In the Conca d'Oro, the golden amphitheatre of Panzano, around 400 olive trees per hectare grow alongside the famous Sangiovese vines. Giovanni Manetti, the mastermind behind the legendary Flaccianello della Pieve and president of the Chianti Classico Consortium, applies the same precision to his olive oil as he does to his wines. The cuvée of 80% Correggiolo and 20% Moraiolo is harvested by hand and gently pressed on the same day – freshness and fruitiness are thus fully preserved. Fontodi has not used herbicides or pesticides since it was founded and has been certified organic since 2008.

Giovanni Manetti's white exotic wine from the legendary Conca d'Oro in Panzano: "È per divertirmi", something for your own pleasure, as the patron of Fontodi likes to say with a grin. While his Sangiovese wines enjoy worldwide fame, one of the most beautiful Tuscan white wine rarities is made from 100% Sauvignon Blanc from the La Rota vineyards. The north-west facing plot has been strategically chosen: Here, the vegetation grows more slowly and the grapes are spared the intense summer heat of Tuscany. This organically certified rarity is produced in only 8,000 bottles per year. After manual harvesting, temperature-controlled fermentation takes place in stainless steel tanks, with part of the wine being vinified in amphorae and untoasted barrels. The six-month maturation on the lees in steel tanks preserves the wine's characteristic purity and freshness.

Lamole. Giovanni Manetti has long regarded this zone as one of the most distinctive in Chianti Classico. At an altitude of 620 metres, far from the heart of the region, a few plots of old Sangiovese vines survived the wave of deforestation in the 1970s. Giovanni took cuttings from these Alberello vines from the 1920s to grow his own vines in Panzano: the foundation for Fontodi's quality. This wine is made from seven hectares of Macigno sandstone, whose loose, permeable structure ensures elegance and finesse. Cool nights, long growing season, south-south-west exposure. The sandy soils give the Sangiovese a lightness that is clearly different from the powerful wines from Panzano. Vinification in concrete, certified organic.

Giovanni Manetti, president of the Consorzio Chianti Classico, vinifies exclusively hand-picked grapes in stainless steel tanks with indigenous yeasts on the chalky Galestro soils of his 170-hectare Tenuta. After three weeks of maceration, the wine matures for 18 months in French oak barrels of various sizes.

What began as a Riserva with ten per cent Cabernet Sauvignon has become a monument to the art of pure Sangiovese over the years.

Directly in front of the cantina, at an altitude of 450 metres and facing south-west, lies the vineyard that has defined Fontodi's claim to Sangiovese since 1985. Three plots, planted between 1963 and 1973, are united by a special geological feature: slaty Galestro soils that break up into characteristic platelets on the surface. Giovanni Manetti recognised early on that this soil structure gives the Sangiovese the dark fruit and volume on the mid-palate that distinguishes it from the limestone-dominated sites. The name "Sorbo" refers to a local Tuscan fruit – dry, tannic, almost like grapes themselves. What began as a Riserva in 1985 was elevated to Gran Selezione in the 2011 vintage, when the new classification was introduced in Chianti Classico. Since 2012, 100% Sangiovese, previously blended with small proportions of Cabernet Sauvignon.

A journey through time on five hectares: Giovanni Manetti is a man who knows how to unravel historical secrets. When he discovered drawings from the 15th century in the archives of the University of Florence that showed that the hill of San Leolino was once completely planted with vines, this was the key to an extraordinary revitalisation project. Where for centuries there had only been olive trees – with the exception of a small plot from the 1970s –the Terrazze di San Leolino were created anew. The terroir tells a different story to the famous Vigna del Sorbo: here, at an altitude of 450 metres, it is not the slatey Galestro that dominates, but the calcareous Alberese soil. This geological peculiarity gives San Leolino its unmistakable character – mineral, salty, with a freshness that immediately reminds the nose of crushed stones and earthy notes.

San Leolino was already considered a cru site 200 years ago. Above the thousand-year-old Pieve, the Romanesque chapel that has been documented since 982, terraces run through the upper part of the Conca d'Oro. In the 15th century, Giovanni Manetti found drawings in the University of Florence that proved that this slope was once completely planted with vines. What followed was a rebirth: the terraces were renewed, 4.5 hectares at an altitude of 450 to 500 metres, on Alberese limestone. These soils are fundamentally different from the slatey Galestro of the Vigna del Sorbo – here, hard limestone dominates, giving freshness, brightness and mineral precision. The pandemic years gave Giovanni the leisure to walk through his vineyards, to reflect. He realised that this parcel has its own identity, a terroir that calls for separate vinification. The first vintage was 2019, the fourth now 2022. Production remains small: only 5,000 bottles.

