Mazzei's top wine Siepi is not only an outstanding Tuscan wine every year, but also a 6-hectare vineyard in the middle of dense oak forests with an ideal altitude and a unique climate. The sunshine is optimal throughout the day and a constant breeze from the west prevents excessive heat and creates a mild, Mediterranean climate. The oak forests also provide an ideal protective barrier against extreme weather conditions. Rocky soils of marl, limestone and clay from the Pliocene period ensure a special balance of elements in this geological complex.

In the summer of 1983, Elio Altare picked up a chainsaw and sawed up his father's old Slavonian barrels. An act of rebellion, a break with tradition – and the start of a revolution in Barolo. His father disinherited him as a result, but Elio remained true to his path: Burgundian vinification, French barriques, shorter maceration and ageing times. The Langhe traditionalists were horrified. But the wines? They sold immediately. Today, Elio Altare is considered one of the "Barolo Boys", a pioneer of the modern Barolo style – and the Arborina is his flagship.

La Poja from the vineyard of the same name is a great terroir wine in which Allegrini does not dry the grapes. Made from the indigenous Corvina grape variety, this red wine opens with inviting aromas of ripe black-skinned berries, cedar wood and spices. The elegantly structured, full-bodied palate offers spiced blackberries, liquorice and black pepper alongside fine-grained tannins. The Ciabot Mentin vineyard is located in the Ginestra area and represents the uppermost part of the hill, whose fruit is planted at 410 metres above sea level. This vineyard was planted in 1978. Like the other Clerico Baroli, it matures both in barriques (eight months) and in the bottle (one year). Ciabot Mentin opens with fleshy, floral aromas of lilac and dried lavender that give way to wild berries, cherries and candied orange peel. There is virtually none of the tar or asphalt-like tones often found in Nebbiolo here. Instead, the wine reveals bright primary fruits and a delicate, ethereal complexity. The roots of this story go deeper than any memory: the vines are over 80 years old and have been bearing silent witness in the warm alluvial soils of Gries for generations. Here, where thirty visionary winegrowers laid the foundations for a legend in 1908, the masterpiece that has long since become the undisputed icon of South Tyrolean winemaking is produced year after year: Taber Lagrein Riserva. It is a wine that epitomises time. Time in the old vines, which at an altitude of just 250 metres transform the extreme temperature fluctuations between hot days and cool nights into pure concentration. Time in the patient manual labour that selects only the finest grapes for this exceptional Riserva. And time for ageing, where after traditional wooden barrel fermentation, a whole year of ageing in French barriques awaits completion.

Barolo Ornato is a great wine every year. It captures the true character of Serralunga with its wild herbs, minerals and ferruginous notes. Its bouquet shows small berry fruits and cassis, framed by gravel, forest floor, blue flowers and candied orange peel. The wine also has a dusty, mineral note and is intense on both the nose and palate. Ornato sets in with finely integrated tannins and an acidity that sustains all these fruit flavours. Filo di Seta is produced in small batches and is an impressive wine. With only 4,000 bottles produced, it reflects the extreme power and depth that can be achieved in this cooler microclimate of Montalcino. The vineyards are located on steep slopes and surrounded by dense forest and vegetation. One cannot help but detect a wild and thorny element in this wine, reminiscent of forest floor, truffles and autumnal foliage. These pretty accents add complexity to the solid core of dark fruit. Il Bricco rises above Treiso to an altitude of around 400 metres. The vines are on average around four decades old. Selective hand-picking, parcel-by-parcel fermentation in stainless steel, patient malolactic fermentation. Maturation takes place predominantly in large oak barrels, accompanied by a smaller proportion of French oak for additional polish. 2019 is considered a textbook year in Barbaresco: a moderate summer, large day-night amplitudes and a long, dry autumn led to a late harvest and fully mature phenolics. The wines show density and vertical tension with excellent freshness – a profile with staying power.

