The first year of production of the single-varietal Merlot Clos Roareti dates back to 2004. The grapes are harvested from the 2 hectare historic Rovereti vineyard in Negrar. In this 100-year-old vineyard, which is surrounded by equally old walls, Merlot has been cultivated since the 1990s and is perfectly adapted to the climate and the red clay soil. The palate is rich and full-bodied with complex and very aromatic notes. Maturation in oak barrels gives this wine its special flavour and certain opulence. SUPERIORE.DE

It could hardly be more autochthonous: this excellent wine from the Nerello Mascalese grape comes from the hotspot on the east coast of Sicily, from the slopes of Mount Etna. The second fermentation takes place in the bottle, where the spumante matures on the yeasts for between 24 and 30 months – a period of silent transformation that gives it its characteristic creaminess and complexity. Bucine, Valdarno di Sopra – where the Arno meanders through gentle hills between Arezzo and Florence, Fattoria Petrolo lies between 250 and 500 metres above sea level. In 1988, Lucia Bazzocchi Sanjust wanted a wine that told the true identity of this terroir: the "Château" of Petrolo, a tribute to the centuries-old Tuscan tradition of combining French varieties with Sangiovese. As early as 1834, Giorgio Perrin, agronomist of Swiss origin and owner of Petrolo, reported in the "Giornale Agrario Toscano" that it was customary in Chianti to blend "uve francese" with Sangiovese, not to change the quality, but because the terroir won out over the grape varieties.

Mimmo is a triumvirate of the wonderful autochthonous grape varieties Nebbiolo, Vespolina and Croatina from vines up to 100 years old on Montalbano and Santuario porphyry soils at an altitude of 500 metres. The Nebbiolo parcels come from the same vineyards as the cult wine Boca and are harvested and processed according to the same quality principles. The division between Boca and Mimmo is made by tasting after two years of ageing in large wooden barrels.

Anyone who underestimates Pinot Bianco simply hasn't drunk a good one. The variety loves windy locations, poor marl soils and cool nights – all characteristics that the Collio Goriziano offers in abundance. Schiopetto cultivates it on the Ponca slopes of Capriva, where small, compact grapes ripen with golden-coloured berries that need no support in the cellar. A special feature of the vinification process: the wine is fermented with Pied de Cuve – a proprietary yeast from our own vineyards. This keeps the fermentation authentic and the flavour close to the origin. Steel, eight months on the fine lees, no intervention.

Schiopetto has been producing Pinot Grigio since 1968 – long before it became Italy's best-selling mass-produced white wine (unfortunately in many other regions) – and the Rotolo family has never forgotten what it can really do: Depth, juiciness, mineral tension. On the Ponca hills of Capriva del Friuli, in marly soils of Eocene origin, the variety finds a soil that does not allow it to be arbitrary. Gentle pressing, short sulphur-free decanting, fermentation in steel at a controlled temperature – eight months on the lees. No wood, no detours, everything focussed on the Ponca.

When Giuseppe Russo talks about his rosato, his eyes light up with the same intensity as the powder-pink glow that settles over the Contrada San Lorenzo in the early days of October. Here, where eighty-year-old Nerello Mascalese vines are rooted in volcanic soil at an altitude of 700 metres, one of Italy's most elegant rosés is created – born from the perfect balance between timing and technique. The magic begins with the early manual harvest, when the grapes have that crystalline freshness that only the cool Etna nights can give. Giuseppe uses a traditional vertical press in which the whole grapes are gently pressed for five hours – long enough to extract the delicate colour, short enough to preserve the mineral elegance. No maceration on the skins, no artificial intervention: just the natural connection between grape and volcanic terroir. After spontaneous fermentation with indigenous yeasts, the wine matures for six months in stainless steel, where it develops its characteristic finesse.

Pinot Bianco reveals its aristocratic side at the high altitude of Zuc di Volpe. The privileged single vineyard site near Togliano offers ideal conditions for this elegant grape variety: cool nights, calcareous soils and excellent aeration, which enables slow, balanced ripening. Maturation in stainless steel tanks with an extended maturation period on the fine lees preserves the clear fruit and at the same time lends depth and structure. But with Carjcanti, Gulfi shows that this grape variety can also develop its very own, characterful profile in the south-eastern hinterland of Chiaramonte Gulfi on calcareous and clayey soils at an altitude of around 600 metres. Organic cultivation, hand-picking in the cool morning hours and gentle ageing in stainless steel tanks followed by six months of storage on the fine lees – accompanied by regular bâtonnage – ensure complexity, texture and freshness at the same time.

Taurasi, undisputedly the great red of the south, rightly referred to as the "Barolo of the south", shows all its power and nobility in Feudi di San Gregorio's interpretation. The pure Aglianico comes from vineyards at altitudes of up to 700 metres, on volcanic soils with basalt, clay and tuff. The result is a brooding, long-lasting red wine with character of origin and high standards. Dark ruby red in the glass with a purple centre. The bouquet is intense and clearly structured: black cherry, cassis, blackberry, tobacco, roasted coffee, liquorice, tar and a hint of balsamic herbs. The ageing in large wooden barrels and barriques ensures balance and a fine, polished tannin structure. Dense yet cool on the palate, with grippy tannins, deep fruit and mineral freshness. The vintage also brings clarity, precise contours and an elegant length.
