One hundred and forty months. Almost twelve years in complete darkness, resting on the lees, in the historic vaulted cellars of Canale d'Alba, where wines have been maturing to perfection since 1878. No other Italian sparkling wine takes so much time. No other demands so much patience – and rewards it so overwhelmingly. Zero140 is the culmination of a journey that Enrico Serafino began in 1991 as a founding member of the Alta Langa project. In 2004, they dared to do the unthinkable with the first "Zero": a Pas Dosé from Piedmont, without any added dosage, without any concession to favour. In 2014, Gambero Rosso named this uncompromising purist the best Italian sparkling wine of the year. But the 140 goes much further – it triples the ageing time and makes time itself the protagonist.
The concept behind it is as poetic as it is precise: twelve vintages mature simultaneously in the underground cellars, differentiated by colours that are assigned to the planets of our solar system. The 2010 bears the black colour of Pluto – the outermost, the most mysterious. The bottle itself does without a label; only a fossil from the Piedmont Tertiary period adorns it as a medallion – geological time, captured in the glass. 85% Pinot Nero and 15% Chardonnay from altitudes above 450 metres, where chalky soils and alpine coolness give the base wine its mineral tension. Whole-cluster pressing under nitrogen, temperature-controlled fermentation in stainless steel, then the long journey in the bottle. 140 months later, after a late sboccatura: zero grams of residual sugar. Pure terroir.
Pale gold shines in the glass. The perlage? No longer perceptible as individual bubbles, but as a velvety stream that revitalises the wine from within – the gift of time. A kaleidoscope on the nose: poached pear, peach with roasted almonds, warm brioche, a hint of saffron, plus the characteristic mineral reduction that speaks of class. An almost unreal texture on the palate – creamy and yet vibrant, buttery and yet taut, with an acidity that still sparkles after more than a decade. The final stretches into eternity, carried by salty minerality and echoes of honey and almonds. This is not a sparkling wine simply for toasting.