The grapes come from the historic single vineyard Ornato in Serralunga d'Alba: steep, windy slopes on calcareous marl with ferruginous inclusions, at an altitude of around 350-400 metres, predominantly south/south-west facing. Each parcel is harvested separately and fermented in stainless steel; long maceration with gentle extraction. Maturation takes place classically in large Slavonian barrels, with a finely dosed proportion of French oak for texture and lustre. The typically long autumn of 2019 brought fully ripe, aromatically dense grapes with a cool acidity.

More than two centuries ago, Elisa Bonaparte Baciocchi, Princess of Piombino, had something planted on the ferruginous hills above Suvereto that would change this landscape forever: Merlot, Cabernet Sauvignon – grape varieties from the Bordelais. The Maremma, still rough and wild at the time, became the testing ground for a woman with a feel for terroir. Francesca Moretti, daughter of Bellavista founder Vittorio, deliberately picks up on this thread with Petra. The name says it all. Petra. Stone. Consistency. 60% Cabernet Sauvignon, 30% Merlot, 10% Cabernet Franc, hand-picked from the Vigneto di Petra in San Lorenzo Alto. Limestone soils with the right balance of clay and skeleton, 10 to 15 per cent slope. Fermentation with natural yeasts in large oak vats, ageing for at least 15 months in French barriques – 25 per cent new – followed by at least 17 months in the bottle. The cellar, a structure by Mario Botta, works with gravity: no pumping, no stress.

After almost thirty years of experience in the vinification of the famous Etna Rosso "Rovittello", the Benanti family decided in 2015 to extend the vinification, ageing and refinement of the wine to 60 months. The result is an exclusive Riserva, produced in small quantities from vines over 100 years old from plot no. 341, which is rightly considered one of the best red wines in the region. The Nerello grapes (85% Mascalese/15% Cappuccio) come from a terraced vineyard (pre-phylloxera) in the Contrada Dafara Galluzzo in the upper area of Rovittello, part of the municipality of Castiglione di Sicilia.

Not every year gets a name. 2016 has earned it – and Montalcino does not award such honours lightly. A mild winter, a spring with heavy rainfall that got the growing season back on track. Then, from the second decade of June, a gradual, gentle rise in temperatures throughout July. And finally an August that brought everything together: large daily temperature fluctuations, no rain, perfect ripening conditions. The Consorzio called 2016 one of its best vintages in decades. And Col d'Orcia turned the best site into a Riserva. The Poggio al Vento vineyard is located in the heart of the Tenuta, halfway up the hill above the Orcia Valley, at 350 metres. Planted since 1974. The name – "hill in the wind" – is the programme: constantly ventilated, south-facing, on calcareous, skeleton-rich soils. Grapes are grown here that Col d'Orcia reserves for the most demanding category in the cellar, and even then only when the vintage poses the question: Is this more than a Brunello annata? Can this wine last for decades? In 2016, the answer was yes.

Lisini's vineyards are located between Sant'Angelo in Colle and Castelnuovo dell'Abate on the inner edge of the Sesta area and are cleansed by the constant breeze from the Tuscan coast. The stony soils with a significant proportion of limestone and the altitude of over 300 metres help to maintain the freshness of the wines. The 2018 is wonderfully fragrant, almost exotic. Plump red fruits and sweet summer herbs fill the mouth, but instead of being heavy, it is balanced and transparent. The powdery tannins are fine and lead to a long, maritime finish. SUPERIORE.DE

Cepparello – named after the small stream that rises at the highest point of the Isole e Olena vineyards. This name has borne the revolutionary vision of Paolo De Marchi since 1980, when 100 per cent Sangiovese was still a taboo in Chianti Classico. With this wine, the Piedmontese visionary not only created one of the first Supertuscans, but also probably the most authentic portrait of the Sangiovese grape – pure, uncompromising, unadulterated. The Sangiovese vines grow on the characteristic Galestro soils from the estate's best sites, exposed to the south-west at an altitude of 400 to 480 metres. These slatey clay soils give the wine its unmistakable minerality and elegance. The 2020 embodies De Marchi's signature style in its purest form. A mild, dry winter and a drop in temperature in March, which required extreme vigilance against frost damage, was followed by a classic Tuscan summer. Dry and mild until the end of August, then scattered rainfall before the weather calmed down in September – ideal conditions for grapes of exceptional quality and quantity.

