of them: gravelly-sandy soil, morning sun exposure, 420 to 450 metres. Aldo Vajra planted it with Riesling in 1985 – out of conviction, which sounded rather provocative at the time. A second vineyard chapter was added: the Cascina Bertoni in Sinio, exposed to the north-east, calcareous and homogeneous. Pétracine, whose name means "Riesling" in Piedmontese, comes from both vineyards – and at the same time sounds like stone and roots. The clonal vines come from the Rhine, the Moselle, the Palatinate and Alsace: austere German minerality meets Alsatian creaminess and Piedmontese terroir. Gentle pressing, short cold clarification, 15 to 20 days fermentation in steel, ageing in stainless steel until spring – no intervention that does not serve the precision of this rare wine.
