Lezér means "light" and so it is – in the most delicate sense. Light ruby red in colour, red berries and an interesting hint of violets on the nose. Smoke, freshly cut wood and a fine creaminess on the palate. In Campo Rotaliano, this geological treasure chest between the peaks of the Dolomites, Elisabetta Foradori has been rewriting Teroldego history for four decades. What began as a family wine in 1960 is now the epitome of autochthonous excellence. The grapes come from twelve hand-picked plots on nine hectares, with their roots in alluvial sand and dolomite limestone. Fifteen different Teroldego biotypes, developed through years of mass selection, reflect the diversity of this unique terroir. Biodynamic Demeter cultivation since 2002 allows the indigenous grape variety to develop its original identity. Spontaneous fermentation in cement tanks, partly with whole grapes, preserves the lively fruitiness. Twelve months of ageing in a combination of cement and oak give the wine structure without dominance.

In the gentle hills above Trento, where the Dolomites majestically watch over the Adige Valley, lies a vineyard called Fontanasanta, the "Holy Spring". Here, at an altitude of 400 metres and on calcareous clay soils, Elisabetta Foradori preserves one of Trentino's most precious treasures: the Nosiola, an ancient indigenous grape variety that was once at the heart of the region's wine culture but is now threatened with extinction. Only three hectares are dedicated to this rare variety. Nosiola, whose name is derived from the dialect word "nosela" for hazelnut, requires patience and sensitivity. In wet Alpine years, it can be capricious, but under Elisabetta's biodynamic guidance, it unfolds its full aromatic complexity. The vinification process follows the revolutionary Foradori philosophy: after hand-picking, the de-stemmed berries are placed in Spanish tinajas, where they ferment on the skins for eight months – a process that gives the Nosiola its characteristic golden yellow colour and structural depth. A short maturation in used acacia barrels rounds off the profile.

The name says it all: where Sgarzon embodies youthful freshness, Morei reveals the deep, mineral soul of this extraordinary grape variety. In the gentle hills above Trento, where the Dolomites majestically watch over the Adige Valley, lies a vineyard called Fontanasanta, the "Holy Spring". Here, at an altitude of 400 metres and on calcareous clay soils, Elisabetta Foradori preserves one of Trentino's most precious treasures: the Nosiola, an ancient indigenous grape variety that was once at the heart of the region's wine culture but is now threatened with extinction. Only three hectares are dedicated to this rare variety. Nosiola, whose name is derived from the dialect word "nosela" for hazelnut, requires patience and sensitivity. In wet Alpine years, it can be capricious, but under Elisabetta's biodynamic guidance, it unfolds its full aromatic complexity. The vinification process follows the revolutionary Foradori philosophy: after hand-picking, the de-stemmed berries are placed in Spanish tinajas, where they ferment on the skins for eight months – a process that gives the Nosiola its characteristic golden yellow colour and structural depth. A short maturation in used acacia barrels rounds off the profile.

Sgarzon: In the ancient dialect of Campo Rotaliano, it means "young shoot", "sapling" and embodies the essence of youthful vitality and the impetuous vigour of new beginnings. This name is the programme for a Teroldego that revolutionises conventional ideas about this powerful grape variety. Just one kilometre from the famous Morei vineyard as the crow flies, but completely different in character, is the 2.5-hectare Sgarzon vineyard. Here, the Noce River has deposited sandy sediments over thousands of years, creating a cooler, more open microzone. While other Teroldego vineyards are already harvesting their grapes, the Sgarzon berries ripen a week longer – a decisive difference that gives this wine its exceptional finesse.

Between light and shade, between strength and elegance, sometimes only a few hundred metres decide the character of a wine. Less than ten minutes' walk from Sgarzon, but geologically in a different world, lies Morei, "the dark one" in the old Trentino dialect. Here, on the warmer, rockier terrain of Campo Rotaliano, Elisabetta Foradori has been writing another exciting chapter in the Teroldego story since 1984. The name says it all: where Sgarzon embodies youthful freshness, Morei reveals the deep, mineral soul of this extraordinary grape variety. The 2.5-hectare plot rests on the ancient riverbed of the Noce, where thousands of years of erosion have left behind a mosaic of pebbles, sand and dolomite rock. This stony matrix stores the heat of the dolomite sun and releases it to the vines at night – a natural heat reservoir that gives Teroldego its characteristic depth and concentration.

The complex red drops of Elisabetta Foradori impressively reflect the philosophy of the highly respected winemaker. They combine typical regional grape varieties with the specific character of the vineyards and biodynamics. As unbending as she is experienced, the strong-willed landowner has never been satisfied with the favourable growing conditions of the Trentino. Rather, she has tirelessly studied and experimented with new methods in her vineyards and cellars that deviate significantly from the usual and support the rhythm of nature. Elisabetta Foradori, the rare Teroldego grape variety, native only to Trentino, has clearly become the most important grape variety in the vineyard and has helped to achieve international recognition.
As different as she works, as different is her retreat. Quiet and consistent. Her son Emilio Zierock has been responsible for vineyards and cellars since 2012. It was not clear for a long time that he would slip into the big shoes of his famous mother, but he first studied philosophy in Germany. Not quite inappropriate, because the management "FAVO - Foradori+Animali+Viticultura+Ortaggi" also a kind of philosophy. "We want to produce more than just wine. In this sense we try to close the cycle: human, animal and plant." Land in Brentonico (behind Monte Baldo in the south of Trentino) has already been bought, where the family wants to realize this vision together. Emilio and his brother Theo will take care of the winery in the future. Elisabetta Foradori takes care of the new start-ups: cows, cheese and vegetable cultivation, as well as the Ampeleia vineyard in the Maremma, which she also runs very successfully with a friend. The wines from this biodynamically cultivated winery are naturally to be found in our Tuscany programme (Maremma).
Surrounded by ancient stone walls, the Foradori Winery, certified by ICEA and Demeter since 2009, is located in the picturesque small municipality of Mezzolombardo. After the early death of her father, the exceptional Trentino winemaker took over her parents' vineyard at a young age. It prevailed despite the Cabernet wave, which was high at that time, and opted for the local tradition. The wonderful Teroldego ripens between rocky walls on lean, stony alluvial soils of the Campo Rotaliano in high plant density with low yields per hectare. For the white wines Nosiola and Manzoni Bianco, the Foradori family has leased plots in the hills northeast of the city of Trento.
Despite many years of experience and great success, the fashion trends are categorically rejecting "Grande Dame of the wines of Trentino" (Gambero Rosso) and her son Emilio are constantly refining the wines. Elisabetta Foradori decided years ago to ferment wines from the Morei, Sgarzon and Fontanasanta sites separately in clay vessels from Spain. Emilio consistently goes one step further. He eliminated practically all barriques and built his own cellar only for these amphorae. The heart of the old vaulted cellar are large wooden barrels made of various types of wood and from various renowned coopers, as well as a few steel tanks and concrete cisterns. In this way Emilio Zierock can choose for each vintage and for each individual vineyard the vessel in which he will allow the best maturation of the wine without having to intervene.