The single vineyard Il Bricco, situated on both sides of the hilltop, the highest point is about 410 metres above sea level. Family-owned since the 1970s, you can expect great things every year. 2020 brought a stable summer, with a precise cooling in September and cool nights until the harvest. The result is very healthy, aromatically ripe grapes with clear fruit and balanced acidity – charming on the palate, yet precise and persistent. After separate fermentation of the batches in stainless steel, the wine is matured traditionally in large barrels and a moderate proportion of barrique is used for texture.

Salcheto's garnet-red sparkling Vino Nobile delights us with a classic blend of dusty black cherries, cedar shavings, worn leather and sour citrus notes. On the palate, there is plenty of present fruit, a soft texture and a cool note, with savoury red fruits and cedar spice accompanied by lively acidity. Fine, sweet mellowness on the long finish. An authentic and pleasantly elegant organic wine from the heart of the Montepulciano region that is ready to drink when young. SUPERIORE.DE

Once upon a time, there was a vineyard that was particularly spoilt by the Montalcino sun; it still bears the name Vigna Loreto to this day. Only in the best vintages does a Brunello come from this exposed site that is bursting with richness, complexity and assertiveness. It possesses a textural depth and balance that is captivating. Fruit, spice and very unique nuances such as savoury herbs, liquorice, tobacco and a firm tannin make this impressive wine monument linger on the palate and in the memory for a long time. With every sip, it opens up further layers and you might almost sink into it, such is the shift in the boundaries of what is comparable. A ruined castle towers above the entrance to the village of Terlan. First mentioned in a document in 1206, much has changed since then – the languages, the borders, the owners. What has remained is the porphyry rock, the northern foehn and the will to make wine here that does the place justice. Nova Domus – new house. Founded in 1893 by 24 winegrowers with the simple aim of being better together than alone. What they created back then is now Terlan's white flagship – a cuvée of 70 per cent Pinot Blanc, 25 per cent Chardonnay and 5 per cent Sauvignon Blanc, the individual components of which are distributed across the vineyards as precisely as the notes of a well-composed score. The Pinot Blanc comes from 500–600 metres, where the downdraughts keep it cool even at the height of summer. Chardonnay and Sauvignon Blanc from 300–350 metres, where the volcanic quartz porphyry unleashes its full mineral energy.

If there is one thing that Giacomo Neri has mastered 100%, it is harvesting at the optimum ripening time. He knows his estate and his vines better than most and it shows. Celestino Gaspari is regarded on the scene as the successor to Giuseppe Quintarelli, having worked there for many years as cellar master. His vintage Amarone has an intense ruby colour with a garnet sheen. The full bouquet has aromas of dark chocolate, prunes, black cherries and cloves. Complex and full-bodied on the palate, very juicy fruit, cherries, plums flanked by a gentle tannin. It offers an impressive multi-dimensionality and great richness, which is evenly distributed across all the senses - regardless of whether it is drunk young after a few hours of decanting or whether it reaches further maturity in the bottle over many years with good storage. Giovanni Manetti was just twenty when he and Oenologist Franco Bernabei pressed their first vintage in 1981: a pure Sangiovese, at a time when the rules of Chianti Classico still stipulated a proportion of white wine. What began as an act of rebellion became a legend. Flaccianello della Pieve, one of the first monovarietal super Tuscans, which proved that Sangiovese can achieve world class without blending. The name comes from the original vineyard, but since 2001 Flaccianello has been a selection of the best grapes from three plots on the estate, especially those at the highest altitudes at 480 metres, where Pietraforte soils dominate. This conglomerate of sandstone varieties gives the wine the freshness and structure that sets it apart from the rest.