1981 – a year that would change the Italian wine world forever. Giovanni Manetti was barely twenty when, together with the legendary OenologistFranco Bernabei, he created a wine that broke all the rules. "Flaccianello and I grew up together," says Manetti today about that first vintage, which was supposed to be a one-off – until 1982 came along. The revolution was both simple and radical: 100 per cent Sangiovese. At a time when the Chianti Classico regulations stipulated that at least ten per cent white grapes had to be added, this was an affront to tradition. What began as a rebellious table wine became an icon of the Supertuscan movement and inspired a whole generation of winegrowers to throw off the shackles of rigid regulations. The name itself tells a story: Flaccianello della Pieve is named after the small Romanesque Pieve di San Leolino, which towers majestically over Panzano. Until 2000, the grapes came from a single vineyard of the same name. Then Manetti took the next evolutionary step: a blend from the best parcels of the entire estate, mainly three vineyards near the town, on the dense, stony soils of the Conca d'Oro.

Giovanni Manetti was just twenty when he and Oenologist Franco Bernabei pressed their first vintage in 1981: a pure Sangiovese, at a time when the rules of Chianti Classico still stipulated a proportion of white wine. What began as an act of rebellion became a legend. Flaccianello della Pieve, one of the first monovarietal super Tuscans, which proved that Sangiovese can achieve world class without blending. The name comes from the original vineyard, but since 2001 Flaccianello has been a selection of the best grapes from three plots on the estate, especially those at the highest altitudes at 480 metres, where Pietraforte soils dominate. This conglomerate of sandstone varieties gives the wine the freshness and structure that sets it apart from the rest.

What do the dome of Florence Cathedral and some of Tuscany's best red wines have in common? The Manetti family of producers. Today, the Manetti family is still a leader in terracotta production. While older brother Marco looks after this old tradition, Giovanni Manetti has led the Fontodi winery to new splendour. He began helping out at the age of 16 and planted his first vines in the legendary vineyards below Panzano.
Probably the most famous road in Tuscany is the Chiantigiana, which connects Florence with Siena. Around 70 kilometres of curves, mostly through vineyards. Panzano lies roughly in the middle of the route. High up on the crest of a huge, south-facing hollow in the landscape that looks like an oversized clam full of vines. The locals call it "Conca d'Oro", the golden shell. However, this comes from the time when wheat was still grown here, because the ripe wheat made the whole natural amphitheatre glow golden in the glow of the afternoon sun. Today, it is a lush green of the vines that only glows golden in late autumn when the Sangiovese leaves turn colour. The most beautiful view is when you come from the south and drive up the serpentines. Right where every wine lover stops to take his photo of Panzano, the entrance to the Fontodi winery branches off to the right on a hill with a magnificent panoramic view.
An impressive site, for the Chianti Classico region quite high up and relatively steep, up to almost 500 m above sea level. One of the best sites for Sangiovese, according to Giovanni Manetti and others. Sangiovese needs a lot of sunlight during the day, good ventilation and cool nights to become delicate and elegant. That is perfectly given here. In addition, the soil is made of Galestro, as the calcareous marl is called here. It is interspersed with ancient, brittle slate, which allows the vines to take root deeply and the wines to become mineral. It is not for nothing that Fontodi's flagship wine, Flaccianello, is always awarded as one of the very best single-varietal Sangiovese in Italy.
Giovanni Manetti could probably also be a diplomat. His charming, open manner has made it possible to create a model project in Italian viticulture: "Panzano sostenibile" - sustainable Panzano, because if you do biodynamic cultivation, it makes sense if your neighbours do it too" Manetti smiles and puts his light under a bushel. Anyone who knows Italy knows how difficult it is to get several entrepreneurs to join forces. Today, practically all the wineries with over 500 ha around Panzano are organic or in conversion. This was probably also one of the reasons why Giovanni Manetti was elected president of the Consorzio Chianti Classico, which is why there has been a clear trend towards organic cultivation throughout the Chianti region in recent years.
In addition to the laborious work in the vineyards, which now occupy 80 hectares of the total 130 hectares of land, Manetti built a new cellar, which, on three levels underground, allows the grapes to be processed on a natural incline without pumps. State-of-the-art equipment, from steel and wooden fermentation racks to various sizes of wooden barrels, is a matter of course to allow each variety and each site to mature specifically. Part of it are terracotta amphorae from his brother's production. These are still experiments in small quantities, but the quality has already aroused the curiosity of many critics. The quality fanatic also leaves nothing to chance when it comes to oenological support, because none other than Franco Bernabei has been a partner for many years, meanwhile supported by his son Marco.
In addition to Chianti Classico, Vigna del Sorbo, the Gran Selezione of Chianti from the single vineyard, and Flaccianello della Pieve, the three top wines made from Sangiovese, which have already achieved up to 100 Parker points, the Syrah Case Via with its fine spiciness always attracts attention. The Pinot Nero of the same name is probably also one of the highest-rated in the region, and the Sauvignon blanc Meriggio is a fine white counterpart when it should be fish instead of bistecca.
